Directions:
Brown hamburger. Drain well. Add all ingredients in crock pot. Cook on low 6-8 hours.

Vegetable Minestrone Recipe
1 yellow onion, finely diced
2 ribs celery, finely diced
2 large carrots, diced
1 small zucchini, diced
3 cloves garlic, minced
1 can cannellini beans, drained and rinsed
1 large can diced tomatoes
4-6 cups vegetable broth
1 tbsp Italian seasoning
salt and pepper
1 cup cooked quinoa
parmesan, freshly grated for serving (optional)
In a slow cooker combine onion, celery, carrot, zucchini, garlic, beans, diced tomatoes, broth, Italian seasoning, salt and pepper.
Stir well.
Cook on low for 6-8 hours.
Add cooked quinoa 20 minutes before serving.
Serve immediately with freshly grated parmesan.
Refrigerate for 4 days or freeze for up to 6 months.

6 cups chicken broth/stock, (48 oz)4 cups water, (32 oz)5 medium russet potatoes, peeled and chopped into 1/4 thick pieces1 kale bundle, leaves stripped and chopped (6 cups)
2 cups whipping cream
1 Tbsp Italian or garlic and herb seasoning Salt and black pepper to taste

CROCKPOT ZUPPA TOSCANA: Easy Recipe for the Most Delicious Italian Sausage, Potato & Kale Soup
There's nothing like a hot bowl of soup to warm you up on a cold winter day, and this Crockpot Zuppa Toscana is perfect for that. It's a creamy potato soup with Italian sausage and kale that is so hardy and delicious, you'll actually want to eat it year-round! I'm sure you've seen other Olive Garden Copycat recipes out there, but THIS one, in my opinion, is the very best. Read on for the full recipe.
Crockpot Zuppa Toscana
6 large potatoes, cut in bite-size cubes
1 lb. ground hot Italian sausage
1 bunch fresh kale, cut bite-size
1/2 white onion, chopped
3 cloves garlic, minced
32 oz. chicken broth
16 oz. heavy cream
1/2 cup grated parmesan cheese
salt & pepper to taste
Cook sausage in a frying pan until brown. Add in chopped onion & garlic and continue frying until onion is translucent. Transfer sausage mixture into crockpot and set to Low. Add potatoes and chicken broth and continue to cook on Low for 5-6 hours. Pour in heavy cream, kale, and parmesan cheese and mix well. Season with salt and pepper, and allow to cook another 30 minutes, until kale is tender.

This Easy Minestrone Soup is a healthy one-pot meal that's loaded with veggies, beans, and pasta. It's vegetarian, dairy-free, and can easily be made vegan or gluten-free. Make-ahead and freezer friendly!
Ingredients
1 tablespoon canola oil
1 small onion (finely diced)
2 ribs celery (sliced)
3 large carrots (peeled and finely chopped)
1 tablespoon tomato paste
1 tablespoon minced garlic (2 large cloves)
1½ teaspoons salt
1 teaspoon dried parsley
1 teaspoon dried oregano
1 teaspoon dried basil
¼ teaspoon black pepper
⅛ teaspoon crushed red pepper flakes
2 cups fresh spinach (roughly chopped)
4 cups low sodium chicken broth (or vegetable broth)
28 oz canned diced tomatoes (798 ml) no salt added
1 cup canned red kidney beans* (rinsed) 8 oz
1 cup canned white kidney beans* (rinsed) 8 oz
1 cups small uncooked pasta (I used medium shells)
Parmesan for serving
Instructions
In a large pot cook and stir the oil, carrots, celery and onion over medium-high heat until the onion has softened, about 3-4 minutes.
Add the salt, garlic, parsley, oregano, basil, and pepper and cook 1 minute.
Add the broth, tomatoes, and beans. Cover and simmer over medium heat for about 10 minutes or until carrots are crisp-tender.
Stir in pasta, cover and simmer for 10 minutes or until pasta reaches desired tenderness, stirring often.
Stir in spinach and serve with shredded Parmesan cheese as desired.
