Amy Riolo Recipe Apple, Raisin, and Date Phyllo Strudel
Easy Apple Pastry – 20 minute vegan apple strudel recipe
This easy BERRY ME apple pie/strudel on the basis of puff pastry, apple sauce and chopped nuts is full of cheats and shortcuts to save time and energy.
You’ll need:
1 glass of apple sauce (500ml)
1 package of puff pastry
1,5 cups of chopped nuts (I’ve used almonds and some hazelnuts)
1 cup of walnuts/pecans
1/2 cup of raisins or 3 dates
2 tablespoons of mixed spices (everything that feels rich and a bit christmassy: like cinnamon, ginger, chai spices, nutmeg, anis, vanilla, orange zest and/or cardamom)
1 pinch of salt
Optional:
1 package of marzipan with or without rum filling
1 apple
1 tablespoon of flaxseeds
We’ll start by mixing the apple sauce with the nuts, the spices and the dried fruit (raisins or chopped dates).
Next up we’re cutting up the puff pastry to fit into our baking mold. You don’t need to grease it, because the puff pastry comes with enough oil on it’s own.
Optional: cut the marzipan and the apple.
Now lay out the pastry and fill it with the marzipan, the apple sauce and a slice of apple. Top it off with some brown sugar and bake on 200 degrees Celsius or 390 degrees Fahrenheit for 20 minutes.
Serve the strudel hot with vanilla ice cream and decorate with the leftover apple slices and some nuts.
And enjoy!
Let me know how you liked the shortcuts and the recipe and have fun with the pastry and all the time you have on your hands now ????????????
