Tamale Pie: What did WW2 Food Ration Stamps Look Like?
I hope you enjoy this special trip back in food history!! WW2 brought food rations to America and American housewives needed recipes to accommodate the scarcity. Never fear, warm, hearty dishes such as this were created to feed the nation. This Tamale Pie is classic war ration cooking and is just YUM!

Tamale Pie
3/4 Cup Corn Meal
1/2 TSP Salt
1 1/3 Cup Water
1) 12 OZ Can Evaporated Milk
1/2 Cup Onions, Chopped Fine
2 TBS Butter
3/4 LB Ground Beef
1 Cup Canned Chopped Tomatoes
3/4 TSP Salt
1/8 TSP Pepper
1 TSP Chili Powder
Set oven to 375. In a saucepan, bring to boil corn meal, water, salt and evaporated milk. Bring to boil, cover and let sit while you make the beef filling. In a saucepan, cook onions and butter util onions are transparent. Add ground beef and cook until browned. Add tomatoes, salt/pepper and chili powder. Cook for about 5 minutes. In a 9 inch baking pan spread half of the corn meal across he bottom, pour in the meat mixture and spread the other half on top. Bake 45 minutes and serve. A salad is a nice accompaniment! Enjoy war ration cooking!!

Betty's Sirloin Steak Tamale Pie
Betty demonstrates how to make Sirloin Steak Tamale Pie. This is a casserole that has a chili base, a middle layer of sharp Cheddar cheese, and a topping of crunchy cornbread. It is great for chilly days!
Sirloin Steak Tamale Pie
Chili Base:
1 teaspoon to 1 tablespoon olive oil
1 small onion, chopped
1 small green bell pepper, chopped
1 jalapeno pepper, minced
3 cloves garlic, minced
1 to 1.5 pounds sirloin steak, seasoned with salt, cooked, and cubed or shredded (You may substitute 1 to 1.5 pounds of ground beef, salted and browned.)
14.5-ounce can diced tomatoes, undrained
(2) 15.5-ounce cans pinto beans, undrained
3 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano
2 tablespoons brown sugar
Cheese layer:
1 ½ cups grated Cheddar cheese
Cornbread layer:
1 cup yellow cornmeal
2/3 cup all-purpose flour
1 tablespoon sugar
pinch of salt
1 teaspoon baking soda
2/3 cup milk
2 eggs
3 tablespoons melted butter
1 cup frozen kernel corn
cooking oil spray
For the chili base, heat olive oil in deep skillet. Add onion, green pepper, jalapeno pepper, and garlic. Saute over low to medium heat until softened, about 5 minutes. Add cooked sirloin steak (or ground beef) and heat through. Add tomatoes, pinto beans, chili powder, cumin, oregano, and brown sugar. Simmer for 20 minutes. Taste for salt, and add salt, if needed. For the cornbread topping, combine yellow cornmeal, flour, sugar, salt, baking soda, milk, eggs, melted butter, and kernel corn in a large bowl. Stir until smooth. To assemble Tamale Pie, pour the chili mixture into the bottom of a 13-inch by 9-inch by 2-inch baking dish that has been sprayed with cooking oil spray. Sprinkle shredded Cheddar cheese evenly over top of chili. Spoon cornbread batter over the top and smooth toward all edges. Bake at 375 degrees (F) until brown and bubbly, about 15 to 20 minutes. Serve while hot. Enjoy! --Betty :)

Taco Squares Casserole
This taco squares casserole dish is like a Southwestern version of lasagna. Layers of beef, tortillas, and cheese come together to form cheesy goodness. Plus, it's a pretty quick meal to put together, which makes it perfect for a weeknight meal!

INGREDIENTS
- 2 lb beef
- 1 yellow onion
- 1 1/2 tsp salt
- 1 tbsp chili powder
- 1 tsp cumin
- 1/2 tsp oregano
- 3/4 tsp garlic powder
- 1 28-oz can diced tomatoes
- 1 tbsp flour
- 12 corn tortillas
- 2 cups shredded cheddar cheese
INSTRUCTIONS
- Preheat oven to 350°F. Grease a 9×13 baking dish and set aside.
- Add the ground beef to a 12-inch skillet over medium heat. Break into small pieces, then add the onion and salt. Cook until the meat is browned and the onion is soft, 8-10 minutes.
- Once the meat is cooked, with the skillet still over medium heat add the chili powder, cumin, garlic powder, and oregano. Stir and cook for 1 minute and add the tomatoes. Bring to a simmer and cook for 5 minutes on low. After 5 minutes, sprinkle in the flour and cook for 1 minute. Remove from the heat and set aside.
- If a gas stove is available, char the tortillas. Turn a burner on low and set a tortilla on for 30 seconds until slightly blackened. Then flip, repeat, and then remove from the flame. Charing is simply an optional step. If not available, move on to the assembly.
- In the prepared baking dish, add 1/2 cup of the meat mixture and spread it over the dish. Add 6 tortilla shells, slightly overlapping and covering the bottom of the baking dish. Add half of the meat mixture and spread evenly. Then sprinkle with half of the shredded cheese. Repeat one time with the remaining tortilla shells, meat mixture, and cheese. At this point, the casserole can be covered with plastic wrap and stored in the refrigerator for one day before baking.
- Bake in the preheated oven until warmed through, 30-40 minutes. Once baked, remove from the oven, cut into squares, and serve with favorite taco toppings!

Tamale Pie
MeatFilling
1 pound ground beef
1 medium onion, diced
1 green bell pepper, diced
3 cloves of garlic minced
1 jalapeno pepper, diced
1 1/2 cups of whole kernel corn
14.5 ounce can of diced tomatoes, undrained
3 tablespoons tomato paste
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon salt
1 teaspoon onion powder
4 ounces monterey jack cheese, shredded
Corn bread topping
1 cup cornmeal
3/4 cup all purpose flour
1 tablespoon sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup milk
1 cup cream style corn
1/2 cup sour cream
6 tablespoon melted butter
1 egg
Preheat oven to 400.
In one tablespoon of oil, cook the vegetables for about 5 minutes. Set veggies aside and using the same skillet, brown the ground beef. After beef is thoroughly cooked, stir in the veggies, corn, tomatoes, tomato paste, seasoning. Let simmer for about 6 minutes.
In a large mixing bowl, stir together all ingredients for cornbread topping.
In a 9x13 baking dish put the ground beef. Next add the shredded cheese. Pour the cornbread mix over the top. Bake at 400 for 20 minutes or until golden brown on top. Let stand 15 minutes before serving. Enjoy :)
