Easy Ham & Hasbrown Casserole Recipe
I was honored to be asked by the Iowa Corn Growers Association to post a recipe video our family enjoys eating while working in the fields or at home. Ham & Hashbrown casserole is a great meal for the fields and super easy and fast to throw together.
It’s a very easy recipe:
1 large bag frozen Hash browns
1 large can cream of mushroom soup
1 large can cream of chicken soup
2 cups sour cream
4 cups shredded cheddar cheese
2-3 cups chopped or shredded ham
1 stick of butter
This makes one large roasting pan or two casserole dish pans. I baked one and froze the second. Great recipe for a large crowd.
Not only is it a great meal option- but also perfect for brunch. Remove the ham and this is a favorite potato side dish for meals as well.
Bake at 425 for 35-45 minutes until golden brown.

Corn Bread Dressing
This traditional southern corn bread dressing is to be served as a side dish next to the turkey. With sweet corn bread and savory sage, this moist and flavorful dish is sure to please.
Ingredients:
1 Corn bread mix or recipe prepared a day or two ahead of time and crumbled
1 stick butter
3 medium onions, chopped
4 stalks celery, chopped
1 ½ tsp. dried sage
1 tsp. poultry seasoning
¾ tsp. salt
½ tsp. pepper
3 slices dry bread, cubed
2 Tbsp. chopped parsley
½ cup milk
3 eggs, lightly beaten
2 to 2 ½ c. chicken stock or broth
2 Tbsp. butter
Directions:
Preheat oven to 350 degrees.
Heat butter over medium heat in a large pan. Add celery and onion and cook until soft.
Add sage, poultry seasoning, salt, and pepper to onion mixture.
In a large bowl combine crumbled cornbread and toast.
Whisk together milk and eggs and add to bowl. Stir in 2 cups of chicken broth.
Stir in onion mixture. The mixture should be very moist. Add more broth if necessary.
Transfer to a greased baking dish. Cut butter into small slivers and scatter on top of dressing.
Bake at 350 degrees for 30 minutes, or until it turns light brown on top.
It's simply delicious!

Tater tot casserole:
1 1/2 lbs. ground beef (Sometimes we put in 2 lbs.)
1/4 cup chopped onion
1 teaspoon salt
1/4 teaspoon pepper
1 quart of green beans, drained
1 can cheddar cheese soup
1-lb. package frozen tater tots
Cook the ground beef with the onion. Mix in salt, pepper, green beans, and cheddar cheese soup. Put in a 9x13 pan. Put tater tots on top. Bake at 350 degrees for 1 hour. Serves 6 to 8.
Condensed Soup Mix: (This makes 9 cans worth)
2 cups Instant nonfat dry milk powder
3/4 cup Cornstarch OR Arrowroot powder
1/4 cup Instant bouillon granules
2 Tablespoons Instant dry onion flakes
1/2 teaspoons Pepper
1/2 teaspoons Thyme (optional)
1/2 teaspoons Basil (optional)
Combine all ingredients and store in a airtight container.
To use as a substitute for one can condensed soup:
1/3 cup dry mix
1 1/4 cup water*
1 Tablespoon butter (optional)
1.stir the dry mix and liquid together in a saucepan.
2. Cook over medium heat, stirring continuously until thickened
3.Add butter if desired.
Celery or mushrooms could be added to make cream of celery or cream of mushroom soup.
*Use tomato juice to make condensed tomato soup.

Ingredients
4 cups Fresh Corn
1 Sweet Onion
1/2 cup Evaporated Milk
1/2 cup Coconut Milk
1/2 cup Heavy Whipping Cream
1 cup Asiago Shredded Cheese
2 tbsp Minced Garlic
2 tbsp All Purpose Flour
1/4 cup Sugar
1 tsp Black Pepper
1/2 tsp Himalayan Salt
1/2 tsp Garlic Powder
1/2 tsp Paprika
1/4 tsp Ground Cumin

Cheesy Corn Casserole Recipe | RadaCutlery.com
- Cheesy Corn Casserole - Three types of cheese combine to make this corn casserole a creamy cheesy delight! Use fresh sweet corn off the cob or frozen corn to create this go to dish for potlucks, BBQ's and family meals.
Ingredients:
4 slices bacon, finely chopped
6 tablespoons unsalted butter, cubed
4 cloves garlic, finely chopped
½ cup flour
3 cups milk
4 oz. cream cheese, cubed
2 ounces Velveeta, cubed
2 cups grated cheddar cheese
1 tsp paprika
3 lbs fresh or frozen corn kernels
Salt and black pepper to taste

Hi, Kristy in the Rada kitchen, today I'm making a Cheesy Corn Casserole. It has corn, of course, and bacon, and three types of cheeses, shredded cheddar, cream cheese, and Velveeta, which, as you know, is really hard to cut, so I wanted to share how well this Rada Cheese Knife works on really soft cheese.
This cheese knife was designed to cut soft cheeses and ahrd cheeses. It has these little holes that help reduce the drag. It has a little bit of serration. As you can see, it cuts right through Velveeta with no problem.
It has this little pointed end to help pick up pieces if you want to put them on a plate. But for this recipe we need 2 ounces of cubed cheese. Velveeta, anyway. So now we'll go to the stove and cook up our bacon. Now, in a large saucepan over medium heat, we're going to cook 4 slices of chopped bacon. We're going to cook that about 8 to 10 minutes.
Once your bacon crumbles have nicely browned, we're going to add 4 cloves of finely chopped garlic and 6 tablespoons of butter. Now we're going to add half a cup of flour. You want to stir that constantly for one minute. And to this we're going to whisk in 3 cups of milk. You want to constantly stir that so your milk doesn't curdle. And at medium to medium-high heat we're going to bring this mixture to a boil, you want to stir it constantly. So this has thickened, it has cooked for about 2 minutes, it's nice and thick, and now we're going t add 2 cups of shredded cheddar cheese, 4 ounces of cream cheese, and our 2 ounces of Velveeta cheese. You want to just stir that in until it's all melted, also to this I'm going to add a teaspoon of Paprika.
That's going to give it that nice color. So now the cheese has melted, it's a nice, creamy, smooth mixture. We're going to add the corn in. This is frozen. I think fresh would make it even better. So just keep mixing until it's all evenly coated. And now once you have all the corn mixed in, put it in a 9 x 13 pan. I am using the Rada Stoneware, so you don't have to preseason that. And you want to preheat oven to 375 degrees. And you'll put this in the even for about 40 minutes or until top is brown and bubbly. Then you'll want to let it sit for 15 minutes before you serve it for it to thicken a little bit.
Our Cheesy Corn Casserole is ready to serve, it's a delicious mixture of cheeses and bacon, the perfect side dish for potlucks and barbecues.

Corn on the cob
4 tbsps melted butter
1/4 cup mayo
1/4 cup sour cream
1 package Cotija cheese
tajin or chili powder
1/4 cup cilantro
2 limes
All-Purpose Seasoning
1 tsp garlic
1 tsp white sugar
Directions:
Preheat oven or Grill to 400 degrees. Clean corn and brush with oil or melted butter. Season with salt, pepper, garlic, onion powder. Grill or bake for 10-15 minutes or until tender. If using the oven, place corn under the broiler for a few minutes to get some char.
Mix together the mayo, sour cream, lime juice, sugar, garlic, and season to taste. In a separate bowl, break apart the Cotija cheese and add some lime zest. Brush mayo mixture onto the corn and then spoon on the cheese. Top with Tajin or Chili powder and serve.
