How To make Fast with Five: Chili Meat Loaf Muffins
1 lb Lean ground beef
3/4 c Medium salsa
1 ts Chili powder
14 oz Canned red kidney beans,
-drained and rinsed 1/2 c Monterey jack or cheddar,
-shredded This is a fun dish for kids; beans and salsa cupped in ground beef muffins and baked under melting cheese. Start the meal preparation by putting potatoes in the oven while you assemble the muffins, then as the muffins bake, grate carrots for a slaw. In bowl, break up beef with fork; mix in 1/4 cup of the salsa, chili powder, 1/2 ts salt and 1/4 ts pepper. Divide into 8 portions; place in muffin cups. Press centre of each to form a well 3/4 inch deep and 1-1/2 inch wide. Bake in 400F 200C oven for 10 minutes or until firm to the touch and no longer pink. Combine beans and remaining salsa; spoon into wells. Sprinkle with cheese. Bake for 7-8 minutes or until beans are hot and cheese has melted. Using 2 forks, remove from muffin cups. Yield: 12 servings
Ingredients:
1 pound raw lean ground beef (or extra lean, 4% or less beef)
1 cup finely chopped onion
1 cup finely chopped mushrooms
1/4 cup whole-wheat panko breadcrumbs
1/4 cup (about 2 large) egg whites
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
1/2 teaspoon each salt and black pepper
3/4 cup marinara sauce
3/4 cup shredded mozzarella cheese (or part-skim mozzarella)
1 tablespoon grated Parmesan cheese
Preparation:
1. Preheat the oven to 375 degrees. Spray a 12-cup muffin tin pan with nonstick cooking spray.
2. In a large bowl, mix all ingredients except marinara sauce, mozzarella and Parmesan cheese. Evenly distribute mixture along the muffin cups, and smooth out the tops. Evenly top with marinara sauce.
3. Bake until firm with lightly browned edges, about 35 minutes.
4. Sprinkle with mozzarella and Parmesan cheese. Bake until melted, about 5 minutes.

2lbs ground beef
1 small finely diced onion
1/2 cup finely diced bell pepper(color doesn't matter)
1 1/2 sleeves crushed Ritz crackers
3 eggs
4 oz. shredded Colby Jack cheese
1/2 cup milk
1 tsp salt
1/4 tsp black pepper
Topping
1/2 to 3/4 cup ketchup
2 tbsp brown sugar
1 tsp mustard
Mix well.
Preheat oven to 350. In large bowl, mix eggs, crackers, onion, bell pepper, cheese, milk, salt and pepper. Add ground beef and mix to combine, don't over mix. Place meatloaf on parchment paper or foil lined baking sheet. Form into loaf. Bake for 30 min. Remove from oven, spread topping over meatloaf and bake an additional 30-40 min until 160 degrees inside.

Spicy Meat Muffins
*Ingredients*
beef, brown sugar, chili, eggs, ground beef, meat, milk, onion, paprika powder, parsley, puff pastry, sugar, vegetable oil
*Recipe*
Preheat the oven to 360 degrees F/180 degrees C.
Heat the vegetable oil in a skillet.
Finely chop the onion and add it in the skillet.
Add the brown sugar. Cook them.
Add the ground beef, sprinkle some salt and pepper and cook them.
Add the parsley and the paprika powder and mix by time to time.
Flour your workplace and roll out the puff pastry.
Use a rolling pin to make the puff pastry thinner.
Use 2 round cutters: one of 2-inch (5 cm) diameter, another of 0.8-inch (2 cm) diameter.
Cut 6 small puff pastry rounds and 6 bigger puff pastry rounds.
Put the bigger rounds in a 6-cup muffin pan.
Put 1/2 teaspoon of chili sauce in each muffin cup.
Add beef mixture in each cup and top the muffins with the small puff pastry rounds.
Make an egg wash by whisking the egg with the milk.
Spread some egg wash on the muffins using a silicone brush.
Sprinkle some black and white sesame seeds.
Bake the muffins for 20 minutes.

Vegan Meatloaf Muffins w/ Melanie Murphy
We teamed up with Melanie Murphy to create this delicious seasonal vegan dish. The run up to Christmas can be difficult for the non-meat eater with all the family gatherings and dinners, but this can be made at home and easy brought with you and is a delicious substitute with your festive feast.

2 onions
3 cloves
handful spinachKale/cabbage
1 carrot
150g mushrooms
1 tin green lentils (400g)
30g dried crannberries
3 tbsp nutritional yeast (optional but recommended)
3 tbsp ground flax/chia seeds
150g walnuts
100g wholemeal couscous/ (200g cooked quinoa)
1 tsp salt
1/2 tsp black pepper
3 tbsp tamari
Preheat over to 180C
Start by making your couscous. Put couscous in a bowl and pour boiling water over the top of the couscous just above the top of it and cover with a plate. Leave sit to cook/puff up for 5 minutes. If you are gluten free, use quinoa instead, just use 200g pricked quinoa.
Next, prep your veggies. Peel and finely chop the onions and garlic. Cut the mushrooms into quarters and chop the carrot into thin slices. Add all the veg to a food processor and blend for about 30 seconds. Remove mix and put it into a large mixing bowl.
Add all remaining ingredients to food processor and blend till reasonably smooth but not like baby food! you still want some texture (You may need to scrape down the sides of the bowl).
Get your muffin tray ready and line them with muffin cases. Simply spoon in your mixture into cases. You should get about 12 meatloaf muffins from this recipe.
Bake in oven for 35 minutes at 180.
Leave cool for a couple of minutes before eating. Enjoy!!
