Directions:
Brown hamburger. Drain well. Add all ingredients in crock pot. Cook on low 6-8 hours.

In this easy crock pot recipe, I used some beef stew meat and a bunch of vegetables to make a soup or stew. Using the Crock-Pot slow cooker is a good way to clean out your refrigerator and use your vegetables before they spoil. This easy recipe tasted a lot like Italian minestrone soup and I think it's pretty healthy.

Ingredients
6 oz bacon, chopped1 lb Italian Sausage, preferably spicy or hot1 medium head garlic, 6-8 large cloves, peeled and minced 1 medium onion, diced
6 cups chicken broth/stock, (48 oz)4 cups water, (32 oz)5 medium russet potatoes, peeled and chopped into 1/4 thick pieces1 kale bundle, leaves stripped and chopped (6 cups)
2 cups whipping cream
1 Tbsp Italian or garlic and herb seasoning Salt and black pepper to taste
Parmesan cheese to serve, optional

Vegetable Minestrone Recipe
1 yellow onion, finely diced
2 ribs celery, finely diced
2 large carrots, diced
1 small zucchini, diced
3 cloves garlic, minced
1 can cannellini beans, drained and rinsed
1 large can diced tomatoes
4-6 cups vegetable broth
1 tbsp Italian seasoning
salt and pepper
1 cup cooked quinoa
parmesan, freshly grated for serving (optional)
In a slow cooker combine onion, celery, carrot, zucchini, garlic, beans, diced tomatoes, broth, Italian seasoning, salt and pepper.
Stir well.
Cook on low for 6-8 hours.
Add cooked quinoa 20 minutes before serving.
Serve immediately with freshly grated parmesan.
Refrigerate for 4 days or freeze for up to 6 months.
Enjoy!
