Ingredients
Shortbread Cookie
- 50g sugar (¼ cup)
- 5g orange zest (1 orange)
- 65g butter (¼ cup)
- 5g vanilla powder (1 tsp)
- 130g gluten-free flour (1 cup)
- 30g starch (3 tbsp)
- 2g salt (¼ tsp)
- 2g cinnamon ( ½ tsp)
- 20g orange juice (2 tbsp)
Chocolate Coating
- 150g dark chocolate (1 cup)
- 3g coconut oil (½ tsp)

???? Shortbread Sticks:
- Preheat oven to 350°F (170°C); line a baking sheet with parchment paper.
- Mix sugar and orange zest in a bowl.
- Add softened butter, vanilla extract, gluten-free flour, cornstarch, salt, and orange juice. Mix into a dough.
- Chill for 15 min, then roll out between baking paper. Slice into sticks and bake for 10 min until golden. Cool.
???? Chocolate Coating:
- Melt dark chocolate and coconut oil together.
- Dip cooled shortbread sticks into the chocolate, coating one end.
- Place on parchment paper to set.

Gluten Free Shortbread - Naughty Nat's Kitchen
In this episode of Naughty Nat's Kitchen, Natalie will be cooking Gluten Free Shortbread.
Recipe
250g Softened butter
1/3 cup castor sugar
1/4 cup rice flour or ground rice
2 1/2 cups gluten free plain flour
extra flour for dusting
Cream butter and sugar then add dry ingredients.
Do not over mix.
Turn out onto dusted bench and knead to bring mixture together.
Shape into a sausage shape and slice into 1cm rounds.
Place on a lined baking tray.
Bake in a preheated oven at 160c.
Until lightly golden.
Cool and remove from tray.
May also be rolled out and cut into shapes.

Ing:
2 sticks or 16 tbsp or 1 cup unsalted dairy free butter at room temperature
1/2 cup powder sugar
1/2 cup corn starch
1 tsp vanilla paste
pinch of salt
1.5 cups gluten free flour
Jam for the center
Preheat oven at 325 degrees F
Method:
In a bowl mix your butter with a wooden spoon and add the vanilla and salt mix well, next add the powdered sugar and cream the mixture until everything is combined. In a different bowl mix the gluten flour and cornstarch mixture together and add half of the mixture to the the cookie mixture and mix then add the other half and make sure all the ingredients are combined really well. Make desired cookie shape using whatever size ice cream scoop you like, with your finger make a hole in the middle making sure not to go through completely and fill with the jam, stick them in the oven for about 12 to 15 minutes or until the have a very light tan color on the bottom, you should be able to get about 16 depending on the size of ice cream scoop you use.
These are delicious with a cup of chai or a cup of cold milk!
