2 c Flour
1 ts Salt
2 ts Baking soda
4 tb Cocoa
1 c Sugar
1 ts Cinnamon
1/2 ts Ground cloves
1 c Applesauce
1/2 c Oil
2 Eggs

Heat oven to 350. Measure all ingedients into a large bowl. Mix at medium speed until well blended. Pour into a lightly greased Bundt cake pan. Bake 35 minutes. -----

We wanted to make something that represents the spirit of Cavalcade of Food! Something that is easy to make without a lot of fuss, is old-fashioned and inspired from a vintage recipe, and tastes good! We felt this cake hit all those marks!
One Bowl Applesauce Cake
2 1/4 cups flour
1 tsp salt
1 tsp baking soda
1 tsp cinnamon
1 tsp vanilla
1 stick (1/2 cup) butter, softened (cut into small pieces)
1 cup molasses
1 egg
1 cup applesauce
3/4 cup raisin/currents or other dried fruit
Preheat oven to 350 degrees
In a large mixing bowl, combine flour, salt, baking soda and cinnamon. Add butter and cut into flour mixture using a pastry blender, two knives or your fingers.
Add molasses, egg and applesauce. Beat well. Stir in dried fruit.
Pour batter into a greased and floured 8x8 baking pan. Bake for 50-60 minutes or until a toothpick inserted into the center of cake comes out clean.
Cool on rack. Top cake with a dusting of powdered sugar, a cream cheese frosting, or a glaze made with a little lemon juice and powdered sugar.

My Applesauce Cake is a family favorite. The recipe is simple to make and tastes delicious. I hope you make a loaf or 2 for your family.

Applesauce Cake
3- No Sugar Added or Unsweetened Applesauce snack cups
1/2 C. Softened Salted or Unsalted Butter (1 stick)
1/2 C. Light Brown Sugar
1/2 C. Granulated Sugar
1 Egg at Room Temperature
*2 C. Unbleached All-Purpose Flour (if batter is very thin, add 2 T. more flour)
1 t. Baking Soda
1/2 t. Baking Powder
1/2 t. Salt
1 t. Cinnamon
1/2 t. Nutmeg
1/2 t. Cloves
Optional:
1 C. Raisins
OR
1 C. Chopped Pecans
Bake @350 degrees in a 9x5 Greased Loaf Pan for 50-60 minutes or until tester comes out clean, do not overbake.
Garnish with powder sugar.

Today I want to share with you a quick and delicious applesauce snack cake that is easy to make and you just serve it right out of the pan you bake it in! This one doesn't even have any frosting, icing or glaze on it. We just enjoy this with a dusting of powdered sugar or nothing at all. This cake is moist and flavorful and can be made from pantry staples. This is a favorite from my childhood and we love it here!
This cake is super easy to make with ingredients you already have on hand. I know we try to keep applesauce in the pantry for eating as a side dish with meats or a go along with a lunch. This is a great way to rotate through your supply and keep it fresh. My cake is very basic but that does not mean it is lacking in flavor. It is moist and full of warm spices and tangy goodness that comes from the plump golden raisins that I love to use. You can choose to use regular raisins, dried cranberries or chopped dried apples if you like. Make this yours!
This is quick to throw together for an after school snack and is perfect for breakfast, or dessert. If you like to put a homemade dessert in your child's lunch a small piece of this is a great option. You can also add chopped nuts such as pecans or walnuts if you like. I prefer this one with just the raisins and save the nuts for my banana cake.
