Directions: Brown the sausage. Combine all but zucchini in the crockpot and cook on low for 7-9 hours. Add zucchini and cook an additional 30 minutes. Serve with parmesan cheese.

Ingredients 1 pound Italian sausage (mild or spicy) casings removed 3 large carrots (peeled and diced) 1 medium onion (peeled and diced) 2 ribs celery (sliced) 1 red bell pepper (finely chopped) 2 teaspoons minced garlic 1 ½ teaspoons Italian seasoning 1 ½ teaspoons salt 7 cups low sodium chicken broth 1 ½ cups Ditali or another small pasta (dry) 1 cup fresh, chopped spinach freshly grated Parmesan to serve
Instructions In a large pot or dutch oven, add crumbled Italian sausage (remove casings if it has them), carrots, onion, celery and pepper. Cook and stir for 5 minutes or until sausage is browned and onions are translucent. Stir in Italian seasoning, garlic and salt and cook 1 minute. Add chicken broth, scraping the bottom of the pot well to remove any stuck on bits. Bring to a simmer, reduce heat to medium, cover and cook for 10 minutes or until vegetables are nearly tender. Stir in pasta and cook, stirring often, until pasta is cooked to desired doneness, about 10 minutes. Stir in fresh spinach. Sprinkle with Parmesan if desired and serve.

Ingredients: 5 Italian Sausage Links Half Onion (Sliced) Whole Green Bell Pepper (Sliced) Whole Red Bell Pepper (Sliced) White Sliced Mushrooms (8 oz.) Diced Tomatoes with Roasted Garlic (14.5 oz. Can) 1/2 Tsp. Oregano 1/2 Tsp. Basil 1 Tsp. Crushed Red Pepper Salt (To Your Liking)
Directions: Cut sausages into 1 inch pieces. Then place sausages and rest of ingredients into crockpot. Cook on high for 4 hours or Low for 7 hours. Enjoy!

There's nothing like a hot bowl of soup to warm you up on a cold winter day, and this Crockpot Zuppa Toscana is perfect for that. It's a creamy potato soup with Italian sausage and kale that is so hardy and delicious, you'll actually want to eat it year-round! I'm sure you've seen other Olive Garden Copycat recipes out there, but THIS one, in my opinion, is the very best. Read on for the full recipe.
Crockpot Zuppa Toscana
6 large potatoes, cut in bite-size cubes 1 lb. ground hot Italian sausage 1 bunch fresh kale, cut bite-size 1/2 white onion, chopped 3 cloves garlic, minced 32 oz. chicken broth 16 oz. heavy cream 1/2 cup grated parmesan cheese salt & pepper to taste
Cook sausage in a frying pan until brown. Add in chopped onion & garlic and continue frying until onion is translucent. Transfer sausage mixture into crockpot and set to Low. Add potatoes and chicken broth and continue to cook on Low for 5-6 hours. Pour in heavy cream, kale, and parmesan cheese and mix well. Season with salt and pepper, and allow to cook another 30 minutes, until kale is tender.
