Happy New Year everyone! Cheers to 2022! In celebration of the new year, I thought I would make a wonderful New Year’s Apple Cake! This is now the second year in a row that I have made a bundt cake on New Year’s Sunday. I plan to continue this as an annual tradition. Last year I made a Mixed Berry Bundt Cake, see the link below, and now this year I am showing you how to make an Apple Bundt Cake! This is a family recipe that I am so excited to share. Award Winning Granny Smith Apple Bundt Cake
Award winning granny smith bundt cake, this is the most moist and delicious cake. The spices and apple mix flavor, brings back memories of my childhood. This is a easy cake to make and a bonus to any meal.
2 cup sugar
3 eggs room temp
2 cup vegetable oil
1 orange (squeeze juice save peel for zest)
3 cup all purpose flour
1 tsp baking soda
1/4 tsp salt
1 1/2 Tbsp cinnamon
2 tsp pure vanilla extract
1 tsp nutmeg
3 large granny smith apples peeled and cored and cubed in small pieces
1 cup chopped pecans
Glaze
1 cup powdered sugar
1 tsp orange zest
1 dash orange extract (optional)
1 Tbsp milk (depending on how thick you want your glaze)
Directions
Prepare bundt pan and preheat oven to 325
Begin mixing sugar, eggs, oil, and orange juice. Then slowly add all of the dry ingredients. Add apples and pecans last. This batter should be very thick and dense. Pour batter in bundt pan and bake for 1 hour and 15 minutes or until tester comes out clean. Turn cake unto a plate and allow to cool. Mix glaze to the consistency you would like it. Drizzle the cake with the glaze and enjoy.

Apple Cinnamon Bundt Cake

Elevate a store-bought cake mix with a few simple steps. Full of fresh apples and warm cinnamon, this cake is a little slice of autumnal heaven.
Prep Time: 10 minutes
Cook Time: 40 minutes
Cooling Time: 60 minutes
Total Time: 1 hour, 50 minutes
Ingredients:
For the cake:
1 pound fresh apples (about 4 small ones), peeled and chopped (Produce)
1 TBSP flour (Aisle 5)
2 TBSP brown sugar (Aisle 5)
1 tsp. cinnamon (Aisle 5)
1 package cake mix, such as white, vanilla, or yellow (Aisle 5)
1 cup whole milk (Dairy)
½ cup canola oil (Aisle 5)
3 large eggs, at room temperature (Dairy)
1 tsp. vanilla extract (Aisle 5)
For the glaze:
2 cups powdered sugar (Aisle 5)
2 TBSP apple cider (Produce)
Pinch of cinnamon (Aisle 5)
Directions:
For the cake:
Preheat oven to 350 degrees. Spray a 10-cup Bundt pan with baking spray (Aisle 5) and set aside. In a medium bowl, stir together the apple pieces, flour, brown sugar, and cinnamon, set aside. In a large bowl, Whisk together the cake mix, milk, oil, eggs, and vanilla until smooth. Gently stir in the apples. Pour into prepared Bundt pan and bake in preheated oven for 40 minutes. Remove from oven and cool cake in pan on wire rack for 10 minutes before turning over and removing cake from pan. Allow cake to cool completely before glazing (recipe follows).
For the glaze:
In a small bowl, whisk together the powdered sugar, cider, and cinnamon until smooth. (Glaze will appear to be quite thick, but any thicker and it won’t stay on the cake!) Once cake is fully cooled, pour glaze over the top.
*Cake can be store in an airtight container for up to four days.
