Penne Pink Sauce Recipe
This easy Pink Sauce Pasta is a cross between alfredo and a traditional tomato sauce. The dish comes together in less than 30 minutes, making it the perfect weeknight dinner. Don’t forget some wine and fresh garlic bread. Total comfort food!
Ingredients:
300 g pasta of choice, I used penne
2 tablespoon butter
1 tablespoon olive oil
1 small red onion, minced
4 garlic cloves, minced
1.5 cups tomato passata (or puree or sauce-not tomato paste)
1 teaspoon dried basil
1 chicken bouillon cube, crumbled
pinch sugar
sprinkle of red chili flakes
salt and pepper to taste
1/2 cup heavy cream
1/2 cup milk
1/3-1/2 cup shredded mozzarella cheese
Instructions:
Cook the pasta to al dente according to package instructions, then drain, reserving some of the pasta water.
Heat a large skillet over medium heat and add the butter and olive oil. Once the butter has melted, add the onion and cook for 4-5 minutes until softened. Add the garlic and cook for another minute.
Add the tomato passata, dried basil, crumbled chicken bouillon cube, sugar, red chili flakes and salt and pepper to taste. Simmer for a few minutes, then add the cream, milk and the shredded mozzarella.
Add the cooked pasta, toss to combine and warm through for a few minutes. If sauce is too thick, add a splash of pasta water. Enjoy immediately!

How to Make Penne à la Vodka

Ingredients:
- 8 ounces (about 225g) penne pasta
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (adjust to taste)
- 1/3 cup vodka
- 1 cup canned crushed tomatoes
- 1/2 cup heavy cream
- Salt and pepper to taste
- Fresh basil, chopped, for garnish
- Grated Parmesan cheese, for serving
Instructions:
1. Cook the penne pasta according to the package instructions in a large pot of salted boiling water until al dente. Drain and set aside.
2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and red pepper flakes, and sauté for about 1 minute until the garlic becomes fragrant.
3. Carefully add the vodka to the skillet. Allow it to simmer for about 2-3 minutes, allowing the alcohol to cook off and the liquid to reduce slightly.
4. Add the crushed tomatoes to the skillet, stirring to combine with the vodka and garlic. Allow the mixture to simmer for about 5 minutes, stirring occasionally.
5. Reduce the heat to low and pour in the heavy cream. Stir the cream into the tomato sauce until well combined. Let the sauce simmer for an additional 5 minutes, or until it thickens slightly.
6. Season the sauce with salt and pepper to taste.
7. Add the cooked penne pasta to the skillet, tossing to coat the pasta evenly with the sauce.
8. Divide the Penne à la Vodka between two serving plates. Garnish with chopped fresh basil and serve with grated Parmesan cheese on the side.
