How To make Chocolate Potato Cake with Cream Cheese Frosting
1 c Hot mashed potatoes
2/3 c Butter
2 c Sugar
3 Separated eggs
2 c Sifted flour
3 ts Baking powder
1 ts Cinnamon
2/3 ts Salt
1/2 c Cocoa
1/2 c Milk
Frosting: 1 pk Cream cheese
1 ts Vanilla
1 tb Butter
2 c Powdered sugar
Cake: Preheat oven to 350 degrees. Cream butter and sugar. Add egg yolks and hot mashed potatoes and mix well. Sift together flour, baking powder, salt and cocoa. Add flour mixture alternately with milk to sugar mixture. Beat egg whites until stiff and fold in. Pour into 2 greased and lightly floured 9 inch layer cake pans. Bake 45 minutes or until done. Cool on rack for 5 minutes before removing from pans. When cold- frost with cream cheese frosting. Frosting: Mix cream cheese, vanilla, butter and powdered sugar together and frost cake. 227g (1 cup) butter, soft
400g (2 cups) granulated sugar
2 large eggs, at room temperature
6g (1.5 tsp.) vanilla extract
240g (2 cups) flour
210g (1 cup) mashed potatoes
50g (1/2 cup) cocoa powder
5g (1 tsp.) baking soda
236ml (1 cup) whole milk
Caramel Buttercream:
213g (1 cup) brown sugar
113g (1/2 cup) butter
59ml (1/4 cup) whole milk
250g - 300g (2 - 2.5 cup) icing sugar/powdered sugar

My husband hates CHOCOLATE CAKE but LOVED this one!
RECIPE:

If you’re looking for a rich, fudgy chocolate cake to satisfy your sweet cravings, then this cake IS IT! Paired with an indulgent chocolate fudge frosting, this is by far the best chocolate cake I’ve ever had.
INGREDIENTS:
Chocolate Cake
- 1½ cups (190 g) flour - regular all purpose
- ½ cup (50 g) cocoa powder - unsweetened
- 1 tsp baking soda
- 1 tsp baking powder
- ½ tsp salt
- ¾ cup (170 g) unsalted butter
- 1¼ cups (200 g) dark chocolate (50%)
- ⅓ cup (80 g) milk - room temperature
- 1½ cups (300 g) white sugar
- 1½ tbsp instant coffee powder
- ¼ cup (55 g) unflavoured vegetable oil - I use canola oil
- 1 tsp vanilla essence/extract
- 2 large eggs - room temperature
- ½ cup (110 g) hot water
Bake at 160 °C (320°F) with the fan on. If your oven doesn't have a fan option, then you will need to increase the baking temperature to 175°C (347°F). Remember to grease the bottom and sides of two 8 inch cake tins (mine are 3 inch deep), and also line the bottom of the tin with baking/parchment paper.
IMPORTANT: Do not open the oven door too early to check the cake otherwise this can cause the cake to sink in the middle. Enjoy :)
Chocolate Fudge Frosting
- 1 cup (226 g) cream
- 4 tsp cocoa powder - unsweetened
- 2½ cups (400 g) dark chocolate (50%)
- 1 cup (226 g) unsalted butter
- 1 cup (170 g) icing sugar - also known as powdered sugar/confectioners sugar
- ½ tsp instant coffee powder
- ½ tsp salt
- 2 tsp vanilla essence/extract

Baking in Blue Episode 30 - Chocolate Potato Cake
Hi everyone! Another huge break, again! Sorry about that but you'll see why at the start here! Along with that surprise we have a surprisingly good cake for today, check it out!
Ingredients:
Cake:
1 cup (250g) mashed potato
2 cups (480g) sour cream
1 3/4 cups (218g) flour
1 3/4 cups (350g) sugar
1/2 cup (113g) salted butter
3/4 cup (75g) coca powder
2 eggs
1 1/2 tsp (4.5g) baking soda
1 tsp (5 ml) vanilla
Frosting:
4 oz semisweet chocolate, broken into little cubes
1/2 cup (100g) sugar
3 tbsp. (45 ml) corn syrup
2 tbsp. (30 ml) water
Instructions:
1. Cream together the butter and sugar in a large bowl
2. Add all the rest of the cake ingredients at once and carefully beat together
3. Preheat oven to 350°F (180°C)
4. Pour batter into greased 9x13 pan
5. Bake for about 40 minutes until a knife comes out clean
6. While the cake is cooling, add sugar, corn syrup, and water to a small saucepan and cook over medium heat until mixture starts to sizzle. Do not let boil.
7. Once sizzling, take off heat and add chocolate, then stir together until chocolate melts
8. Pour frosting over cooled cake and let harden before serving.
Easy Cream Cheese Chocolate Frosting
This delicious and easy to make Chocolate Frosting made from only 5 ingredients.
Ingredients:
50 grams soft butter
175 grams of cream cheese
1/4 Cup cocoa powder
1 cup icing sugar
1/2 tsp of vanilla essence
