1 1/2 c POWDERED SUGAR
3 tb SOFT BUTTER
1 1/2 ts CREAM
1 t VANILLA
1 oz CHOCOLATE
1 c MARSHMALLOWS, MINIATURE
1/2 c SALTED PEANUTS, OPTIONAL
BLEND SUGAR AND BUTTER. STIR IN CREAM AND VANILLA. ADD CHOCOLATE, MARSHMALLOWS AND NUTS. NOTE: MAKE brOWNIES ACOORDING TO PACKAGE DIRECTIONS. TOP WITH THE FROSTING

NINA Dark Chocolate Cashew Brownies (gluten/sugar-free)
I have been chopping and changing this brownie recipe for years and this is definitely one of my favourite versions. It is insanely tasty and has a wonderful classy feel. I am constantly trying to make my desserts and cakes the best they can possibly be but at the same time looking at ways to make them a little healthier where possible. These are without sugar and are made using xylitol which is a plant based sweeter. It works very well here and is the perfect sugar substitute. I warn you though, these are ridiculously tasty.

Make 12 brownies
ingredients:
4 medium free-range eggs
300g xylitol
125g unsalted butter
170g cashew nut butter
200g dark chocolate
80g almond flour
80g raw cacao powder/coco powder
1 tsp baking powder
1 tsp vanilla extract
Preheat oven to 170 degrees and line a 15 inch baking tray with baking parchment.
Place the eggs and xylitol into a bowl and use a handheld whisk to whip until combined and the eggs go pale. This takes about 4 minutes. Melt the dark chocolate and butter in a heatproof bowl over a pan of swimming water. Add the cashew nut butter to the chocolate mix and then add the dry ingredients and mix well. Stir in the vanilla extract and then carefully stir in the beaten eggs and xylitol until everything is incorporated. Use a spatular to scrape everything into the prepared baking tray and place into the oven for about 20-25 minutes until a skin has formed on top. Remove from the oven and leave to cool completely. They should still be gooey inside. Once cooled slice into 12 brownies. They will last for 3 days sealed in the fridge.

Makes 20 Rocky Road

Recipe Ingredients:
Base
360g digestive biscuits
150g butter / marg
50g glace cherries { Optional }
45g Syrup
225g Chocolate
Topping:
300g choc fudge
300g marshmallows
300g Chocolate
Method:
To make base
1. First melt down the chocolate, butter, syrup in a microwave for about 2 min mix round with spoon
2. Put the digestive biscuits into the bowl with glace cherries { Optional }; you can do this by hand or with a mixer on 1st speed, roughly break down the digestive biscuits with glace cherries
3. Add in the microwave mixture into the bowl with digestive biscuits with glace cherries, mix round for about 2 min
4. Scrape down and put on to lined tray, press out and then roll with a rolling pin
5. Put into Fridge
Topping:
6. Remove from the fridge, then spread over with 300g of warmed chocolate fudge, then add over the top 300g of coloured marshmallows, let this set
7. Add over the top warmed up chocolate, then put into fridge
8. Remove from fridge and cut up into 20 slices
