How To make Penne All'Arrabbiata (Penne with Spicy Sauce)
1 1/2 lb Penne, cooked al dente
Extra virgin olive oil 1 md Onion, finely chopped
4 cl Garlic, sliced
3 c Italian tomatoes, canned,
-peeled, crushed by hand 3 tb Capers, drained
1/2 c Green olives, pitted/halved
1 1/2 ts Hot red peppers, chopped
3 Anchovy fillets, drain/chop
6 Basil leaves, fresh, whole
Parsley, fresh, chopped pn Salt Fresh ground black pepper 2/3 c Dry red wine
Pecorino Romano cheese,grate 1 c Mushrooms, fresh, sliced
6 1/2 oz Pancetta bacon, fine chop
Heat the oil in a large skillet and saute the onion until transparent. Add the garlic and saute until soft, then the pancetta and cook until bubbling and transparent. Add the capers, mushrooms, olives, hot red pepper, anchovies, salt (use only a pinch because of the anchovies), pepper and wine. Simmer until the wine is reduced by half, then add the tomatoes. Cook for 10
minutes longer, add the basil leaves, then toss in the pasta and sprinkle generously with cheese and parsley. Serve immediately.

Ingredients for penne pasta:
✤ 250 grams uncooked penne pasta
✤ 3 tablespoons olive oil
✤ 2 tablespoons cloves garlic minced
✤ 1 teaspoon red pepper flakes
✤ 1.5 cans diced tomatoes with juices
✤ 1 teaspoon brown sugar (optional)
✤ 2 tablespoons chopped basil leaves
✤ salt & pepper to taste
✤ water for boiling pasta
For serving:
✤ freshly grated parmesan cheese

Arrabiata Pasta (Penne all'arrabiata) - literally means: angry pasta, a very spicy pasta dish
Recipe: Arrabiata Pasta (with Penne pasta shape)
A quick and tasty dish very appreciated in Italy.
Doses for 3 people:
210 g. of Penne
one fresh chili pepper
parsley
a clove of garlic
100 gr tomato puree
3 tablespoon Extra virgin olive oil
Start cooking pasta in salty boiling water.
While pasta is cooking,
heat olive oil in a pan,
add the garlic clove in two pieces
and add the chili pepper cutted lenthwise.
After a couple of minutes,
pour tomato puree in the pan.
Mix and remove the garlic and chili pepper pieces.
Continue cooking the sauce at low heat
Drain the pasta al dente and drop in the pan
mix very well and finally add chopped parsley.
Mix again and serve at the table.
No grated Parmesan nedeed
