1 3/4 c Quick Bread Mix
3 tb Sugar
1 1/2 ts Orange peel :

8 1/2 oz Can of crushed pineapple

Drain pineapple, reserving juice. Add milk to juice to equal 3/4 cup. Add egg to milk mixture; set aside. Combine Quick Bread Mix, sugar, and orange rind in a medium bowl; make a well in center of mixture. Add milk mixture and pineapple to dry ingredients, stirring just until moistened. Blueberry Muffins (yield: 6 large or 12 standard muffins)
2 1/4 c (315g) AP flour
3/4 c (150g) sugar
1/4 c (53g) brown sugar
2.5 tsp (12g) baking powder
1 tsp (6g) fine salt
2 eggs
1/3 c (66g) vegetable oil
4 oz (57g) butter, melted
3/4 c (170g) whole milk
1 tsp (5g) vanilla extract
1 1/4 c (205g) fresh or frozen blueberries
1. Mix all the dry ingredients together in a bowl.
2. In a separate bowl, whisk all the wet ingredients together until combined.
3. Mix the dry and wet ingredients together and stop mixing as soon as you can't see any dry flour. If there are some small clumps, that is ok.
4. Gently fold in the blueberries.
5. Divide between 6 large muffins or 12 standard size muffins.
6. Top the muffins with a generous sprinkling of coarse sugar (turbinado, demerara, or sanding).
7. Bake at 375F for 15-20 min for standard muffins or until a toothpick inserted in the center comes out with wet crumbs.

1 box Pillsbury Banana Quick Bread & Muffin Mix
1 cup water
1/2 cup oil
2 eggs
1/2 cup peanut butter
1/2 cup melted chocolate chips
Directions:
Step 1: Preheat oven to 375F. Prepare banana quick bread batter according to package directions.
Step 2: Roughly divide the batter into two bowls. Add 1/2 cup peanut butter to one bowl and stir just until combined. Add 1/2 cup melted chocolate chips to the other bowl and stir just until combined.
Step 3: Prepare a loaf pan with baking spray (optional: add a sheet of parchment paper as a sling to pick up the bread later). Alternate scoops of both batters into the prepared pan. Shake the pan to remove any air bubbles. Make a zigzag pattern just once with a butter knife through the batter to gently swirl.
Step 4: Bake according to package directions for your size loaf pan. The bread is ready when a toothpick inserted into the middle comes out clean. Let cool and enjoy!

Cake Mix Blueberry Muffin:
1 package of white cake mix (I used Betty Crocker. I’m not sure what the results will be if you use another cake mix)
2 tablespoons all-purpose flour
1 teaspoon of baking powder
2/3 cup of milk, room temperature
3 large eggs, room temperature
1/3 cup of vegetable oil
1 cup of fresh or frozen blueberries (thawed and well drained)
Preheat oven to 350 degrees. Line muffin cups with liners.
Combine dry cake mix, flour and baking powder in a large bowl. Beat wet ingredients together and add mixture to the dry ingredients. Stir until moistened. Gently fold in blueberries.
Spoon batter into muffin cups.
Bake for 25-30 minutes or until golden brown.

How to make Easy Basic Muffins Recipe
Ingredients
2 cups all purpose flour
1 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
150 g plain yogurt, at room temperature
2 large eggs, at room temperature
1 teaspoon vanilla extract
1/2 cup butter, melted and cooled
2/3 cup milk, at room temperature
Instructions
1.Preheat the oven at 375°F.
2.Grease 12 muffin paper cups and set aside.
3.In a large bowl, whisk together the flour, baking powder, sugar and salt.
4.In a medium bowl, whisk together the eggs, vanilla extract and yogurt until smooth.
5.Gently add the eggs mixture and milk into the flour mixture.
6.Using a whisk to stir all the ingredients until combined well, but do not over mix.
7.Add in the melted butter and whisk everything together until just incorporated.
8.Using an ice cream scoop, scoop the batter into each muffin paper cup.
9.Tap the tray gently 3 times for get rid of the air bubble.
10.Put the muffin tray into the oven and bake for 18 minutes to 20 minutes at 375°F.
11.When the time is up, bring the muffin out of the oven. Allow the muffins to cool for about 10 minutes before serving. ENJOY!
