How To make Cinnamon Apple Apricot Cake For Passover

CAKE FOR PASSOVER :
APPLE LAYER-------------------------------- 5 lg Apples ; sliced thin
1/4 c Sugar
1 ts Cinnamon
6 Dried Apricot halves ;
-;coarsely minced CAKE:
3 Eggs ;separated
3/4 c Sugar
2 ts Vanilla
2 ts Lemon zest ;grated fine
3/4 c Matzoh Cake Meal
1/3 c Oil
pn Salt TOPPING:
1/3 c Walnuts ;finely chopped
1/2 Sugar
2 ts Cinnamon
1. Toss apples with sugar and cinnamon. Set apples and
apricots aside. 2. Om bowl, combine egg yolks, sugar, vanilla, lemon
zest, matzoh meal and oil. Blend until smooth. In a separate bowl, whip the egg whites with pinch of salt until stiff and glossy. Loosen batter with generous dollop of egg whites, then fold remaining egg whites into batter. 3. Spoon half of abatter into greased 9 inch
springform pan. Arrange apples on top. Dot with minced apricot and cover with remaining batter. Batter will be thick and sticky; don't worry about spreading it evenly. 4. Combine topping ingredients and sprinkle over cake
batter. Bake 50 to 55 minutes at 350 degrees. Makes 8 to 10 portions.

Being a working mamma I know how difficult it is to manage my time to get everything done for Shabbat. This video is a look into a typical Thursday and Friday in my house while getting ready for Shabbat.

**Bahsh (green rice):
2 cups rice
3 bunches cilantro
1 cup cubed meat or chicken of choice
1 diced onion
1/2 c oil
1/2 c water
1tbsn salt
1 tbsp chicken consome
Pepper
Cumin and coriander
Bake covered at 400F for 1 and 1/2 hours mixing half way through
**Roast Chicken
6 Chicken thighs
chicken seasoning
salt
soy sauce
apricot sauce
Bake covered at 400F for 45 minutes then uncover for additional 45 minutes
Top with garlic and dill before serving.
**Osvo-lamb and rice overnight stew:
Grate:
1 carrot, 1 apple, 1 onion, and 3 tomatoes.
Add 1/4 cup of oil to pot and above ingredients. Add 2 cups rice, lamb bones and 4-5 cups of water. Season with 1 tbsp of salt and 1 tbsp chicken consome. Cook for 12 hours on low flame.
** Roasted Vegetables
carrots
potatoes
onions
peppers
s/p
cumin
coriander
oregano
cilantro
oil
Arrange in a single layer. Cook at 450F for 20 minutes then flip to the other side.
Top with garlic and dill.
**Banana Muffins:
2/3 cups oil
1 Cup brown sugar
4 Eggs
6 medium bananas
3 cups of flour
1/3 Tsp baking soda
Cinnamon
1 Cup chocolate chips
Bake at 350F for 20-30 minutes
**Tuna Salad:
1 can of tuna
2 sticks of celery chopped
2 hard boiled eggs chopped
1 heaping tbsp Mayo
S/p
**Purple and white Cabbage Salad:
Slice cabbage thinly
Julienne 1 carrot
s/p
sugar
oil
lemon juice
