4 Ingredients! No knead bread! Everyone can make this homemade bread!

Ingredients:
1 + 1/2 cups warm water (370ml).
2 tbsp dry yeast (10g).
4 cups flour (500g).
1 tsp salt.
Cover with lid and Bake at 220°C / 428°F for 30 minutes. Then remove lid and bake another 15 to 20 minutes.

Hello and Happy Fall my Friends, welcome to my Southern Kitchen!
Today on the first episode of my Fall Baking Series, I am making a homemade Quick Bread recipe Pumpkin Bread!
Simple, easy, moist, and full of Pumpkin flavor and spices; perfect for this time of year and everyone will love and enjoy this Bread, spread it with some butter and you will be good to go!
Ellen’s Fall Baking recipes playlist:
1 1/2 cups self rising or all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder (if using all purpose flour)
1/2 teaspoon salt (if using all purpose flour)
1 teaspoon pumpkin pie spice (recipe below)
1 cup pumpkin purée (not pumpkin pie mix)
1/2 cup white sugar
1/2 cup packed light brown sugar
2 extra large or jumbo eggs, room temperature
3/4 cup canola or vegetable oil
1 teaspoon pure vanilla extract
1/2 teaspoon pure pumpkin pie spice extract, optional
Preheat Oven to 350 Degrees
Spray a 8x4 inch loaf pan with baking spray with flour and set aside.
In a large bowl, add in the flour, baking soda, (baking powder and salt, if using), and pumpkin pie spice, sift or whisk together until well incorporated. Next add in the pumpkin purée, white sugar, brown sugar, eggs, oil, vanilla extract and pumpkin pie spice extract (if using) to the flour mixture; whisk together until well blended. Pour the batter into the prepared loaf pan and bake for 55 minutes to 1 hour or until golden brown and toothpick in the center comes out clean. Remove from the oven and let it cool in the pan for 10 to 15 minutes then remove from the pan and let the bread cool completely on wire rack. Place the pumpkin bread onto a cake stand or plate, cut into desired slices, serve with butter (if desired) and enjoy!
Ellen’s Pumpkin Pie Spice recipe
3 tablespoons ground cinnamon
2 teaspoons ground ginger
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/4 teaspoon ground allspice
1/8 teaspoon ground cardamom
In a small bowl, add in the cinnamon, ginger, nutmeg, cloves, allspice, and cardamom and stir together until well combined. Store in a container until ready to use.

1 1/2 cups hot water (NOT OVER 130° F)
about 2 Tablespoons extra flour for shaping
!!! HOT WATER SHOULD NOT BE BOILING - NOT OVER 130° F. !!!

Baking a No Yeast Quick Short Bread Recipe for Fall - 3 WAYS!
We are baking a no yeast quick short bread recipe for Fall. I show you 3 ways to adapt the same short bread recipe. I use it for all of my quick short breads and adapt it to the flavors I want to make.
Here is the recipe I used in a previous Fall shortbread baking video and this one is for a single loaf:
Basic Shortbread Recipe:
1/2 Cup Sugar
1/4 Cup Vegetable Oil
2 Eggs
1 teaspoon of Salt
2/3 Cup of Molasses for (Brown Bread)
or 2/3 Cup of Fruit of choice
2 Cups Milk or other liquid like apple sauce, orange juice etc..
1 teaspoon of Baking Soda
4 Cups All-Purpose Flour
2 teaspoons of Baking Powder
1/2 Cup Raisins (optional)
1/2-1/4 Cup of Chopped Nuts (optional)
Combine Dry ingredients first then add the liquid ingrediants and mix till you have a nice pudding like batter mixed well.
Pour into pre-greased loaf pan
Bake at 350 degrees for 25 - 35 minutes - test with a toothpick to check if its done. This time I noticed the Banana Coconut Orange Nut Bread took longer around 45 minutes at appx 375. You will want to make it maybe at 350 and keep testing it.
Let cool slice and eat!
