Chicken and Sausage Jambalaya
Chicken and Sausage Jambalaya - Cajun Jambalaya is full of Andouille Sausage, Chicken, the Holy Trinity, and has all of the flavors of an authentic Louisiana recipe! This is a easy one-pot meal that everyone Loves. Enjoy!
Leftover Jambalaya will last for up to 4-5 days if stored in an airtight container in the refrigerator or up to 4-6 months in the freezer.
Chicken and Sausage Jambalaya Ingredients
Instructions
2 Tbsp. Olive Oil, divided
1.5 lbs. Chicken cut into 1 inch pieces
3 - 4 Andouille link sausage cut into ½-inch slices
2 cups Sweet Onion finely chopped
1 cup Celery finely chopped
1 cup Green Bell Pepper finely chopped
2 cloves Garlic crushed or 2 tbsp minced Garlic
4 tsp Creole Kick (creole seasoning)
1 Tbsp. Worcestershire sauce
6 oz. can Tomato Paste
15 oz. can Diced Tomatoes with juice
2 ½ cups Long Grain White Rice
4 ½ - 5 cups Chicken Broth
Fresh Parsley for garnish
If you don't have Creole Kick or a Creole seasoning use the following seasons
1 tsp. Thyme, dried
1 tsp. Basil, dried
¼ tsp. Cayenne Pepper
1 ½ tsp. salt
1 tsp. Pepper divided

Ingredients
1 lb chicken thighs, cubed
13 oz. Cajun andouille sausage (can sub Turkey sausage)
1 1/2 cups med-long grain rice
2 celery stalks, diced
1 green pepper, diced
1 yellow onion, diced
4 cloves minced garlic
1 Tbsp tomato paste
1/2cup crushed or diced tomatoes
28 oz. Chicken broth
1 Tbsp avocado oil
2 Tbsp all purpose seasoning
2 tsp garlic and herb seasoning
2 tsp Cajun seasoning
Green onions for garnish

Crockpot Chicken,Sausage, & Seafood Gumbo
Ingredients:
2 LBS Boneless Skinless Chicken Thighs
2 Cups Chicken Broth
12-24 Oz Sausage (Andouille)
2-3 LBS Medium Shrimp
1.5-2 LBS Crab Legs
3 stalks Celery (Diced)
1 Green Bell Pepper (Diced)
1 Med Onion Diced
Minced Garlic
28oz Canned Diced tomatoes
1 1/2 TBS Creole Season
3 Bay Leaves
1 TBS Gumbo File
Roux:
1/2 Cup Flour
1/2 Cup Oil or Bacon Grease
Directions:
Dice and sear sausage and add to your crockpot
In the same pan you seared the sausage over Med/Med Low Heat add Bacon Grease or Oil slowly mix in the flour whisking continuously to start the ROUX
Continue whisking NONSTOP and slowing mixing in your flour and the roux will start to darken and get thicker.
(Do not rush this process)
Once you get the needed texture add the following with you roux bell peppers, celery, and onions, and lastly minced garlic
Mix everything together and add it to your crockpot
Next add the chicken Broth and mix it all together followed by your Chicken thighs, creole Seasoning, diced tomatoes and bay leaves. Mix it all well.
Cover crockpot and cook on High for 2.5 hours
After 2.5 Hours if no seafood then add gumbo file mix well and enjoy!
For Seafood Gumbo:
add in your seafood shrimp and crabs and get them covered in the gumbo
Cover crockpot and cook additional 30 Minutes on High
After 30 Additional minutes add gumbo file mix well
Serve and Enjoy!

Ingredients (Serves 4 | Prep time: 10m | Cooking time: 60m | 260 calories & 3.1g fat p/serving):
- 10 Zesty chicken Heck sausages
- 1 Onion
- Oil (to fry)
- ½ Butternut squash
- 1 Can BBQ baked beans
- 1 Chicken stock cube
- 1 tbsp Paprika
- Seasoning
- Handful fresh coriander
Crockpot Gumbo Cook with Me (Chicken, Sausage and Shrimp)
This is an easy crock pot delicious gumbo adjust the ingredients to your liking
Ingredients
equal amount of flour and oil for the roux
Bag of raw shrimp
Chicken Breast or your desired pieces of chicken
Sausage your choice
bell pepper, onion, celery, garlic
okra
can of chicken broth
can of dice tomatoes
2 bouillion cubes chicken
1 tablespoon of creole seasoning
1 teaspoon of cajun seasoning
Crushed red pepper flakes (optional)
I tablespoon of gumbo file
Note: I season my chicken with onion powder, garlic powder and season all
Your choice of rice to serve gumbo over.
Directions:
After you prepare the roux, Assemble everything in crock pot along with the roux except the shrimp and gumbo file. Cook on high for four hours, add raw shrimp and gumbo file and cook an additional hour. Serve over cooked rice. While I cooked my ingredients slightly prior to adding to the crock pot, this step is not necessary any may be omitted.

My recipe is on the mild side, but if you like your gumbo spicy, feel free to increase the cayenne pepper! This easy Slow Cooker gumbo makes a great dinner recipe!
