GREEN TOMATO Sweet Breads | Preserving the Harvest
One of our viewers mentioned Green Tomato Sweet Bread... and I thought how would that work? Well I dug up a couple recipes online to try them out and be a guinea pig for you all. There is some work to do on the recipe and directions but I think for my first attempt I certainly have a new way of using up all those green tomatoes left over at the end of the season. I am not leaving the recipe directions on this video and will work on improving it, but if your interested there are many options on the internet you can google and just take some of my lessons learned with you if your brave enough to try it!

Made with a very rich, freshly ground tomato sauce, without a drop of water. In order to prevent the tomato flavor from being diluted by the flour, the saint tomato is especially roasted and dried. The tomato flavor is super rich, and homemade garlic powder and herbs are also added. The bread is full of vigor and natural red-orange. It tastes a bit like Pizza, with the sourness of tomato. Sweet and a little salty, good taste. Originally I planned to make toast, but unfortunately Mr. Panda was too lazy to even slice it, so the fat diced made a satellite bag, which was just enough for one person to tear open with one hand.

Bread Slices - 6
Tomato - 2
Onion - 1
Green Chilli - 2
Salt - 1 tsp
Red Chilli Powder - 1/2 tsp
Ghee - to toast
Kitchen Products I use:
Measuring Cup & Spoon Set -
Kitchen Weight Scale -
Instant Yeast - (500gms, keep frozen in airtight container, will stay good for years)
Instant Yeast - (small pack)
Pizza Screen - (3 pack - 6,7,8 inches)
Parchment Paper - much better than butter paper, and it is reusable -
Good NonStick Pan -
Whipping Cream -
Oven For Baking - (28liter is good enough)
Microwave - (not good)

15 Minute Fresh Cherry Tomato Pasta

15-minute Cherry Tomato Pasta
1 lb pasta of choice
3-4 garlic cloves, thinly sliced
¼ cup extra virgin olive oil
2 pints cherry tomatoes
6-7 leaves fresh basil, thinly sliced
1 tsp black pepper
Salt to taste
¼ cup fresh parmesan cheese (add more if you like)
Pasta water as needed
Bring a large pot of water to a boil seasoned with salt.
In a large skillet pour the olive oil and add in the thinly sliced garlic.
Turn the heat to medium heat and let the garlic infuse with the oil until golden brown, this should take about 3-4 minutes.
At this point you can cook the pasta when water is at a boil, so it will be ready at the same time as the sauce. Cook the pasta shy 2 minutes of al dente as per package directions.
Add in the whole cherry tomatoes and stir them around until they soften and start to burst. You can use a wooden spoon to help with this until it reaches a saucy consistency, this takes about 7-8 minutes.
Add in fresh basil. Season with pepper and salt.
Drain pasta (but reserve the water) and add it in to the skillet. Pour in about ½ cup of the pasta water and stir.
Keep stirring the pasta around the skillet for about 2 minutes.
Adjust for seasoning and pasta water, and add parmesan cheese as you like.
