How To make Mom's Southern Pecan Pie
1 Unbaked pie shell
1 c Fruit sweetener
1 tb Cornmeal
1/3 c Unsweetened applesauce or
--applebutter 3 tb Water
2 tb Cornstarch
3 Eggs
2 ts Vanilla extract
2 tb Very strong coffee or
-espresso (prepared - not -grounds) 24 Pecan halves
Prepare pastry and place in 9" pie pan. In large bowl, combine fruit sweetener, cornmeal and applesauce/butter. Beat with electric mixer. In small bowl, blend water and cornstarch until smooth. Add to fruit sweetner nixture and blend. Beat in eggs one at a time. Stir in vanilla and coffee. Pour mixture into pie shell. Decorate top with pecan halves. Bake 30 to 40 minutes - or until custard is set - at 375 degrees.
Cool slightly before cutting. In this cooking video, Vickie shows how to make her Mom's Old Fashioned Pecan Pie. This is a decadent dessert that is so easy to make. Ingredients 1 refrigerated pie crust 1 cup sugar 1/2 cup Karo light corn syrup 1/4 cup butter, melted 3 eggs, well beaten 1 cup chopped pecans 1 teaspoon vanilla Sprinkle both sides of the pie crust with flour , place in a 9 inch pie pan and flute the edges. Mix together the sugar, corn syrup and melted butter. Add the beaten eggs, vanilla and pecans to the syrup mixture, mixing thoroughly. Pour into the pie shell. Bake at 375 degrees for 30 minutes. After 20 minutes, shield the edges with aluminum foil or a pie protector. After 30 minutes, reduce the heat to 350 degrees and bake an additional 20 minutes. Enjoy!

Ingredients for Pie Crust
1 cup of flour - whole wheat or white flour
1 stick of butter - room temperature
3 ounces of cream cheese - room temperature
Directions for Pie Crust
Combine flour, butter, and cream cheese into a bowl and mix well for a couple of minutes.
Once dough comes together you can finish making a ball on a cutting board or countertop.
Pinch off one-inch balls and add to a 24-count muffin pan.
It's okay to use a convenient 12-count cupcake pan -- you will, of course, make bigger pie crust balls, about two to three inches.
Spread each crust ball to the edge of each muffin mold shape. Now it's ready to add the chopped pecans and brown sugar filling.
Ingredients for Pecan Pie Filling
1 egg
3/4 cup brown sugar
1 tablespoon butter - warm melted
2 teaspoons vanilla
1 cup of raw chopped pecans
Directions for Pecan Pie Filling
Add one egg to a bowl. Spoon in 3/4 cup of brown sugar, and two teaspoons of vanilla extract. Mix well.
To prepare whole pecans, lay out a cup-full on a cutting board. Roughly chop the pecans so they will easily fit into each mini pie crust.
Fill each mini pie shell with pecan pieces.
Spoon on enough pie filling to cover the pecans in each pie shell.
Add the pie tray to a preheated 350-degree oven for 15 minutes. Then reduce heat to 300 degrees and bake for another 15 minutes.
Finally, remove Mini Pecan Pies from the oven and allow to cool for five minutes. Carefully remove the mini-pies from the pan. Mom used a short blade knife to loosen the pies.
Mini Pecan Pies store covered in a cool dry place and can be served at room temperature.
Classic Pecan Pie - How to Make Pecan Pie with Crispy Crust - Southern Pecan Pie Recipe
Classic Southern Pecan Pie recipe adapted from Bell's Best cookbook, with a pre-made pie crust (so the video shows just the pie filling recipe). My mother's adaptation for how to get a pecan pie with a crispy crust and uses half a cup less sugar than other recipes. In this video, I make it in a shallow tart pan with a pre-made pie crust. My mom always buys the pre-made pie crust in the aluminum foil pan, so she doesn't even have to roll it out. Ingredients:
1 premade pie crust for a 9-inch pie dish
3 tbsp butter, melted and cooled
1/2 cup granulated sugar (or up to 1 cup)
1/2 cup light caro syrup
3 eggs, beaten well
1 teaspoon vanilla
1 cup pecans, chopped
Bake time & temp: 375/190 for 15 minutes, then 350/175 for 25-30 minutes
*If using 1/2 cup sugar, the filling will be shallow for a pie dish; if using 1 cup of sugar, it will fill a normal pie dish.
Recipe summary: Melt butter and cool so it doesn't cook the eggs when you stir them together. Whisk eggs for 1 minute. In a separate bowl, whisk together sugar and caro. Stir butter into sugar mixture. Then whisk in eggs. Add and vanilla and whisk well. Stir in pecans. Pour into pie shell. Bake for 15 minutes at 375F/1990C, then lower heat to 350/175 for 25ish minutes. The middle should still jiggle.
