Jiffy Corn Pudding Casserole
1 Box of Jiffy Cornbread Mix
1 Can of Whole Kernal Corn (drained)
1 Can of Creamed Corn
1 Stick of Salted Butter (melted)
1 Cup of Sour Cream
2 Eggs (slightly beaten)
Place all ingredients in a large bowl. Gently stir making sure everything is mixed together. Don't over mix.
Pour into greased 8×8 casserole dish. Bake for 40-45 minutes in a 350 degree preheated oven.
Casserole is done when the center is slightly puffy and small cracks appear on the top. Allow casserole to cool and set a few minutes before serving.
For extra flavor you can add 1/2 cup of Cheddar Cheese, chopped jalapeños, green chilies, onion or green onion. The sky is the limit. Enjoy!
How to Make Creamy Corn Casserole
The recipe here is based on Paula Deen’s with a few added ingredients. I added jalapeno, green onions, salt, pepper, garlic powder, and extra cheese. I tried this recipe out with different types of cheese and the winner was cheddar jack.

1 (14.75) oz. can creamed corn
1 (15.25) oz. can whole corn, drained
1/4 cup canned or jarred diced fire roasted green chilies
2 cups sharp cheddar cheese or cheddar jack, grated
1 (8.5) oz. Box Jiffy corn muffin mix
1/4 tsp. each salt, ground black pepper, and garlic powder
1/4 cup green onion, thinly sliced, a little more for garnish
4 oz. unsalted butter, melted
1 cup sour cream

Corn Casserole for Two
Sweet Corn Casserole for Two! Using a counter top oven makes it energy efficient compared to using a full sized oven.
/ Ingredients:
3-4 Tablespoons butter (melting in dish)
1 Large Egg (beaten)
1-2 Tablespoons Sugar
Dash of salt
½ teaspoon Vanilla Extract
2-3 Tablespoons French Onion Dip or Sour Cream
½ cup Green Giant Steam Crisp Mexicorn (or Whole Kernel Corn) - drained
½ cup Cream Style Corn
1/3 cup Corn Meal Mix
Pour in hot dish and bake at 350 until golden brown (20-25 minutes).

Moist & Easy Jiffy Mix Corn Casserole Recipe ~ Thanksgiving Recipes
This is the easiest corn casserole you need on your dinner table this Thanksgiving and any time really! It is creamy, moist and delicious.
Ingredients Used
1 pk Jiffy Corn muffin mix
1 15oz whole kernel corn (drained)
1 15oz can cream style corn
1 cup sour cream
1 tsp vanilla extract
1 stick melted unsalted butter
2 eggs @ room temp
Mix all the ingredients and bake in a greased 9x13 pan for 40-45 minutes. Allow to cool and set for 15 minutes before serving. Enjoy.

Corn is probably my favorite vegetable, and as a Southerner, I'm lucky enough to have access to tons of it every summer. Of course you can't beat freshly picked corn on the cob but that really only is fabulous at the height of summer. The rest of the year we need to boost corn just a bit - and this confetti corn casserole recipe is one of the more delicious things that can happen to corn.
A simple mix of fresh veggies saute briefly before being added to lots of fresh corn, which is finished with a bit of cream cheese and corn's best friend - crispy bacon. The result is an easy corn casserole that is colorful, bright, vibrant and rich - all at the same time!
