ONE SKILLET CASSEROLE | ⭐ MUST TRY! ⭐ | TAMALE PIE | Cook Clean And Repeat
Tamale Pie
-1 Box Cornmuffin Mix (Like Jiffy)
-1 lb ground beef
-1 packet taco seasoning
-1 egg
-1/2 cup sour cream
-1/2 can creamed corn
-1/3 cup enchilada sauce
-1 onion, chopped
-2 cloves minced garlic
-2 tbsp olive oil
-2 cups good quality shredded cheese (Or shred your own!)
Directions: Preheat oven to 400 degrees. Spray oven safe skillet or pan with cooking spray. Mix corn muffin mix with egg, sour cream, and creamed corn. Pour into skillet and bake 20 minutes. Meanwhile, add olive oil to seperate pan and sautee onion until soft. Add garlic and cook 30 seconds. Add ground beef and cook until browned. Let cornbread cool. Poke with fork all around. Pour over enchilada sauce and spread. Pour ground beef mixture over cornbread. Add shreded cheese. Cover and bake 20 minutes. Uncover and broil the top until cheese is browned and bubble! Serve hot with taco toppings!

Today I am recreating another version of Tamale Pie but EASY! Some of you have asked for a recipe utilizing Jiffy cornbread mix. This cornbread casserole is cheesy, moist, and savory. This is not a pie or tamales, but it is a tasty cornbread casserole bake. This is gonna be good!

INGREDIENTS
2 boxes of Jiffy Cornbread mix
2 large eggs
1/2 cup sour cream
1/2 cup green chiles (optional)
1/2 to 2/3 cup whole milk
1 lb lean ground turkey or beef
1 oz envelope of taco seasoning
1/2 tsp smoked paprika
1/2 tsp granulated garlic powder
1/2 tsp granulated onion powder
8 oz Colby Jack cheese (shredded)
9x13 baking dish
2 Tbsp softened butter for baking dish
• bake uncovered at 375°F for 35 minutes or until cooked

Tamale Pie
Ingredients
1 pound lean ground beef
1 onion chopped
1 can diced green chilis
1 can rotel tomatoes
2 cloves garlic minced
2 tablespoons taco seasoning
¼ cup water
¾ cup enchilada sauce
2 cups cheddar cheese shredded, divided
Topping
1 box corn muffin mix 8.5 oz
½ cup sour cream
½ cup corn kernels canned, fresh, or frozen
⅓ cup milk
1 egg
green onions and tomatoes diced for garnish
Instructions
Preheat oven to 350ºF.
Combine beef, onion, green chilies, rotel tomatoes , and garlic in a cast iron skillet.
Cook until no pink remains. Drain any fat.
Add taco seasoning and ¼ cup water.
Simmer until water evaporates.
Stir in enchilada sauce.
Put meat mixture in a 9 X 13 dish
Top with ½ cup of cheese.
Combine corn muffin mix, sour cream, corn, milk ,and egg.
Spread over the beef mixture.
Top with remaining cheese and bake 30-40 minutes.
Garnish with green onions and tomatoes and serve.

TAMALE PIE MADE WITH MASA HARINA: Delicious, More Authentic Recipe w/Ground Beef, Corn & HATCH CHILE
Let's face it, there's no substitute for tamales, but this Tamale Pie made with Masa Harina is at least closer to the flavor profile of tamales because it's not made with corn bread. It's really delicious! Masa Harina is a corn masa flour. I typically buy Maseca brand, in case you're looking for it in the grocery store and aren't sure you've got the right thing. Read on for the recipe.
Tamale Pie
1 lb. lean ground beef
1/2 chopped white or yellow onion
2 minced garlic cloves
1 15oz. can corn, drained
1 can crushed tomatoes
1/2 cup chopped Hatch green chile
1 Tbsp. red chile powder
1 Tbsp. cumin
salt to taste (I use about 1 tsp.)
approx. 1 cup grated cheddar cheese
For the dough topping:
2 cups masa harina (I use Maseca brand)
1 tsp. baking powder
1 tsp. salt
1/2 cup melted fat (I use butter. You can also use lard or vegetable oil.)
1 1/2 cups warm chicken broth
In large skillet over medium high heat, brown ground beef. Add in chopped onion and fry until translucent. Add in all other ingredients: minced garlic, crushed tomatoes, corn, green chile. Season with chile powder, cumin and salt. Continue cooking approx. 5-10 minutes. Once fully cooked, take off burner and set aside.
Meantime, make dough by mixing together the dry ingredients: masa harina, baking powder and salt. Add in melted fat and mix until crumbly. Add chicken broth a little at a time until fully absorbed into dough. If it's too dry, add more chicken broth. It should be spreadable.
Grease a 9x13 baking dish with butter or non-stick cooking spray, then add meat mixture and spread evenly across the bottom of baking dish. Sprinkle shredded cheese on top. Spoon dough on top and carefully spread across the top of dish. (This will take a little time. If dough is not spreading, wetting your spatula with water may help.) Sprinkle additional cheese on top and bake at 350º for 30 minutes until golden brown.
