ELLIE COLLIN CMKD93F 1/2 tsp BAKING POWDER
2/3 c SHORTENING
2 tsp BAKING SODA
2 2/3 c GRANULATED SUGAR
1 1/2 tsp SALT
4 ea Large EGGS
1 tsp GROUND CINNAMON
2 c APPLESAUCE
2 tsp GROUND CLOVES
2/3 c WATER
2/3 c NUTS; chopped -- optional
3 1/3 c ALL-PURPOSE FLOUR -- sifted
Sterilize 8 (12 oz Ball Quilted Crystal - #14400-81400) canning jars, lids and r ings by boiling for 10 minutes. Remove the jars and allow to air-dry and cool. L eave the lids and rings in the hot water until ready to use. Once the jars are cool enough to handle, grease them (use a pastry brush) with s hortening (DO NOT use Pam or Baker's Secret); set aside. Cream together the shor tening and sugar. Beat in the eggs, one at a time, until the mixture is light an d fluffy. Add the applesauce and water; set aside. In another bowl, sift together the flour, baking powder, baking soda, salt, cinn amon and cloves. Blend dry ingredients into the applesauce mixture. Fold in the nuts. Pour batter into the jars, filling them about 1/2 full. Place jars onto a cookie sheet or they'll fall over. Bake in a preheated 325-deg ree oven for 35-40 minutes or until a pick inserted deep into the center of eac h cake comes out clean. Remove jars from the oven, one-at-a-time (use HEAVY-DUT Y MITTS, the jars ARE HOT!); place a lid, then a ring on top and screw down tig htly. Place jars onto your counter top to cool. You'll know when the jars have sealed, you'll hear a "plinking" sound. If you missed the sound, test them by pressing down on the lids once the jars have cooled--they shouldn't move at all. Store jars in a cool, dry place. They should keep for about a year. I've only be en able to keep them for a few weeks, they don't last that long around here. The y're wonderful for last minute gifts, especially for single friends.

The Holidays are Coming! How to Make Applesauce Cake a Fun Fall Treat!
Greetings! Fall is in the air and the mornings are crisp and the evenings are cool and the apples are abundant! The perfect time to make some Applesauce Cake. Moist, dense and seasoned with cinnamon, nutmeg and allspice, this cake hits all the right spots. Feel free to frost this with some of that cream cheese frosting that we made recently or just top with a dusting of powdered sugar and cut into squares and let everyone grab a piece as they walk past.
This is a lovely gift idea for your neighbors or your coworkers. Divide the batter between two 9 inch square or round pans or a couple or a few mini loaf pans and when they are cool, top with powdered sugar, cream cheese frosting or some lemon glaze, wrap them up in some cellophane and tie with a pretty ribbon and give!
I like to give these away the day before Thanksgiving so that my friends and neighbors will have a nice little autumn nosh for breakfast to get their holiday going. It's a nice alternative to giving away dinner rolls or yeasted bread, which I have also done in the past, this is less work and appreciated just as much. One small cake or loaf is a nice gesture and says you are thinking of them.
Give this one a try and add it to your holiday gift giving repertoire, As always, Happy Eating and Happy Gifting!

Old Fashioned Buttermilk Applesauce Cake
Y'all this is one of my all time favorite cakes. It is so simple to bring together and you probably have all the ingredients in your pantry and this cake needs no frosting at all. I grew up with this cake and it always brings me back to my aunt Carols kitchen each time I smell it baking and then again when I take my first bite. I love to use chunky applesauce in mine because finding those little chunks of apple just throw it over the top for me. Y'all, please let me know what you think about this version and y'all enjoy.

APPLESAUCE CAKE | Homemade Caramel Sauce | Fall Baking Recipes
Today I want to show you how to make Applesauce Cake with Homemade Caramel Sauce which even a beginner can do. This delicate and fragrant cake is a great recipe to have for your fall baking.
APPLESAUCE CAKE Printable Recipe –
INGREDIENTS FOR THE CARAMEL SAUCE:
200g sugar
60 ml water
120 ml heavy cream
40g soften butter
½ tsp sea salt (optional)
INGREDIENTS FOR THE CAKE:
360g all-purpose flour
200g sugar
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1 tsp ground cinnamon
½ tsp pumpkin spice seasoning
2 eggs
320g unsweetened applesauce
110 ml water
100 ml vegetable oil
40 g caramel sauce
Notes:
Remember that when you’re making the caramel sauce do not touch the sugar syrup during the cooking process to prevent sugar from crystallizing on the sides of the pan.
Be very careful when making the caramel sauce.
Keep the caramel sauce refrigerated for up to a month or you can freeze it for up to a few months.
To get the caramel to a runny consistency, bring it to room temperature on the counter or you can reheat it in the microwave or over a water bath.
For the cake batter, instead of the pumpkin spice seasoning, you can use ¼ tsp of ground nutmeg, ¼ tsp of ground cloves and ¼ tsp of ground ginger.
All the ingredients need to be at room temperature.
You can use Bundt cake pan, two 8-inch round layer pans or 13x9x2- inch baking pan greased and floured.
Bake the cake at 350 F degrees for 65-70 minutes, layers for 50-55 minutes or until wooden pick inserted in center comes out clean.
