How To make Manila Clams with Black Bean and Ginger Sauce
2 teaspoons peanut oil
2 tablespoons ginger
finely minced
1 tablespoon garlic :
finely minced
1 jalapeno seeded and minced
1/4 cup minced scallion
2 dozen manila clams or new zealand cockles
1/4 cup shao hsing or dry sherry
1 tablespoon oyster sauce
1 teaspoon thin soy sauce
1/2 teaspoon sugar
2 tablespoons salted black beans :
crushed with a
-- clever 2 teaspoons cornstarch
1/2 teaspoon sesame oil
Place oil in a wok over medium high heat. Stir fry the ginger, garlic, jalapeno, and scallions for 1 minute. Add the clams and stir well to blend. Add the Shoa Hsing and a scant 3/4 cup water. Cover wok, and boil the clams open for about 2 to 3 minutes. Remove clams and place in a colander; shake over wok to let the juices run off into wok. Set aside. To the wok, add the oyster sauce, the soy sauce, the sugar and the black beans. Stir well. Cook over medium high heat for 30 seconds. Mix the cornstarch in a small cup with a little water until a milky liquid is formed, then add to the boiling liquid in the wok (which will thicken immediately). Stir well for 10 seconds, remove from heat, and add sesame oil. Return clams to wok and toss to coat. Serve immediately.

Then I tried it a couple more times at home, and it looked like this. Can you tell what’s different? Ok, let’s take a look at our ingredients now and I’ll explain why later.

2 lbs ------- Manila clams clams (live)
2 Tbsp ---- each, ginger & garlic (minced)
2 Tbsp ---- fermented black beans (rinsed & smashed)
2 pcs ------ fresh red chili pepper
1 Tbsp ---- Shaoxing wine (for sizzling)
* pre-mixed sauce *
1 Tbsp ---- each, light soy sauce & hoisin sauce
2 Tbsp ---- Shaoxing wine
1 tsp ------- each, sugar & sesame oil
**starch - water mixture: 1 tsp cornstarch + 2 Tbsp water
2 stalks -- green onions (cut 2 inches in length)
1 tsp ----- sesame oil
Easy Sautéed Clams in Black Bean Sauce 簡易豉汁炒蜆 附中英文食譜
Sautéed Clams in Black Bean Garlic Sauce
豉汁炒蜆
Fresh Clam 900g
Black Bean 15g
Diced Garlic 15g
Diced Shallot 15g
Ginger Strips 15g
Cooking Wine 15g
Chicken Powder 3g
Sugar 3g
Soy Sauce 5g
Red Chilli Pepper 1 pc (Diced)
Soak clams in water for 30 minutes. Rinse and drain well. Soak black bean for 10 minutes. Drain well.
Boil a wok of water. Pour clams in. Cook clams for 1 minute at medium low heat to remove sand inside clams. Pour clams out. Drain well.
Heat wok or deep pan. Add 2 tbsp oil. Add shallots and black bean. Sauté. Add garlic and red pepper. Sauté at medium heat until fragrant. Turn up heat. Add clams. Sauté briefly. Add wine and seasonings. Sauté until clams open up and are fully coated with sauce. Scoop out. Serve.

豆豉15g
蒜蓉 15g
蔥頭粒15g
薑絲15g
料理酒 15g
雞粉 3g
糖 3g
生抽5g
紅辣椒 1 個(剁碎)
蜆浸水30分鐘,沖洗乾淨並瀝乾。豆豉浸水10分鐘,瀝乾水。
燒一鍋水,倒入蜆,用中低火煮蜆1分鐘,倒出,去掉蜆的沙,瀝乾水。
熱鍋,加入2湯匙油,放豆豉及蔥頭,略炒,加入蒜蓉和紅辣椒,中火炒香,調高火,加入蜆,略兜炒並加入酒和調味料,炒至蛤蜊張開並完全沾上醬汁,收乾水份,舀出,完成。

Ingredients:
Serves 3 - 4 pax

10g young ginger (julienned)
2 stalks of spring onion (add the stems first then add the rest of them at the end)
4 cloves of chopped garlic
2 red chilli (julienned)
1 tablespoon black bean paste
0.5 tablespoon oyster sauce
