INGREDIENTS
FOR THE APPLESAUCE CAKE
- 1/2 cup butter, room temperature
- 1 cup sugar
- 1/2 cup dark brown sugar
- 2 eggs
- 1 1/2 cups applesauce
- 2 cups flour
- 1/4 teaspoon baking powder
- 1 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground nutmeg
- 1 teaspoon salt
FOR THE CARAMEL FROSTING
- 1/2 cup butter
- 1 cup dark brown sugar
- 1/2 cup whole milk
- 1 teaspoon vanilla extract
- 2 cups sifted powdered sugar
- 3/4 cup walnuts, toasted and chopped

INSTRUCTIONS
FOR THE APPLESAUCE CAKE
Preheat oven to 350 degrees.
Grease a 9×9 cake pan with nonstick spray. Line with parchment and spray again. Then set aside.
In the bowl of an electric mixer, cream the butter and sugar until light and fluffy, 3 minutes.
Add the eggs one at a time, mixing in between each until incorporated.
Mix in applesauce. The batter will seem very loose and curdled, but that is completely normal.
Add the flour, baking powder, baking soda, cinnamon, cloves, nutmeg and salt. Mix until just combined, 2 minutes.
Remove bowl from mixture and use a spatula to scrape the bottom of bowl, ensuring the batter was mixed evenly.
Pour into prepared pan and bake until a toothpick or skewer inserted into the middle comes out clean, about 35-45 minutes. While the cake is cooling, make the frosting.
FOR THE FROSTING
In a 4 quart saucepan, combine the butter, brown sugar and milk. Melt on medium low heat, stirring occasionally. Continue to cook until the mixture begins to boil and boil lightly for 2 minutes. Remove from heat and cool for 10-15 minutes.
Add vanilla and sugar. Whisk until smooth and thick.
Once the cake is completely cool, frost the cake. Sprinkle with toasted walnuts in desired.
NOTES
To maintain freshness, this cake freezes well in an airtight container up to one month.
Delicious & Quick Fluffy Apple Cake / Easy Recipe
This easy apple cake is a delicious dessert that's perfect for any occasion. The cake has a light and fluffy texture and is infused with the sweet and tangy flavors of apples and lemon juice. The cake batter is made with a combination of eggs, sugar, yogurt, milk, sunflower oil, and vanilla extract. This creates a moist and tender crumb that is perfectly complemented by the sweet and slightly tart apple slices.
To make the cake, you'll need 2 apples, which you'll need to peel and slice into thin pieces.In a pan, melt 25 grams of butter and add apple slices, add 15 grams of lemon juice and 20 grams of sugar. Cook the apple slices in the mixture until they soften a little.
Next, prepare a cake batter by whisking 2 eggs with 130g of sugar, adding 60g of yogurt, 60ml of milk, 60ml of sunflower oil, and a dash of vanilla extract to the egg mixture and whisk until well combined. Sift 200g of flour and 8g of baking powder into the mixture and gently fold until the batter is smooth.
Pour the cake batter into a greased 18cm cake pan and arrange the cooked apple slices on top.
Bake the cake in a preheated oven at 180°C for 40-50 minutes or until a toothpick inserted into the center of the cake comes out clean. Once the cake is done, let it cool in the pan for 10-15 minutes before removing it from the pan and placing it on a wire rack to cool completely. If you like, you can grill the cake for an additional 2 minutes until the top is golden brown. This apple cake is a crowd-pleaser and is sure to become a family favorite!

Harvest Time Applesauce Spice Cake
1 stick butter or margarine
1 1/4 cup sugar
1 egg
1 1/2 cup self-rising flour (more flour later)
2/3 cup raisins
1/2 cup chopped pecans
1/4 cup flour (for dredging raisins and pecans)
1/2 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/2 teaspoon ground ginger
1/2 teaspoon ground cloves
1/4 cup water
1 cup applesauce
In a large bowl, cream 1 stick butter or margarine and 1 1/4 cups sugar together. Add 1 egg, and beat well. Add 1/2 teaspoon each of cinnamon, allspice, ginger, and cloves to 1 1/2 cups self-rising flour. Mix well. Add to the beaten mixture, a little at a time, alternating with the water, until well blended. The mixture will be doughy at this point. Stir in 1 cup applesauce. Place 1/2 cup pecans, 2/3 cup raisins, and 1/4 cup flour to a medium-sized zip-lock plastic bag. Shake to coat the raisins and pecans with flour. Fold this mixture into your batter. Pour batter into a greased and floured 9-inch square baking pan. Bake at 350 degrees for 50 to 60 minutes, or until a toothpick inserted into the middle comes out clean. (Note: I placed a sheet of aluminum foil over the top of the pan when I placed it in the oven to keep it from over-browning. I removed it after 20 minutes; if you wait longer, the cake may rise and stick to the foil.) Cool the cake in the pan, and then remove to a serving plate. Cut into squares and serve on a nice serving dish. If you like this cake warm, stick a serving in the microwave for 10 to 15 seconds! Scrumptious!!!
