EASY BREAD FOR BEGINNERS!! Tomato Soup + Spinach Pasta! COOK WITH ME for our Big Family of 10!
Cook with me for our big family! Today I am sharing the easiest bread recipe ever! Seriously, it's quick and SO GOOD! I'm also whipping up some YUMMY homemade tomato soup (with a kick) and a Garlic + Spinach Pasta that is easy to make and tastes amazing! Recipes are below...

BREAD RECIPE:
3 cups all-purpose flour
2-3 teaspoon kosher salt
1/2 teaspoon dry yeast (active dry or highly active dry work best)
1 1/2 cups warm water

In a large bowl, stir together the flour, salt, and yeast.
Add the water and stir
Cover bowl tightly with plastic wrap. Let dough sit at room temperature for 1 hour
40 minutes later preheat your oven to 450 degrees F.
Place your Dutch oven, uncovered, into the preheated oven.
While your Dutch oven preheats, turn dough onto a well-floured surface and, with floured hands, form the dough into a ball.
Place on Parchment paper and let rest for 15 minutes.
Then transfer to the Dutch oven.
Bake for 30 minutes covered. Remove cover and bake for 10-15 minutes more, uncovered
TOMATO SOUP:
3 tablespoons butter
1 onion, medium or large
1 and 1/2 teaspoons salt
1/2 teaspoon black pepper
1/4 teaspoon red pepper flakes
1 tablespoon dried oregano
1/2 teaspoon dried basil
3 cloves garlic chopped
1 (28 ounce) can whole tomatoes or Fresh Tomatoes
1 (15 ounce) can fire-roasted diced tomatoes
4 cups chicken broth
1 cup cream
1/2 cup fresh basil for garnish

Heat a large soup pot over medium heat + add the butter.
After butter melts add 1 chopped onion.
Add 1/2 teaspoons kosher salt, 1/2 teaspoon black pepper, 1/4 teaspoon red pepper flakes, 1 tablespoon dried oregano, and 1/2 teaspoon dried basil.
Saute until the onions are lightly browned.
Add garlic (about a tablespoon) and saute for 1 more minute.
Add the can of whole tomatoes (with juices) and the can of diced tomatoes (with juices).
Add 4 cups chicken broth.
Turn the heat up to high and bring the mixture to a boil.
Once it boils, turn the heat down to a low simmer and cook for up to 45 minutes.
Turn off the heat and use an immersion blender to puree the soup or use a blender and do it in small batches.
Return soup to pot and turn off the heat and slowly stir in 1 cup cream.
Top with Basil + Serve!!!
GARLIC + SPINACH PASTA:
8 ounces bow tie pasta
4 tablespoons butter
1 tablespoon minced garlic
8 ounces fresh baby spinach
1 teaspoon dried basil
salt and fresh ground pepper
fresh Parmesan shavings
2 ounces cream cheese, room temperature
1/4 cup milk

Prepare pasta
Melt butter over medium heat in a large skillet
Add garlic and continue to stir
Add spinach; season with salt, pepper, and basil, and cook until spinach is wilted; about 1 to 2 minutes.
Drain pasta and add to the spinach mixture then add cream cheese and milk.
Mix and stir
Top with fresh Parmesan

Grilled Cheese & Roasted Tomato Soup
Good soup ????
Fix those late night cravings with some bomb as grilled cheese and spicy tomato soup ???????? here’s my recipe:
6 tomatoes, quartered
1 onion, quartered
1 capsium/ bell pepper, chopped
1 whole garlic bulb
Chilli flakes (optional)
1/2-1 cup unsalted vegetable stock
1/2-1 cup cream
3-4 basil leaves
Salt and pepper
2 slices of your favourite bread
Mozzarella cheese
Cheddar cheese
Butter
Method:
1. Chop off the top of your garlic bulb, leaving the cloves exposed. With your garlic, place all your other chopped vegetables into a large baking dish, drizzle generously with olive oil, chilli flakes, salt and pepper and bake at 200C for 50-60 mins until the vegetables are slightly charred and soft.
2. [optional] Use a blow torch and lightly torch your roasted vegetable to add extra char if you like your soup smokey. Careful not to burn it.
3. Transfer your vegetables into a pot or a blender with your stock, cream and basil. With a stick blender or a normal blender, blend your soup until smooth. Salt and pepper to taste.
4. For your grilled cheese, cut up 2 slices of bread. You can use any cheese you want or have on hand. I used mozzarella for the stretch and cheddar for the bitey taste. Butter your bread and grate as much cheese as your heart can take. Grill in a pan over medium heat until golden brown and cheese melted. Serve with tomato soup.
Crazy Easy Tomato and Olive Focaccia + A Thank you
Focaccia is the kind of recipe that has a lot of room for error (as far as recipes go at least). It shouldn't be fussy or stressful to make. It's as easy as throwing some water, salt, and yeast into a stand mixer, mixing it, waiting for a little bit, topping it, and baking it. Very hands off, and super simple. More importantly, this is the kind of bread that people want to eat all the time. It's crispy on the outside but soft and tender on the outside; saturated with fragrant olive oil and bursts of tomato and olive flavor. I mean, yeah.... you get it.

Ingredients you'll need:
3 cups (500g) 00 type flour or all purpose flour
1 1/4 cup (300g) water, lukewarm (90 degrees fahrenheit)
1 1/4 teaspoon (4g) kosher salt
1 tablespoon (11g) instant yeast

grape tomatoes, sliced in half
pitted castelvetrano or green olives
3 sprigs rosemary leaves
flakey salt (you can use kosher salt if you don't have flakey)
