How To make Applesauce Oatmeal Cake
JANICE WORTHINGTON:
1 1/4 c Applesauce
3/4 c Quick-cooking oats;
-uncooked 3/4 c Raisins
1/2 c Butter or margarine;softened
3/4 c Firm pack light brown sugar
1 lg Egg
1 1/2 c All-purpose flour
1 ts Baking soda
1/2 ts Salt
1 ts Ground cinnamon
1/4 ts Ground cloves
Bring applesauce to a boil in a small saucepan; remove from heat. Stir in oats and raisins; cover and let stand 20 minutes. Beat butter at medium speed with an electric mixer until fluffy. Gradually add sugar, beating well. Add egg and beat well. Combine flour, baking soda, salt, cinnamon, and ground cloves. Gradually add to creamed mixture; mix just until blended after each addition. Stir in applesauce mixture. Pour batter into a greased and floured 9-inch square pan; bake at 350 degrees for 30 to 35 minutes or until a wooden pick inserted in center comes out clean. 1/2 cup oats
3/4 cup boiling water
1 teaspoon vanilla
Mix together ingredients and set aside for 10-20 minutes until thick.
1/4 cup lard (butter or shortening)
3/4 cup sugar
3/4 cup brown sugar
1 egg
1/2 teaspoon cinnamon
3/4 cup self rising flour
1/2 teaspoon salt
Mix together sugar and lard until combined. Add egg and mix again until smooth. Stir in oatmeal and mix. Fold in cinnamon, flour and salt with spatula until smooth. Grease a 9x9 baking dish and bake at 350 degrees for 30-35 minutes. Let cool before adding icing.
ICING
3 tablespoons butter
1/2 cup brown sugar
1/4 cup whipping cream
1/2 cup coconut
1/4 cup pecans, crushed
Melt butter and stir in sugar and cream until smooth. Remove from heat and stir in coconut and nuts. Pour over top of cake and place under broiler for 2-3 minutes, remove and let cool.

Hi friends, let's whip together an easy, tasty treat with only TWO ingredients! Applesauce and oatmeal! Super-duper easy go-to for a healthy snack or dessert. You can always add a few more ingredients to make it a bit sweeter or healthier. I made two batches and did just the two ingredients and also made one with dried cranberries and chia seeds. Recipe: Yield 6-8 cookies
1 C Oats
1/2 C regular applesauce or 3/4 C applesauce if chunky
Added to 2nd batch:
2 T Dried cranberries
1 tsp Chia seeds
Preheat oven to 350 degrees. Mix ingredients well. On a greased baking sheet or parchment paper, squeeze and roll into 2-inch balls, and flatten with your hands or a spatula. Chill in the fridge for 20 minutes to keep the shape. Bake 20-30 minutes (depending on thickness) until toasty edges. Let cool completely. Seal in an airtight container in the fridge for up to 2 weeks or freeze for longer term.

Ingredients:
130 g oat flakes(gluten free) (1 1/2 cup)
240 ml hot water (1 cup)
leave to soak for 5 minutes
2 eggs
30 g(2 1/2 tbsp) sweetener(stevia/or your choice)
1 tsp vanilla extract
120 g yogurt (1/2 cup)
50 g melted and cooled butter(1/4 cup)
1 apple
80 g blueberries (2.5 oz)
7 g baking powder (1/2 tbsp)
20 x 8 cm baking form(7.9 x 3.1 inch)
bake for 50 minutes at 180°C/ 360°F
