How To make Two Meat, Two Bean Chili
5 pounds Ground round (15% lean groun
-beef) 2 pounds Hot or sweet Italian sausage
-removed from casings
crumb 3 each Large onions :
chopped
2 each Medium sweet red bell pepper
-seeded and chopped 2 each Medium green bell peppers
-seeded and chopped 2 each Fresh hot green chili pepper
-seeded and minced 4 each Garlic cloves -- minced
1/3 cup Chili powder
1 tablespoon Salt
2 teaspoons Dried oregano
2 teaspoons Ground cumin
2 each Bay leaves
3 cans (28-oz) whole tomatoes with
-tomato puree -- undrained 1/2 cup Yellow cornmeal
2 cans (16-oz) pink beans -- drained
2 cans (16-oz)_black beans -- drained
In a large soup kettle, cook the ground round, sausage, onions, red and green pepeprs, chili peppers, and garlic over medium-high heat, stirring often, until the meat is seared (but not browned), about 10 minutes. Pour off excess fat. Add the chili powder, salt, oregano, cumin, and bay leaves and stir for 1 minute. Add the tomatoes with their puree, breaking up the tomatoes with a spoon. Bring to a simmer. Reduce the heat to low and cook, stirring often, until the liquid is reduced, about 1-1/2 hours. In a small bowl, combine the cornmeal and 1/2 cup of water. Stir the cornmeal mixture and the pink and black beans into the chili.Cook, stirring occasionally, until the chili is thickened, about 10 minutes. (The chli can be made up to 3 days ahead. If desired, scrape off and discard the solidified fat that rises to the surface. Reheat the chili gently on top of the stove before serving.) Makes about 25 servings.

Hope ya'll enjoy! The ingredients list is kinda long, but once you get all of your ingredients together everything else is a piece of cake! From time to time I like to experiment with different flavors to see what I can come up with. This is one of my many ways to make chili. It's so GOOD! Feel free to take out any ingredient that you don't like, this recipe is very forgiving.This chili taste BEST when served immediately after cooking.
*THIS IS A SLOW COOKER RECIPE*
Chili Recipe
Here's what I used in the video:
Power Quick Pot ( I'm using a 10 Qt)
1 Green bell pepper
3 Celery stalks
1 Yellow onion
5 Garlic cloves
2 lbs. of Ground beef (I used 80/20 lean)
2 Tsp Oregano
2 Tsp Brown sugar
2 Tsp Coriander
4 Tbsp Chili powder
3 Tbsp Ground Cumin
2 Tsp Dried Thyme
1 Tsp Smoked paprika
1/2 Tsp Dried Basil leaves
1/2 Tsp Black pepper
1/4 tsp Cayenne Pepper (to taste, gradually add more as needed)
Salt to taste ( I used 1 1/2 tsp)
1 Bay Leaf
4 Tbsp Green onions
2 16 oz Cans Kidney beans (rinsed and drained)
1/2 cup canned Black beans
1- 28 oz Can Hunts Diced tomatoes (with juices)
1- 29 oz Can Hunts Tomato sauce
1- 14.5 oz Can Swanson Chicken broth (low sodium)
2 Tsp Worcestershire sauce
*TIP - Taste as you go!!

3 bls (1.361 kg) ground beef (I used 85 / 15 fat to meat ratio)
1 medium to large onion finely chopped
5 cloves garlic minced
6 Tbsp (40 g) chili powder (I used McCormick Brand)
3 tsp (7 g) smoked paprika
3 tsp (8 g) garlic powder
3 tsp (8 g) onion powder
3 tsp (7 g) ground cumin
3 Tbsp (49.5 g) tomato paste
7 cups (1.65 L) low sodium beef broth
1 chipotle pepper in Adobo sauce
2 Tbsp Adobo sauce from can of chipotle peppers
2 - 15 oz cans pinto beans (drained and rinsed)
salt and pepper to taste
*For corn starch slurry*
4 Tbsp (35 g) corn starch
4 Tbsp (60 ml) cold water
INSTRUCTIONS
- In a preheated on a medium high heat 6 .5 qt pot add 3 tbsp oil and ground beef
- Add salt and pepper to taste, cook ground beef for 5 to 8 minutes
-Now add garlic and onion, combine and continue to cook for 3 to 5 minutes
- Next add and combine all dry seasonings and spices to cooked ground beef
- Now add tomato paste, combine and cook for a minute or two
- Next add beef broth, stir and mix well
- Add chopped chipotle pepper, adobo sauce and bring to a boil
- Cover pot with a lid, lower the heat and gently simmer for 1 hour stirring through out
- After and hour add cornstarch slurry to thicken chili
- Add drained and rinsed pinto beans combine and simmer for and additional 15 minutes then serve
