Unsalted butter, for the pan
2 cups all-purpose flour, plus more for the pan
2 teaspoons cinnamon
1 1/2 teaspoons baking soda
1 teaspoon ground ginger
1 teaspoon kosher salt
1/4 teaspoon finely ground black pepper
1/4 teaspoon ground allspice
2 large eggs
1 cup granulated sugar
1/2 cup packed light brown sugar
1 1/2 cups unsweetened (preferably homemade) applesauce
2/3 cup vegetable oil
1 teaspoon vanilla extract
Caramel Glaze
1/2 cup packed light brown sugar
1/3 cup (or more) heavy cream
4 tablespoons unsalted butter, cut into chunks
1/4 teaspoon kosher salt
3/4 cup (or more) sifted powdered sugar

Chef Isla’s applesauce snack cake
Applesauce Snack Cake Recipe for Young Bakers
12 servings
Vegetable oil spray
8 tablespoons unsalted butter, melted and cooled
11/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2/3 cup sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 cup unsweetened applesauce
1/4 cup apple cider or apple juice
1 large egg
1 teaspoon vanilla extract
Tools needed: Aluminum foil, ruler, 8-inch square metal baking pan, 3 bowls (1 medium, 1 large, 1 small), whisk, 1-tablespoon measuring spoon, rubber spatula, toothpicks, oven mitts
cooling rack, cutting board, chef's knife.
Preliminaries: Adjust oven rack to middle position and heat oven to 325 degrees. Make aluminum foil sling in the baking pan, so you can easily remove the cake. To do that, pull out two, 13-inch-long pieces of foil. Fold each of the long sides so it becomes 8 inches wide (and still 13 inches long). Place into the pan, centered, folding the extra length over the edge of the pan. Do the same with the other sheet, but in the opposite direction, so all sides of the pan are covered. Smooth foil into corners and sides. Spray lightly with vegetable oil spray or use your fingers to coat foil with additional soft butter.
Melt butter: Place butter in pan over low heat or place chunks in covered, microwave-safe bowl for half-power increments of 1 minute until melted, checking frequently. Set aside to cool.
Mix batter: In medium bowl, whisk together flour, baking soda and salt. In large bowl, whisk sugar, cinnamon and nutmeg until well combined. Transfer 2 tablespoons sugar-spice mixture to small bowl and reserve for sprinkling. Add applesauce, reserved melted butter, cider, egg, and vanilla to large bowl with sugar-spice mixture and whisk until well combined. Add flour mixture to applesauce mixture and whisk to combine. Use rubber spatula to scrape batter into greased baking pan and smooth top. Sprinkle reserved sugar-spice mixture evenly over batter.
Bake: Place baking pan in oven. Bake until toothpick inserted in center comes out clean, 35 to 40 minutes. Use oven mitts to remove baking pan from oven. Parents should be available for assistance here. Place baking pan on cooling rack and let cake cool in pan for 10 minutes.

Applesauce Cake
3- No Sugar Added or Unsweetened Applesauce snack cups
1/2 C. Softened Salted or Unsalted Butter (1 stick)
1/2 C. Light Brown Sugar
1/2 C. Granulated Sugar
1 Egg at Room Temperature
*2 C. Unbleached All-Purpose Flour (if batter is very thin, add 2 T. more flour)
1 t. Baking Soda
1/2 t. Baking Powder
1/2 t. Salt
1 t. Cinnamon
1/2 t. Nutmeg
1/2 t. Cloves
Optional:
1 C. Raisins
OR
1 C. Chopped Pecans
Bake @350 degrees in a 9x5 Greased Loaf Pan for 50-60 minutes or until tester comes out clean, do not overbake.
Garnish with powder sugar.

▪️Applesauce Cake Recipe:
▫️2 3/4 C AP Flour
▫️2 C Sugar
▫️1/4 tsp Baking Powder
▫️1 1/2 tsp Baking Soda
▫️1 1/2 tsp Salt
▫️1 tsp Cinnamon
▫️1/2 tsp Cloves
▫️1/2 tsp Allspice
▫️1/2 C Vegetable Oil
▫️1/2 C Water
▫️1 1/2 C Unsweetened Applesauce
▫️2 Eggs
▫️1 C Raisins, chopped
▫️1/2 C Chopped Walnuts (optional)
Bake on 350F for 35-40 minutes in an oblong pan. Bake for 25-30 minutes at 350F in circle 9 inch pans.
▪️Penuche Icing Recipe:
▫️1/2 C Butter (1 stick)
▫️1 C Packed Brown Sugar
▫️1/4 C Milk
▫️ 1 3/4 to 2 C Powdered Sugar (confectioner sugar)
Melt butter and sugar together for 2 minutes, stir in milk. Allow to cool to room temperature. Add butter mix to the powdered sugar in a mixing bowl. With a hand mixer or stand mixing bowl (whisk attachment) whisk for about 5 minutes, or until light and fluffy.
