2 cups powdered sugar
2 sticks butter
1 t vanilla
1 cup chopped pecans
1/2 tsp roasted pecan oil
2 cups a/p flour
1/2 t salt
dash of cinnamon

GF German Chocolate Cupcakes - The Dainty Oven
Tastes exactly like the cake you know and love but gluten free: fluffy chocolate cake, rich coconut pecan filling, and chocolatey buttercream.
If you don't have gluten free ingredients on hand, you can swap out the same ingredients for the gluten free ones!
Recipe:
1/4 cup cocoa powder
1/4 cup + 1 tablespoon GF flour
1/4 teaspoon baking soda
1/2 teaspoon baking powder
1/8 teaspoon salt
1 egg
2 tablespoons sugar
2 tablespoons brown sugar
1 1/2 tablespoons melted butter
1/4 teaspoon vanilla extract
1/4 cup almond milk
1/2 teaspoon apple cider vinegar
Directions:
1. Preheat oven to 350 degrees F
2. In a separate bowl, mix together almond milk, vinegar, and vanilla extract
3. With a whisk attachment, mix together cocoa powder, flour, baking soda, baking powder, salt and both sugars
4. Add in eggs, butter, and milk mixture and whisk until fully incorporated
5. Transfer to mini muffin tins, use 1/2 tablespoon to measure
6. Bake 10-12 minutes and cool
Coconut Pecan Filling:
4 tablespoons butter
4 oz evaporated milk
1 egg yolk
1/2 cup sugar
1/2 cup + 2 tablespoons shredded coconut
pinch salt
1/2 cup chopped pecans
Directions:
1. Add butter, evaporated milk, yolk, sugar, coconut and salt in a saucepan on medium- medium high heat.
2. Reduce filling by 1/3, stir every once in a while to keep the bottom from burning
3. Remove from heat and stir in the pecans, transfer to a different bowl to cool
Chocolate Frosting:
6 tablespoon butter - softened
2 cup GF powdered sugar - sifted
1/4 cup cocoa powder - sifted
1 teaspoon vanilla extract
pinch salt
2 tablespoons almond milk
Directions:
1. Beat butter on high until fluffy
2. Slowly add in powdered sugar 1/2 - 1/3 c at a time, completely combine before adding more
3. Mix in 1 T almond milk then add in the cocoa powder
4. Add in the last of the almond milk then mix on high speed until fluffy
Double the recipe and it will make 12 normal sized cupcakes!

Maple Pecan Pie Bars
The maple pecan bars is a very delicious and healthy dessert for holidays!
crust:
1 cup unsalted butter
2 cups all purpose flour
1/2 cup light brown sugar
Filling:
3 eggs
1/4 cup brown sugar
1 cup corn syrup
1/4 coconut oil or unsalted butter
1 tsp pure vanilla extract
2 cups pecan
Bake crust to 350 F for 15 mins, bake pecan bar to 350F for 30 mins or until the mixture firm.

The cutest little pies with a sweet and nutty filling!
Pie Dough Recipe:
Cookie cutter of your choosing
Filling:
1 1/2 cup mixed berries
3/8 cup brown sugar
1/4 teaspoon vanilla extract
3/4 cup chopped pecans
1/6 cup (3 1/2 Tablespoons) melted butter
1 egg
1/4 cup corn syrup
Directions:
1. In a saucepan on medium heat, combine the brown sugar and melted butter. Heat until most of the sugar is dissolved
2. Add in the corn syrup, stir until it starts to boil then add in the vanilla
3. In a separate bowl, whisk the egg and then slowly add in the filling a spoonful at a time (this is tempering, slowly adding heat to the egg so it won't cook and taste eggy)
4. Put the mixture back on the heat, and add in your berries and pecans and mix them until they're combined. Boil it until the berries start to break down then put into a separate bowl to cool
Assembly:
1. Roll your room temperature dough out to 1/4 - 1/8 in thick, cut pieces with your ring mold, then repeat until all dough is used
2. Egg wash (1 egg, 2 T water combined) the outside edges of one piece of dough, add the filling to the center, then top with a different piece of dough
3. Dip a fork into the egg wash and press the outside edges down firmly to create a seal
4. Transfer to a covered pan, cut 3 slits into the top of the dough for air to escape, then brush the egg wash over the tops of the finished pies
5. Preheat oven to 350 degrees F, bake 20-30 minutes or until the tops are golden brown
