How To make Vegan Macaroni & "Cheese"
3 c Cooked elbow macaroni
1/4 c Dry sherry
2 ea Green onions, thinly sliced
2 ea Plum tomatoes, coarsely
-- sliced 2 tb Chives, minced
1 ts Cornstarch
1 c Cold vegetable broth
1 c Shredded tofu cheddar
1 tb Dijon
Freshly black pepper Salt to taste 1/2 c Toasted bread crumbs
Lightly oil a 1 1/2-quart baking dish & pre-heat oven to 375F. Place cook pasta in a large bowl. In a skillet, bring sherry to a simmer. Add green onions & saute for 1 minute, stirring. Add tomatoes & chives. Saute 2 minutes till tomatoes are slightly softened. Toss with pasta & set aside. In a small bowl, dissolve cornstarch in cold broth & pour into skillet. Heat to simmering. Add soy cheese & whisk over low heat till mixture is thickened. Remove from heat. Stir in mustard, pepper & salt. Spoon into casserole dish. Top with bread crumbs. Bake 20 minutes. Ingredients:
500g macaroni (boiled)
2 cups boiled water
2 cups diced and boiled potatoes
1 cup diced and boiled sweet potato (or carrot or pumpkin)
1/4 cup oats
1/4 cup nutritional yeast
2 tsp course celtic sea salt
1/4 tsp white pepper
1 tsp onion powder
1 tsp garlic powder
1 tbs lemon juice
1 tbs miso paste
Optional: 1/4 cup pine nuts and 1 tbs tahini
SUGGESTED TOPPINGS:
I like to sprinkle with smoked paprika or nutmeg

//In this video I’m sharing the best VEGAN MAC AND CHEESE RECIPE ever! I use corn macaroni and plant based milk together with nutritional yeast and other plant ingredients, so this recipe will suit everyone on a plant based diet and/or gluten free diet! This cheap lazy vegan macaroni and cheese recipe is SO EASY AND FAST to make - even a kid can do it! So, you MUST TRY as it is a foolproof recipe you will love. It will take you approximately 20 minutes to prepare it :)
???? Here is the recipe:
(for 2 medium portions)
200g macaroni (I used corn macaroni to make it gluten free)
1 cup plant milk (I used soy)
0.3 cup oil
0.75 tbsp yellow mustard
0.5 cup nutritional yeast
1 tsp salt
0.5 tsp paprika
0.25 tsp garlic powder
???????????? What to do with this all?
1️⃣ Cook macaroni by following instructions on the package
2️⃣ Mix the other ingredients in blender
3️⃣ Mix macaroni with sauce in a frying pan and cook for a few minutes until the liquid evaporates and you get that thick creamy consistency (don’t forget to mix)
4️⃣ Enjoy ????

3 Ingredient Vegan Mac & Cheese! Is it any good?
We've seen a fair few 3 ingredient recipes here on YouTube, so we thought we'd see what we could do with 3 ingredients. We chose one of our favourite meals: mac and cheese. This was a complete experiment, but a fun one at that!
This vegan mac & cheese is simple, cheesy and delicious! We have managed to create the simplest mac & cheese possible using only 3 ingredients, nutritional yeast, oat milk and macaroni. This is the perfect quick lunch or a tasty treat to perfect a delicious dinner.
Ingredients
200g macaroni pasta
500ml oat milk
50g nutritional yeast
Salt and pepper to taste
Before you start
Kettle boiled | Saucepan | Frying Pan
Method
Cook the pasta | Pour the water from the kettle into a saucepan and bring to the boil | Add the macaroni pasta and a good pinch of salt to the pan and simmer for 9 minutes
Make the Sauce | Add the oat milk to the pan and bring to simmer over a medium heat | Once the oat milk is simmering, add the nutritional yeast and stir constantly with a whisk until it has reduced by three quarters | Taste the sauce and season to perfection with salt and pepper
Combine the elements | Drain the pasta, add to the pan and stir into the sauce | Spoon into bowls and serve immediately

This is the best vegan mac and cheese!
Recipe for this vegan buffalo chick'n mac and cheese:
12 oz medium shells, cooked al dente
¼ cup dairy-free butter
¼ cup all-purpose flour
2 cups unsweetened non-dairy milk
14 oz vegan Cheddar cheese shreds
1 tsp garlic powder
1 tsp onion powder
½ tsp mustard seed powder
½ tsp paprika
½ cup dairy-free cream cheese
½ cup Primal Kitchen Buffalo Sauce
½ cup red onion, diced
6 oz meatless chicken, cooked and chopped
¼ cup dairy-free feta or blue cheese crumbles
2 tbsp thinly sliced green onion
½ cup Primal Kitchen vegan ranch dressing
1. Preheat your oven to 375 degrees F.
2. In a medium pot, over medium heat, add in your dairy-free butter and allow it to melt. Whisk in your flour and allow the butter and flour mixture to cook for 1-2 minutes.
3. Add in your non-dairy milk and bring it to a low simmer, then add in your dairy-free cheddar cheese shreds. Whisk well until a smooth sauce starts to form.
4. Add in dairy-free cream cheese, spices, and Primal Kitchen Buffalo Sauce and whisk until everything is smooth and fully combined. Keep on a low simmer until ready to use.
5. To a large oven-safe pot or cast iron pan, add in your cooked pasta, the cheese sauce we just made, red onion, and meatless chicken. Mix until fully incorporated and sprinkle over dairy-free feta or blue cheese crumbles and place into the oven for 15 minutes.
6. Remove from oven, and drizzle over Primal Kitchen Vegan Ranch and green onions.
7. Mix through and serve hot. Enjoy!
