How To make Snickerdoodles 2
1/2 c Margarine; softened
1 Egg white
1/2 ts Vanilla
1 1/2 c Unbleached flour
1 c Granulated sugar
1/4 ts Baking soda
1/4 ts Baking powder
2 tb Sugar
1 ts Cinnamon
Preheat oven at 375. In a mixing bowl, combine margarine, egg white, and vanilla. In another mixing bowl, combine flour, 1 cup sugar, baking soda, and baking powder. Mix wet ingredients with dry ingredients just until moistened. Cover and chill for 1 hour. In a shallow bowl, combine 2 tablespoons sugar and cinnamon. Shape dough into 1" balls. Roll balls in the sugar-cinnamon mixture to coat. Place balls 2" apart onto unprepared baking sheets. Bake for 10 minutes or till edges are lightly browned. -----

Ingredients
• - 2 cups unbleached all-purpose flour
• - 1 teaspoon baking soda
• - ½ teaspoon cream of tartar (3/4 tsp of baking powder ????)
• - ½ teaspoon coarse salt
• - Pinch of freshly grated nutmeg (or pumpkin pie spice ????— next time I’d add a bit more for a bolder pumpkin flavor!)
• - 1 stick unsalted butter, melted and cooled
• - 1 cup granulated sugar
• - ½ cup canned pumpkin puree (not pie filling)
• - 1 large egg, room temperature
• - 1 teaspoon vanilla extract
• - ½ cup fine sanding sugar (or just regular sugar ????)
• - 1 teaspoon ground cinnamon
• - ½ teaspoon ground all spice (I swapped for pumpkin pie spice here too ????)
Bake at 375* for 10-12 minutes, with the cookies spaced 3 inches apart per tray!

Recipe here: Stephanie Jaworski of Joyofbaking.com demonstrates how to make Snickerdoodles. Snickerdoodles are also called Snipdoodles or Cinnamon Sugar Cookies. Recipes for this cookie started to appear in the late 1800s, and most agree they probably originated in New England and are of either German or Dutch descent. This crinkly topped cookie with its coating of cinnamon sugar is often overlooked. Maybe it is because they are more plain looking than today's creations or maybe it is because they do not use exotic ingredients. But what these old fashioned Snickerdoodles do have is great flavor. While using the most basic of ingredients; butter, sugar, eggs, flour, and ground cinnamon, when you bite into one you will find the edges are wonderfully crisp yet inside the texture is wonderfully soft and chewy with a buttery sweet flavor.
