I had the honor of cooking Short Rib and Chilean Seabass at Barack Obama's Campaign / 47th Birthday Dinner at The State Room in Boston in August of 2008 then cooked this similar dish Kalbi Short Rib for President Barack Obama twice at Alan Wong's Honolulu when I was Chef Alan's Sous Chef. Longleaf Pines of Southeast Texas
In Jasper County, Texas we encounter one of the most diverse habitats in the South, consisting of a sandy forest of Longleaf Pine, Pinus patula adjacent to a soggy bottomland with 3 different kinds of carnivorous plants, including pitcher plants (#Sarracenia alata) on it and a #mycoheterotrophic plant (#Apteria aphylla) that's barely noticeable in the shadowy understory in which it grows.
Later, we end up a few miles away on a dry, rocky sandstone glade to see a succulent member of the bitterroot family, #Montiaceae.

BACOLOD, PHILIPPINES - Welcome to Bacolod, one of the food capitals of the Philippines! They are known for a few speciality foods, but probably the most famous, and a food you’ll find all over the Philippines is chicken inasal - a unique style of barbecue chicken! Today we’re going on an ultimate bbq tour in Bacolod, and we’re going to uncover the secret as to why it’s so good!
The Bacolod Food Hunters ( - Huge thank you to Martin and the team from The Bacolod Food Hunters for taking me around in Bacolod and for showing me some of the best places to eat bbq!
Here are the locations and the places we ate in this video:
Aida's Chicken ( - We’re starting at Manokan Country, probably the most famous place in Bacolod for chicken inasal, and it’s really so incredibly iconic. There are a few dozen places to choose from, but Martin recommended Aida’s as one of the local favorites. We were lucky to get into the kitchen to see the grilling action, and it’s some of the most exciting grill action you’ll see! One of the secrets of chicken inasal, along with all the marinade, is the continual basting of chicken oil and anatto as its being grilled. This keeps the chicken juicy and moist, and when you eat it, you eat more chicken oil in the rice.
Total price - 687 PHP ($12.53) for everything.
Chai Rose Barbecue ( - To continue this Filipino food tour we went to another legendary bbq spot on Bacolod known as Chai Rose Barbecue. They have insasal as well, but their speciality is pork bbq skewers. The taste is sweet and salty and it goes great along with chicken oil rice as well.
Silay City BBQ - We continued on to a small Filipino barbecue stall under a tree in Silay City. The family was so friendly and welcoming, and they have the full bbq spread of about 20 different skewers to choose from. The bbq was hot and delicious and especially good with Aunty’s homemade chili vinegar.
Total price - 170 PHP ($3.10)
Man Plaza - Finally to complete this Filipino street food tour of barbecue and inasal in Bacolod we went to one more legendary place - a place that’s frequented by local students in the area - Man Plaza. It’s an entire bbq plaza all under one roof with about a dozen stalls to choose from. We chose a place called Royam’s. Expect plenty of smoke and friendly people!

????????SALBUTES CON RELLENO NEGRO: Fry tortilla and make black sauce using a mixture of chilis including black chili. Add shredded turkey and top with hard boiled egg. Serve with a side of cabbage, habanero pepper, and habanero salsa.

???????? HIGADO ENCEBOLLADO (PORK LIVER): In a big bowl, add raw liver, salt, garlic, black pepper, and fresh pressed orange juice. Add more liver, orange juice and salt. Mix it all together. In a pan, add oil. Add livers (two at a time), then red onions. Flip the liver and allow it cook for about ten minutes. Plate it, add salsa and serve with a side of orange.
????????POC CHUC: Salsa: grill tomatoes and add to a pestle and mortar. Add salt. Grind. Separately, chop cilantro. Add to the mashed tomatoes and continue grinding. | Pork: Mix pork with salt, garlic, and black pepper. Add freshly squeezed orange. Mix. Place directly on the grill.
????????MORONGA (BLOOD TACO): Fry blood and gut sausage together. Chop it and place in a pan with tomatoes and the chopped onions.

????????TORTA DE LECHON: Place the baby pig in the oven. When it is read, chop and mix with fried onions. Assemble in a sandwich and serve with sauce.

4. TACOS DE CABEZA DE RES

????????TORTA: Boil the head for 5 hours. Remove the meat from the head and chop, then grill it. Heat up the corn tortillas and add cheek meat on top, tongue meat or brain.
