How To Make Gluten Free Orange Muffins

We would like to show you one of our favorite muffin recipes which is gluten-free orange cranberry muffins minus the cranberry. LOL just one of our favorite cupcakes it’s very light and fluffy and taste really good with the zest of the orange in it.
Ingredients from the show:
2 pcs Eggs
1/4 cup Orange Juice
2 1/2 cups Blanched Almond Flour
1/2 cup Honey
1/2 cup Palm Shortening
1 tbsp Coconut Flour
2 tsp Pure Vanilla Extract
1 tsp Orange Zest
3/4 tsp Baking Soda
1/2 tsp Nutmeg
1/4 tsp Sea Salt
INSTRUCTIONS:
1. Preheat the oven to 350°F.
2. Place a heatproof dish filled with 2 cups of water on the very bottom rack and position another rack in the center of the oven.
3. Place all the ingredients, in a high speed blender or food processor in the order listed and blend for 30 seconds. Scrape down the sides, then blend again until very smooth
4. Grease a 12-cup muffin tin or line with paper cups. Spoon the butter into the cups, filling each 2/3 of the way full.
5. Place the muffins in the oven on the center rack and bake for 20 to 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Orange muffins with cranberries and pecans--perfectly sweet and zesty.
RECIPE
2 1/2 cups gluten-free oat flour
1/2 cup sugar
2 tsp. baking powder
1/2 tsp. salt
1 cup orange juice
1/3 cup olive oil
1 tsp. vanilla
1 cup dried cranberries
1/2 cup chopped pecans
Preheat oven to 350 degrees Fahrenheit. To a bowl, add oat flour, sugar, baking powder, and salt. Mix well. Add orange juice, oil, and vanilla. Mix well. Add dried cranberries, and pecans, and stir in. Scoop batter into a greased muffin pan. Bake about 25 minutes. Makes one dozen muffins.

Hey Guys! Please enjoy this amazing gluten-free, orange cranberry muffin recipe. These are delicious and made with wholesome ingredients I think you'll really love.
Here's what you'll need:
Preheat oven to 375 degrees, makes 10 muffins
1 bag fresh whole cranberries (1 cup chopped)
Eggs (2 whole, room temperature)
Butter (1/2 cup, softened)
Greek yogurt (nonfat, 1 cup)
Raw Sugar (2/3 cup)
Oat flour (1 cup)
Almond flour (fine, 1/2 cup)
Brown Rice flour (1/2 cup)
Baking powder (1 tsp)
Baking soda (3/4 tsp)
Kosher salt (1/2 tsp)
Vanilla (1 tsp)
Orange (1, zest and juice)
Chopped walnuts or pecans are optional, 1/2 cup
Instructions:
Chop cranberries into small pieces using a blender or food processor, set aside
In large mixing bowl, beat eggs, butter, yogurt and sugar until smooth. set aside. In another bowl mix together oat flour, rice flour, almond flour, salt, baking powder, baking soda. Add dry ingredients to wet half at a time. Mix until combined. Add zest from 1 orange. Rotate orange and avoid the white pith. Cut orange in half and juice entire orange into batter. Mix thoroughly. Add cranberries and stir in gently.
Lightly coat muffin pan with nonstick spray. Overfill muffin cups with batter, as they will not raise much. Sprinkle tops of each muffin with raw sugar.
Bake in preheated oven 25-30 minutes or until set and toothpick comes out mostly clean.
Cool slightly before removing. These muffins freeze very well.
