How To make Corn Casserole Supreme
-JUDI M. PHELPS 17 oz Can cream-style corn
2 Eggs; beaten
1/2 c Soda crackes; crushed
1/4 c Margarine; melted
1/4 c Evaporated milk; undiluted
1/4 c Carrots; finely shredded
1 ts Onion; chopped
1/4 c Green pepper; chopped
1/4 c Celery; chopped
1 ts Tabasco sauce
1/2 ts Sugar
Salt 1/2 c Cheddar cheese; grated
Paprika Combine corn and all ingredients except cheese and paprika. Mix thoroughly and turn into greased 8 x 11-inch baking dish. Top with cheese. Sprinkle with paprika. Today I’m taking you Behind the Scenes of a Farm To Table Dinner event at Logan Family Farms in Irwin, PA. I was asked by Tom and Joann Logan to help prepare the meal for that evening which included 4 courses featuring their Dry Aged Beef and Berkshire Pork in addition to 2 desserts. I made my Loaded Smashed Potatoes, the Logan Family's Corn Casserole, and No-Churn Sweet Corn Ice Cream (featuring Logan Family Farms sweet corn!). Logan Family Farms Scalloped Corn Casserole
3 Tbsp. unsalted butter, plus more for buttering casserole dish
1 red bell pepper, diced
1 sweet onion, diced
2 Tbsp. all purpose flour
2/3 c. milk
2 c. fresh sweet corn kernels
1-15 oz. can creamed corn
6 slices white sandwich bread
1 stick unsalted butter, melted
Chopped cilantro for garnish
Preheat oven to 350*. In a large skillet, melt 3 Tbsp. of butter over medium heat and add the diced red bell pepper and onion. Sauté until the veggies start to soften. Sprinkle 2 Tbsp. flour over the peppers and onions and stir to coat. Pour in 2/3 c. milk and stir to combine. Cook, stirring until the sauce is thick and smooth (you can always add a little extra flour if your sauce is still runny). Add in the creamed corn and fresh corn kernels. Stir everything to combine. Butter the inside of a 9x13 in. glass baking dish. Pour the corn mixture into the baking dish. Cut the bread into ½ in. cubes and toss in the melted butter until they are evenly coated. Sprinkle the buttered bread cubes all over the surface of the corn casserole. Bake at 350* for about 45 minutes or until bubbling. (If the bread starts to get too brown, cover with foil and allow the casserole to finish baking.) Garnish with fresh cilantro, if desired. ENJOY!
