How To make Applesauce Cake Baked In a Jar
2/3 c Shortening
2 2/3 c Sugar
4 Eggs
2 c Applesauce
2/3 c Water
3 1/3 c All-purpose flo sifted
1/2 ts Baking powder
2 ts Baking soda
1 1/2 ts Salt
1 ts Cinnamon
2 ts Ground cloves
2/3 c Nuts, chopped (optional)
Preheat oven to 325-degrees. Sterilize 5 straight-sided Ball Quilted Crystal (#14400- 81400) canning jars, lids and rings by boiling them for 15 minutes. Keep the lids and rings in the water until you're ready to use them. Remove the jars from the water and place them on a clean dish towel to air-dry (up, not upside down). When the jars are cool enough to handle, grease the insides with shortening (DO NOT use butter, margarine, PAM or Baker's Secret); set aside. Sift together the flour, baking powder, baking soda, salt, cinnamon and cloves; set aside. Cream together the shortening and sugar. Beat in the eggs, one at a time until the mixture is light and fluffy. Add the applesauce and water. Blend the dry ingredients into the applesauce mixture. Fold in the nuts.; set aside. Fill well greased jars half full. Place the jars onto a cookie sheet or they'll tip over. Bake for 35 minutes or until a cake tester comes out clean. like you would any canned goods. The method for making the cakes is the same -- no matter which recipe you use. The only difference will be the ingredients (of course), the amount of jars needed and the baking times- -that's all, everything else is the same. Don't limit yourself to the recipes I'm giving you -- use your favorite quick-bread recipe. I plan on trying the Carrot Cake recipe I posted. Ingredients for cake:
2 cups all purpose flour ½ tsp nutmeg
1 tsp baking powder ½ cup sugar, of choice
1 tsp baking soda ½ cup shortening
½ tsp salt 1 large egg
1 tsp ground cinnamon 1½ cups applesauce
½ tsp allspice 1 or ½ cup raisins, optional
Apple Sauce BOILED ICING
Recipe:
1 Cup milk, fresh or evaporated ½ Tsp cinnamon or apple pie spice
4 Tbsp flour ¼ Cup Applesauce
1 Cup Sugar ½ Cup butter or margarine
1 Tsp vanilla
Method:
Method for cake:
Measure all ingredients and preheat oven to 350ºF. Grease 8 inch pan of choice.
In a large bowl add shortening and sugar, cream together and fold in one egg. After add all dry ingredients to your sifter, alternate dry ingredients and applesauce.
Starting with dry and then applesauce, folding all ingredients together until all ingredients have been added.
Then fold in raisins, but these are optional if you wish to not add them.
Scoop all batter into your 8 inch pan of choice and place in the preheated oven and bake for 45 to 60 minutes, depending on your oven. Let cool and icing!
METHOD for icing:
In a medium saucepan add milk, sugar and flour, start to boil on a medium heat stirring continuously.
After liquid starts to boil slowly and thicken, this can take around 5 minutes, remove from heat and stir in vanilla to mixture.
Put all sugar paste mixture into a bowl or jar and bring to room temperature, then put in the fridge to cool. This can take 1 hour or more for the sugar paste to cool totally.
In a medium mixing bowl with a blender, add butter and slowly scoop the sugar paste mixture into the bowl with your butter and blend on high speed, then add applesauce until all combined and light and fluffy.
Continue mixing until combined and put the bowl of boiled icing in the fridge until ready to use it.

Ultrarich Chocolate Applesauce Cake - You won't believe it's vegan!
This cake is the proverbial riddle wrapped in a mystery. It's the richest, moistest cake you've ever eaten - and stays that way for days - but it has no eggs, butter, or milk in it. It rises not through baking powder or whipped egg whites, but from the reaction of vinegar and baking soda, like a science fair volcano. It's pleasantly sweet, not like those cakes with so much sugar you'd think they would crack your teeth open. And although it's vegan, any non-vegan will swear it's the best chocolate cake they've ever had.
If you'd like to add some pleasant caramel notes to the cake, you can substitute one cup of the regular sugar with one packed cup of brown sugar, and if you prefer to leave out the chocolate glaze entirely, simply top the cake with a dusting of powdered sugar, although do this just before you eat it. This cake is so moist the powdered sugar will soak into it after a half-hour or so. If you choose to garnish the cake with raspberries, I recommend you refrigerate it. Although the cake itself will keep just fine at room temperature, the fruit will go bad after a few days of sitting out on the counter. Truth be told though, this cake is so good, it will most likely be gone before that ever happens.
