pre heat oven 375°
1 can yellow corn drained
1 can creamed corn
(you can use fresh corn, frozen, homemade creamed corn)
2 eggs
almost 1 cup evaporated milk, (or light cream, half n half or milk). 7 oz.
1 stick melted butter
1 1/4 c crushed saltines or butter Crackers.
1 Cup grated cheese
1/2 onion lightly grilled in pan w a touch of oil.
1/2 t salt
14 t pepper
1/2 t paprika ( I forgot it)
1 full t granulated sugar
one chpd onion
Beat 2 eggs in baking dish until frothy. Add milk. Mix with fork. Add can drained corn and can creamed corn. add onions
mix 1 cup Crackers with over half the butter,
pour into baking dish.
add 3/4 C grated cheddar cheese. with fork. add sugar, salt, pepper. Mix with fork .
add remaining melted butter to 1/4 C crushed saltines.
add remaining cheese.
mix w fork and Sprinkle over the top of corn mixture.
BAKE 375° for 30 minutes depending on your oven.
make up to 3 days in advance without topping until prior to cooking.
freezes well scooped into Gallon Zip Bag without topping.

exact recipe substituting canned diced drained tomatoes for the corn.
substitute brown sugar for white sugar.
NO CHEESE.
