How To make Corn Tamale Pie
1 cup Yellow cornmeal
1/3 cup Sugar
1 tablespoon Baking powder
1/2 teaspoon Salt
16 ounces Fat-free cottage cheese
16 ounces Frozen petite corn kernels -
2 cups Canned shoepeg corn
drained
3 Green onions :
chopped
4 Egg whites -- at room temperat
2 cans Mexican-style stewed tomatoe
0:20 Preheat the oven to 350 degrees. Spray an 8" square glass baking dish with vegetable oil cooking spray. In a large bowl, combine the cornmeal, sugar, baking powder, and salt. Whisk to blend. Mix in the cottage cheese, then the corn and green onions. In a separate bowl, beat the egg whites until stiff but not dry. Fold the whites into the cornmeal mixture in 2 additions. Transfer the batter to the prepared dish. Bake until the top is golden and feels firm in the center, about 50 minutes. Let stand 10 minutes. While the tamale pie is baking, make a tomato sauce: Boil the stewed tomatoes uncovered in a heavy saucepan until reduced to sauce consistency, about 10 minutes. Cut the tamale pie into squares and leave in the baking dish. Spoon tomato sauce over and serve. Per 1/6 recipe: 295 calories, 1.4 grams fat. Original recipe was for 4 servings.

INGREDIENTS
1 lb lean ground meat of choice
1/2 tsp granulated garlic powder
1/2 tsp granulated onion powder
1/2 tsp salt
pepper to taste
8 oz Colby Jack cheese
8.5 oz box of Jiffy Cornbread Mix
1 large egg
1/3 cup milk
1 cup cheese
3 oz can green chiles
ENCHILADA RED SAUCE
3 Tbsp cooking oil
1/4 cup all-purpose flour
2 Tbsp light chili powder
1/2 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp onion powder
1 Tbsp beef or chicken bouillon powder 2 cups water
salt and pepper to taste
Bake in an 8 x 12 buttered baking dish at 400° F for 25 to 30 minutes

This Tamale Pie recipe with a cornbread crust is something even the novice cook can make. It is a recipe that tastes far better than the amount of skill needed to make.I highly recommend this Tamale Pie Recipe.
Ingredients for Tamale Pie:
1 Box cornbread or muffin mix
1 pound ground beef (or any other ground meat)
2 medium size eggs or 1 large
1/4 Cup Sour cream
14.75 Ounce can of Creamed Corn
1/3 Cup Enchilada Sauce
1 Chopped Onion
5 Jalapeno Peppers sliced (Optional)
1 Tsp Chili Powder
2 Cloves Garlic Minced (I did not use)
1 Tsp Cumin
2 Cup Shredded Cheese of your choice
Salt and pepper to taste
Chopped cilantro as garnish (optional)
Tamale Pie Directions:
Preheat oven to 400 degrees F
Mix muffin mix, sour cream and egg
Pour into a cast iron pan or oven safe skillet
Bake for 20 minutes and let cool
then
Saute onions until soft then add garlic and cook for about 30 more seconds
Add the ground beef and stir until fully cooked and broken up.
Drain off excess fat and season to taste
then
Once cornbread has cooled a bit, poke holes in it and pour enchilada sauce over it. Add the meat mixture and top with shredded cheese. Bake until cheese is melted. About 20 minutes
Garnish with cilantro

TAMALE PIE MADE WITH MASA HARINA: Delicious, More Authentic Recipe w/Ground Beef, Corn & HATCH CHILE
Let's face it, there's no substitute for tamales, but this Tamale Pie made with Masa Harina is at least closer to the flavor profile of tamales because it's not made with corn bread. It's really delicious! Masa Harina is a corn masa flour. I typically buy Maseca brand, in case you're looking for it in the grocery store and aren't sure you've got the right thing. Read on for the recipe.
Tamale Pie
1 lb. lean ground beef
1/2 chopped white or yellow onion
2 minced garlic cloves
1 15oz. can corn, drained
1 can crushed tomatoes
1/2 cup chopped Hatch green chile
1 Tbsp. red chile powder
1 Tbsp. cumin
salt to taste (I use about 1 tsp.)
approx. 1 cup grated cheddar cheese
For the dough topping:
2 cups masa harina (I use Maseca brand)
1 tsp. baking powder
1 tsp. salt
1/2 cup melted fat (I use butter. You can also use lard or vegetable oil.)
1 1/2 cups warm chicken broth
In large skillet over medium high heat, brown ground beef. Add in chopped onion and fry until translucent. Add in all other ingredients: minced garlic, crushed tomatoes, corn, green chile. Season with chile powder, cumin and salt. Continue cooking approx. 5-10 minutes. Once fully cooked, take off burner and set aside.
Meantime, make dough by mixing together the dry ingredients: masa harina, baking powder and salt. Add in melted fat and mix until crumbly. Add chicken broth a little at a time until fully absorbed into dough. If it's too dry, add more chicken broth. It should be spreadable.
Grease a 9x13 baking dish with butter or non-stick cooking spray, then add meat mixture and spread evenly across the bottom of baking dish. Sprinkle shredded cheese on top. Spoon dough on top and carefully spread across the top of dish. (This will take a little time. If dough is not spreading, wetting your spatula with water may help.) Sprinkle additional cheese on top and bake at 350º for 30 minutes until golden brown.

Tex Mex Tamale Pie with Jiffy ~ Easy One Pot Tamale Pie Recipe
INGREDIENTS:
1 TO 1 1/2 pounds ground beef
1/4 cup salsa
1 small can red enchilada sauce
1 cup finely diced onion
1 cup finely diced bell pepper
1 small can green chilies
1/8 tsp. black pepper
3-4 cloves minced garlic
1 tsp. oregano
1 tsp. chili powder
1 tsp. smoked paprika
1 tsp. cumin
1 cup corn
1 cup grated cheese - cheddar or mix
chopped green onions
Topping:
1 box cornmuffin mix
1 egg
1/3 cup milk
1/4 cup corn
small seeded finely diced jalapeno
1/4 cup grated cheddar cheese
*Mix above ingredients. Do not over mix
Preheat oven to 400 degrees Farenheit
In a pan on medium heat add ground beef and spread out.
While beef is still pink add salsa and enchilada sauce.
Cook, chop and stir until beef is broken up. Bring up to a simmer.
Add diced onions, bell peppers and green chilies. Stir to combine.
Add seasonings. Stir and cook for 5-10 minutes or until the liquid
reduces.
Add corn and stir to combine. Remove from heat.
Add a little grated cheese on top of beef mixture.
Add corn muffin mix by spoonfuls on top of mixture and spread out
as best as you can.
Bake at 400 degrees farenheit for 25 to 30 minutes.
Remove from oven and top with more grated cheese and chopped onions.
Let cool for 10-15 minutes before serving.
Enjoy.
