Amazing Carrot Cake Recipe
My delicious carrot cake recipe is almost too easy to believe and my gosh is it good! The batter has toasted pecans, shredded carrot (of course), and lots of spices! The cake is very moist but not at all oily! Covered in cream cheese frosting and topped with a ring of cute buttercream carrots!

Carrot Cake is a deliciously rich and moist Spice Cake that is full of grated carrot, chopped nuts, dried coconut, and crushed pineapple. I like to frost it with a tangy and sweet Cream Cheese Frosting. The interesting part is that while those pretty orange flecks of grated carrot give the Carrot Cake color and texture, along with sweetness and moisture, its flavor is almost indistinguishable.

INGREDIENTS
-1 can of full fat coconut milk (refrigerate overnight)
-1 tsp vanilla extract
-1-2 tbsp sweetener (I used honey but to make it Vegan use maple syrup, coconut sugar, stevia, etc)
Mix everything up with an electric whisk for 4 min and store in an air tight container in the fridge for up to 2 weeks.

Carrot Cake Recipe
Ingredients:
4 large eggs (beaten well) or egg beaters substitute
1 ½ c. white granulated sugar
¼ tsp. salt
1 ½ c. whole wheat flour
½ c. quick oats
½ c. oat bran
2 tsp. baking soda
4 tsp. ground cinnamon
¾ c. olive oil
2 lbs. shredded raw carrots
1 c. chopped nuts
Cream Cheese Frosting Recipe
Ingredients:
½ box or approx. 1 ¾ c. Confectioner’s Sugar
1 Stick (4 oz.) salted butter
1 (8 oz.) package of Philadelphia Brand Neufchatel 1/3 Less Fat Cream Cheese
1 tbl. plus ¼ tsp. of vanilla extract
UPDATE: February 5, 2017: I am continually tweaking this recipe to make it even more healthy. Since I posted this video, I have been able further cut down on the sugar content without compromising the taste or texture. It has been a gradual process for me so I have adjusted to the taste and prefer it very much over the version I created above. If you would like to try it with less sugar than the above recipe then here's the change: Instead of 1 1/2 cups of white granulated sugar, you use 1/2 cup of raw honey and 1/4 cup of white granulated sugar. If you try it this way, let me know what you think!

Red Velvet cream cheese marble cake
New Orleans native Charlie Andrews demonstrates how to make a Red Velvet cream cheese marble cake. It's basically a Red Velvet cake with a cream cheese batter swirled into it. After the cake is baked, I top the cake with a cream cheese frosting. This recipe calls for 15 or more servings depending on how you slice it and it is delicious. Hope you all will give this recipe a try.

FAQ: Why use unsalted butter and add salt at the end? Can't you use salted butter?
You can, but you risk an overly salty buttercream in the end. Salt varies by brand but you probably also have a preference for how much you like in your dessert.
If you do do choose to use salted butter, try only half - I've had bakers tell me that they used all salted butter for their buttercreams and it ended up being way too salty
