How To make Easy Apple Strudel
Vegetable cooking Spray 1 slice firm-textured white bread
3 large apples, peeled and chopped (about 4 cups)
(Granny Smith, red or golden delicious) 1/2 cup golden raisins
1 tablespoon fresh lemon juice
1 teaspoon grated lemon zest
1/3 cup sugar
3/4 teaspoon cinnamon
1 1/2 teaspoons butter, melted
1 1/2 teaspoons canola oil
6 sheets filo pastry, thawed if frozen
OVEN: 375 Line a 10 x 15-inch jelly roll pan with aluminum foil. Coat foil with cooking spray.
In a food processor, grind bread into fine bread crumbs. Place crumbs in a pie plate and toast in oven until golden, about 5 minutes. Watch carefully to prevent burning.
In a large bowl, combine apples, raisins, lemon juice and lemon zest; toss to mix. In a small bowl, stir together sugar and cinnamon. In another small bowl, combine melted butter and oil.
Unroll filo and place on a large baking sheet; cover with plastic wrap and top with a slightly dampened kitchen towel to prevent filo from drying out. Place 1 filo sheet on a sheet of plastic wrap. Using a pastry brush, dab with a part of butter-oil mixture; coat with cooking spray. Sprinkle with part of bread crumbs. Repeat layering with remaining filo, butter- oil mixture, cooking spray and crumbs. Top sheet should be brushed with the butter oil mixture and coated with cooking spray.
Spread apple filling along one long end of dough, leaving a 2- inch border along edge and at sides. Sprinkle cinnamon sugar over apples. Fold bottom edge up over apple filling; fold in at sides. Starting at longer side and using plastic wrap, lift filo and carefully roll up like a jelly roll. Place strudel, seam side down, on prepared baking sheet. Brush with remaining butter-oil mixture. Coat with cooking spray.
Bake 15 minutes. REDUCE oven temperature to 350 degrees and bake 15 minutes longer or until golden.
Serve warm.

Traditional Gottscheer Apple Strudel Recipe
My mother's family recipe for making apple strudel. I hope you enjoy!
Thank you to our good friends Mel and Lauraine Yee for filming this video in October 2014 in Walden, New York. One thing I want to mention is that when adding apples, breadcrumbs and butter to the strudel, also add cinnamon and sugar to your taste.
Easy Apple Strudel
APPLE STRUDEL- (Apfelstrudel)
This delicious apple strudel is made using puff pastry. Anyone can make this super-easy
apple strudel. Delicious filling is made with apple, cinnamon and raisins inside buttery puff pastry . . .simply irresistible. Addition
of Cream Cheese gives the strudel whole new flavor . . . adding bit of sophistication to
the buttery puff pastry. These strudels are so soft and tender, they literally melt in your
mouth. It is a great breakfast dish or also as a dessert for a family dinner.
INGREDIENTS
Puff Pastry Sheets
Egg Wash (1 Egg + 1 Tbsp. of Water and well beaten)
APPLE FILLING- (Makes Apple filling for 2 Strudels)
Approx. 350 Grams 2 & ½ Cups Apples (Cut, Peeled & Cored)
Approx. 100 Grams (½ Cup) Brown Sugar (Adjust the quantity of sugar as per the sweetness of apples)
2 Tbsp. Raisins
1 Tsp Cinnamon
1/3 Cup Water
Salt to taste
2 Tbsp. Rum – Optional
CREAM CHEESE FILLING (Makes Cream Cheese filling for 2 Strudels)
Approx. 100 grams Cream Cheese
1 Tbsp. Brown Sugar
1 Tsp Vanilla Essence
1 Egg Yolk
TIPS:
1) Adjust quantity of sugar depending on sweetness of apples.
2) Do not overcook apples. They should soften but still retain the shape.
3) Brush the strudel with egg or Milk. This gives nice golden color to the
Pastry
4) Puff pastry needs to completely thaw before using. If it is frozen
then let it thaw in the fridge overnight. Or else thaw it on the counter just
until pliable enough to unfold without cracking, but still cold to touch.
If the dough starts to feel limp, refrigerate it for 30 minutes until firm
again.
5) Don’t apply too much pressure while rolling the puff pastry
dough; otherwise the pastry may not rise.
