1/2 c shortening
2 ea. egg
1 t baking soda
1/2 t salt
1 c apple
1/2 c pecans
1 apple
1 cinnamon sugar
1/2 c sugar
1 1/2 c unbleached flour
1 t baking powder
3/4 c oats
2/3 c sharp cheddar cheese
3/4 c milk
1 butter
* You should have 12 to 15 thin slices of unpeeled red apple for this recipe.
Preheat the oven to 400 degrees F. Cream the shortening and sugar together and add the eggs, one at a time, beating well after each addition. Combine the flour, baking powder, baking soda, and salt in a mixing bowl, mix lightly. Gradually stir the flour mixture into the shortening mixture. In this order, add the oats cheddar and pecans, mixing well after each addition. Gradually add the milk, stirring until all the ingredients are just moistened. Grease the muffin pans and fill each cup 2/3rds full of batter. Dip the apple slices in the melted butter and then into the cinnamon-sugar. Press 1 apple slice into the top of each muffin. Sprinkle lightly with cinnamon-sugar and bake for 25 minutes in the preheated oven, or until golden brown.

Ingredients:
1 1/3 cups (320 ml) grated raw carrot (about 2-3 peeled carrots)
1 small apple, peeled and grated
1 1/3 cups (175 grams) all-purpose flour
3/4 cup (150 grams) granulated white sugar
1/2 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup (120 ml) coconut (sweetened or unsweetened) (optional)
2 large eggs
1/2 cup (120 ml) safflower, corn, vegetable, or canola oil
1/2 teaspoon pure vanilla extract
INSTRUCTIONS:
Preheat oven to 350 degrees F (180 degrees C) and place rack in center of oven. Place paper liners in 12 muffin cups. Peel and finely grate the carrots and apple. Set aside.
In a large bowl whisk together the flour, sugar, baking soda, baking powder, salt, and ground cinnamon. Stir in the nuts and coconut. Set aside.
In a separate bowl whisk together the eggs, oil, and vanilla extract. Fold the wet ingredients, along with the grated carrot and apple, into the flour mixture, stirring just until moistened. Evenly divide the batter between the prepared muffin cups and bake for 20 - 25 minutes or until a toothpick inserted in the center comes out clean.
Remove from oven and let cool on a wire rack. After about 10 minutes remove the muffins from the pans and cool completely on a wire rack.
Makes 12 standard-sized muffins.

These muffins are very moist, with little pops of tartness from the fresh cranberries bake inside. They are also low in calories, sugar and WW Smart Points. What’s not to love!❤️
Ingredients:
- 3/4 granulated sugar substitute (Splenda)
- 4 Tbsp. unsweetened applesauce
- 1 Tbsp. I can't believe it's not butter light
- 1 tsp. vanilla extract without alcohol
- 1 egg
- 1 cup flour
- 2 tsp. cinnamon
- 1/4 cup plain non-fat Greek yogurt
- 1/2 cup fresh cranberries (cut in half)
- 3/4 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1/4 tsp. nutmeg
- 1 1/4 grated apple (Granny Smith)
Bake at 350 degrees for 18 - 20 minutes.
