1 c Whole wheat flour
2 c All-purpose flour
1 t Salt
1/2 ts Soda
1 t Baking powder
2 ts Cinnamon
1 c Walnuts, chopped
3 lg Eggs
1 c Sugar, white or brown
1 c Oil
1 t Vanilla
2 c Prepared fruits such as
Banana, zucchini, carrot, Tomato, orange or apple

2 ripe bananas
The bananas are about 259g
Mash the bananas with a fork
50g milk
3g instant yeast
Mix well
15ml melted unsalted butter
Mix well
300g all-purpose or bread flour
3g salt
Mix until the ingredients are combined
Add 5ml olive oil to a bowl
Spread in the bowl
Cover and rise until double size
38g yellow sugar
5g ground cinnamon
Mix well
30ml melted unsalted butter
Mix well
Prepare a loaf pan that is about 9x5
Spread unsalted butter in the pan
Sprinkle some flour on a kneading board
Move the dough to the work surface
Sprinkle some flour on top
Fold the dough gently
Use a rolling pin to flatten the dough
The dough is about 20x35cm
Spread the filling on the dough evenly
Roll up the dough from the short end
Pinch the edges
Transfer to the loaf pan
Cover and rise until double size
Brush milk on top
Bake for 30-35 minutes at 356F/180C
Cover the top with tinfoil when the top is golden brown
After baking
Spread unsalted butter on the top
Place on a rack to cool
Let's slice open the bread to see the inside!
It looks so delicious!
It's so soft
The inside is super fluffy!
This cinnamon bread is very easy to make and also very healthy!
You must try this super delicious recipe if you have ripe bananas at home!

Hello folks!
A very warm welcome back to What’s For Tea :) Today I whipped up a lovely batch of muffins. I made some Lemon, Blueberry and also white chocolate and raspberry. These are so easy to make, and even easier if you’re only making one flavour!
Everything I used will be listed below,

Basic muffin mix -
300g (2 & 1/2 cups) Plain, or all purpose flour
200g (1 cup) White sugar
240ml (1 cup) Whole milk
1 Tablespoon fresh lemon juice (mix with the milk 10 minutes before using)
150ml (0.6 cup) Vegetable, sunflower or olive oil
2 Large eggs or 3 medium eggs
3 Teaspoons baking powder
1/2 Teaspoon of salt
1 Teaspoon vanilla extract
1/4 cup Brown sugar for the tops
Additions - (multiply the ingredients below by 3 if you’re just making one flavour instead of three like I did)
Blueberry Muffins :
100g (1/2 cup) Fresh blueberries, frozen are ok too.
Lemon Muffins:
1 Tablespoon lemon zest
1 Tablespoons Lemon juice
1 Teaspoon lemon extract
White chocolate & raspberry Muffins:
100g (1/2 cup) Fresh raspberries, frozen are fine too
50g (1/4 cup) White chocolate chips
1 Teaspoon vanilla extract
1 Tablespoon lemon zest (optional)

Banana muffins Recipe from scratch. Cream butter and sugar. Add egg and beat until light and fluffy. Add flour and salt to creamed mixture. Mix well. Dissolve soda in warm water and add to mixture. Blend in mashed bananas. Grease a muffin tin and fill muffin cups with batter 2/3 the way full. Sprinkle each muffin with brown sugar. Bake at 325 for 18-22 minutes or until toothpick inserted in the middle comes out clean. Let stand 5 minutes before removing from pan.
This recipe is adapted from Ann Rice's cookbook Grandma's Recipe Box
My little ones love these muffins for an after school snack. I love them warm with a little chunk of cold butter on each bite. The top part of the muffin is my favorite!

1/4 teaspoon salt

How to make Easy Basic Muffins Recipe
Ingredients
2 cups all purpose flour
1 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
150 g plain yogurt, at room temperature
2 large eggs, at room temperature
1 teaspoon vanilla extract
1/2 cup butter, melted and cooled
2/3 cup milk, at room temperature
Instructions
1.Preheat the oven at 375°F.
2.Grease 12 muffin paper cups and set aside.
3.In a large bowl, whisk together the flour, baking powder, sugar and salt.
4.In a medium bowl, whisk together the eggs, vanilla extract and yogurt until smooth.
5.Gently add the eggs mixture and milk into the flour mixture.
6.Using a whisk to stir all the ingredients until combined well, but do not over mix.
7.Add in the melted butter and whisk everything together until just incorporated.
8.Using an ice cream scoop, scoop the batter into each muffin paper cup.
9.Tap the tray gently 3 times for get rid of the air bubble.
10.Put the muffin tray into the oven and bake for 18 minutes to 20 minutes at 375°F.
11.When the time is up, bring the muffin out of the oven. Allow the muffins to cool for about 10 minutes before serving. ENJOY!
