How To make Meaty Chili Without Meat
2 tb Olive oil
- to package directions 1 To 2 lb fresh mushrooms
1/2 c Spaghetti sauce
- (combination of domestic - homemade or prepared - and shiitake) cleaned Salt to taste - stem removed and reserved 2 c Water
- (if using dry mushrooms 1 c Long-grain white rice
- rehydrate them) Cilantro -- washed, dried 2 Hot chilies, green or red
- chopped -- optional - fresh or pickled
seeded Lime wedges :
optional - and minced Tomatoes -- washed, chopped 2 tb Ground cumin
- optional 3 tb Ground chili powder
Plain yogurt or sour cream 32 oz Canned beans, such as black
- optional - red kidney or pink Cheddar cheese, shredded - drained -- or fresh beans - optional - soaked & cooked according
In a large skillet heat olive oil over medium heat. Add mushrooms and reduce heat to low and simmer covered, stirring occasionally, until the mushrooms are tender, about 10 minutes. Stir in the chilies, cumin, chili powder, beans and spaghetti sauce. Cover and simmer for 20 to 40 minutes. Season to taste with salt. Meanwhile prepare rice. In a medium-size saucepan, bring water to a boil. Add rice, reduce heat and cook the rice covered until tender, about 18 minutes. Serve the chili hot over rice with cilantro, lime wedges, tomatoes, yogurt or sour cream, and cheddar cheese, if desired. We think this is the best Texas chili recipe and the internet seems to agree. In this recipe, we use the flat of a brisket for creating tender morsels of chili meat that doesn't come out tasting like pot roast.
This recipe is in the style of Texas barbecue restaurants and is a chili recipe with no beans.
It's a bit like a chile con carne recipe, but we slowly simmer these chunks of beef until they are one solid soup. In fact, you might find that using an immersion blender after the chili cooking gives you even more of a Texas quality chili. Just buzz it a few times to make it extra broken up and mixed well. :)
Ingredients Used:
• 4 slices thick cut bacon
• 3-4 lb. beef brisket, trimmed
• Kosher salt, pepper, onion powder – for liberally sprinkling on the meat while browning.
• 2 c. white onion, small diced (one large onion)
• 5 garlic cloves, pressed through a garlic press
• 1 T paprika
• 1 T. cumin powder
• 3 ½ T Texas chili powder, such as Mexene or Gebhardt’s
• ½ t. dried thyme
• ½ t. chipotle chile powder
• ½ t. salt
• 1 quart beef broth
• ½ c. strong black coffee (you can save this from your morning coffee)
• 28 oz. can whole tomatoes, in juice

Cut up some onions and peppers. Cook them in a big pot until soft. Dump in canned crushed or puréed tomatoes and undrained canned beans — roughly equal quantities is a good starting point, though I like extra tomato. Dump in a lot of spices until you like how it tastes — cumin + smoked paprika + oregano + garlic powder is a good basic blend. Simmer for about a half hour. If you want to be fancy, melt in a little dark chocolate. Eat and go do something else with your life.

WHAT MALCOM USED IN THIS RECIPE:
- Malcom's Bonafide Chili Seasoning
All Beef - no bean - Chili Recipe
- 2 lbs beef chuck roast
- 2 lbs beef sirloin steak
- 1 onion diced
- 4-5 garlic cloves minced
- 1/2 cup Malcom’s Bonafide Chili Seasoning
- 28oz can diced tomatoes
- 28oz can tomato sauce
- 1 cans Rotel diced tomatoes and chilis
- 1 can diced green chilis
- 1 Tablespoon Worcestershire
- 1 Tablespoon beef broth concentrate
- 2 teaspoons sugar
- Salt and Black Pepper to taste
1. Cube the chuck roast and sirloin. Season with Bonafide Chili Seasoning and toss.
2. Run the seasoned cubes of beef through a meat grinder using the course grinding plate.
3. Brown the ground meat in a large Dutch oven over medium heat.
4. Add the diced onion and cook 3-5 minutes then add the minced garlic and cook for an additional 1-2 minutes.
5. Season with 4 heaping Tablespoons of Bonafide Chili Seasoning, Worcestershire, beef broth concentrate, salt and pepper (to taste).
6. Add the diced green chilies, diced tomatoes, tomato sauce, and Rotel tomatoes and chilies.
7. Add a pinch of sugar and bring the chili to a simmer. Cook it uncovered for at least an hour - stirring often.
8. Serve the chili with shredded cheddar cheese and finely diced white onion.

Now chili is a really complex recipe, there are a billion and one ways to make it and this is just ONE way, and the key to an award winning chili at home is to make it your own. That’s the key to any award winning recipe.
In this recipe we’re using
3 ½ lbs ground beef
½ onion
3 garlic cloves
4 tbs chili powder 3 Fiesta / 1 Gephart
2 tsp smoked paprika
¼ cup tomato paste
1 bell pepper
2 tsp cumin
½ tsp oregano
1 tsp cayenne pepper
1 TBS OG - add to taste at end
1 TBS WOW -add to taste at the end
3 Roma tomatoes
We’re also adding
Mirepiox
(thats ½ chopped onion, ¼ cup chopped carrots, ¼ cup chopped celery)
2 TSP Better than Bouillon or use beef broth in place of water
2 TBS masarina or flour to thicken if necessary or desired
Condiments at my house
Onions
cheese
Salsa verde to taste
Chili piquin to taste
Habanero to taste
Beans of your choice, yes i said beans haha
Now here is the biggest pro tip that the chili champs use – brown your meat over high heat before adding it to the dish. This will take your recipe to a whole other level of flavor nirvana.
