커스타드크림 애플파이 : Custard Cream Apple Pie | Honeykki 꿀키
오늘의 메뉴는 커스타드크림이 듬뿍 들어간 애플파이입니다.
이 메뉴가 SNS에서 자주 보이길래 궁금해서 만들어 봤습니다.
매장에서 파는 것과 100%같지는 않겠지만, 최대한 비슷하게 만들어보려고 했어요.
여름이라 페이스트리 만드는게 힘들어서 생지를 사용했는데 편하더라고요.
올해 제가 만든 디저트 중에 제일 맛있었어요! :)
Today’s menu is apple pie filled with custard cream.
This menu popped up in my Instagram feed, so I was curious about it. So, I tried it.
I’m sure it’s not 100% the same, but I tried to recreate it as closely as possible.
I used store-bought puff pastry and it was so convenient.
It's the best dessert I made this year! Haha!
* 재료 Ingredients (for 8 served)
퍼프 페이스트리 생지 16조각
사과필링: 사과 2개, 버터 30g, 설탕 100g, 레몬즙 1숟가락
커스타드크림: 계란노른자 6개, 설탕 100g, 바닐라빈 1개, 우유 500ml, 박력분 50g
계란물, 데코젤 미로와(*선택)
Puff Pastry for 16 pieces
Apple filling: 2 apples, 30g butter, 100g sugar, 1Tbs lemon juice
Custard pastry cream: 6 egg yolks, 100g sugar, 1 vanilla bean(or vanilla extract), 500ml milk, 50g cake flour
egg wash, Decorgel (*optional)
* 커스타드크림 Custard pastry cream
1. 냄비에 우유와 바닐라빈을 넣고 가장자리가 끓을 때까지 데워줍니다.
1. Pour the milk and vanilla bean(split and scraped) and simmer until edge starts to bubble.
2. 믹싱볼에 계란노른자, 설탕을 넣고 밝은 레몬색이 될때까지 휘핑한 후, 밀가루를 넣어 잘 섞어줍니다.
2. In a mixing bowl, add and whip egg yolks and sugar until pale yellow. And then, add and mix flour.
3. (2)믹싱볼에 (1)우유를 조금씩 넣어가며 잘 섞어줍니다.
3. Slowly pour the (1)milk into (2)egg mixture.
4. (3)혼합물을 체에 한번 걸러준 후, 냄비에 부어 중약불로 끓여줍니다.
4. Strain the (3)mixture and simmer in a pot on medium low heat.
5. 주걱을 이용해 잘 섞어가며 부드러운 크림의 형태까지 될 때까지 잘 저어가며 끓여줍니다.
5. While simmering, keep stirring until soft cream consistency.
6. 완성된 크림은 그릇에 담은 후, 크림위에 랩을 밀착해서 씌워 식혀줍니다.
6. Set aside to cool in a bowl, sealed with wrap.
* 사과필링 Apple filling
1. 사과는 4등분을 한 후 씨와 껍질을 제거하고, 다져줍니다.
2. Core and peel quarters of apples and coarsely chop.
2. 냄비에 사과, 설탕, 버터를 넣고 부드러운 식감이 되도록 끓여줍니다.
2. Put and simmer the apple, sugar and butter until cooked through.
3. 레몬즙을 넣어 마무리한 후, 그릇에 담아 완전히 식혀줍니다.
3. Finish off with lemon juice and set aside to cool in a bowl.
* 조립 Assembly
1. 퍼프페이스트리 생지위에 사과필링을 얹고, 가장자리에 계란물을 발라줍니다.
1. Put the apple filling on the puff pastry and brush the edges with egg wash.
2. 다른 퍼프페이스트리 생지를 올린 후, 원형쿠키틀을 찍어 모양을 만들어 줍니다.
2. Cover with puff pastry and use a round cooking cutter to make the half moon shape.
3. 오븐팬위에 파이를 올리고, 190도로 예열한 오븐에 넣어 15분간 구워줍니다.
3. Transfer on a baking pan and bake in preheated oven at 190℃ for 15min or until golden brown.
4. 구워진 파이는 한 김 식힌 후, 파이안에 커스타드 크림을 넣어줍니다.
4. Cool the pie and pipe the custard pastry cream into the pies.
5. 파이위에 미로와(데코젤)을 발라 광을 내어 마무리합니다.
5. Brush the pies with decorgel(neutral glaze gel). Done!

1 tbsp of milk

- 1/2 cup (106g) granulated white sugar
- 2 teaspoons (4g) ground cinnamon

후라이팬, 오븐, 에어프라이어 모두 가능합니다.

✤ 재료 (5개/밥스푼계량)
- 샌드위치용 식빵 5
- 사과 작은거 1 (195g)
- 설탕1스푼
- 올리고당1스푼 (또는 꿀)
- 시나몬가루 1티스푼
- 무염버터1스푼
- 계란 1개 (후라이팬으로 구울 경우 생략)
✤ TIP
- 에어프라이어는 예열후 180도에서 10~15분 굽고, 덜 바삭하면 더 구워주세요.
- 후라이팬에 구울 경우 계란물은 생략하고, 녹인버터를 발라서 구워주세요
- 쎈불에서 빠르게 구우면 바삭함이 덜해요. 180~190도에서 15~20분이상 구워주세요.
- 오븐에서 구웠는데 덜 바삭한 경우, 200도 쎈불에서 5분 정도 더 구워주세요
- 사과를 조릴 때 맛을 보면서 단맛을 조절하세요
- 오븐에서 막 꺼낸 파이는 속이 뜨거우니 아이들은 식혀서 주세요.

You can make a delicious apple pie with only white bread and apples.

-Sandwich bread 5
-1 small apple (195g)
-1 tablespoon sugar
-1 tablespoon of oligosaccharide (or honey)
-1 teaspoon cinnamon powder
-1 tablespoon of butter
-1 egg (omit when baking in a frying pan)
✤ TIP
-Bake the Airfryer for 10 to 15 minutes at 180 degrees after preheating, and bake more if it is less crispy.
-When grilling in a frying pan, omit egg water and apply melted butter to bake.
-It will be less crispy if you bake it quickly over high heat. Bake at 180-190 degrees for at least 15-20 minutes.
-If it's baked in the oven and it's less crispy, bake it for another 5 minutes over 200 degrees Celsius.
-Adjust the sweetness while simmering apples while tasting them
-The pie just taken out of the oven is hot, so let the children cool.
