Recipe: Cinnamon Sugar Donuts

Cinnamon Sugar Donuts Recipe:
Cinnamon-Sugar Donuts
Prep time: 20 min.
Total time 2 1/2 hr.
Serves: 12
Yield: 12 doughnuts + 12 holes
1/3 cup (75 mL) water
1/2 cup (125 mL) sugar, divided
1 pkg (11 mL/8 g) active dry yeast
3 1/2 cups (875 mL) all-purpose flour, plus more for board
1 1/2 tsp (7 mL) salt
1/3 cup (75 mL) milk, warmed to 105°F
3 eggs
1/3 cup (75 mL) unsalted butter, melted
Cinnamon Sugar:
1 cup (250 mL) sugar
1 1/2 tsp (7 mL) ground cinnamon
Directions:
1. In small bowl, stir water with 1 tsp (5 mL) of the sugar and yeast. Let sit for 5 to 10 min., or until foamy. In large bowl, whisk together the flour and salt. Set aside both bowls.
2. In another large bowl, whisk milk, eggs and melted butter. Then stir in the rest of the 1/2 cup (125 mL) sugar and yeast mixture. Gradually stir in flour mixture to make a soft dough. Turn out onto a lightly floured surface and knead 8 to 10 min., adding more flour as needed, until dough is smooth and elastic and no longer sticky.
3. Place dough in large greased bowl, turning dough over to grease all sides. Cover and set in warm, draft-free place for 1 to 1 1/2 hr., or until doubled in volume.
4. Punch down dough. On floured surface, roll dough out to 1/2-in. (1-cm) thickness. Using a 3-in. (8-cm) round cutter, cut out 12 rounds. Gather scraps and re-roll dough one time only for additional cuts. Use a 1-in. round cutter (2.5-cm) to cut out holes.
5. Transfer doughnuts and holes to floured baking sheet. Cover and let rise 1 hr., or until doubled in size.
6. In deep fryer, wok or deep saucepan, heat 2 in. (5 cm) oil until fryer thermometer reads 350°F (180°C). Fry 3 doughnuts (or 6 holes) at a time, turning once, until golden and puffed, about 4 min. With slotted spoon, transfer to paper towel-lined tray or board. In large bowl, mix sugar with cinnamon. While still warm, roll donuts and holes in cinnamon-sugar to coat. Add additional sugar and cinnamon, as needed.

Deep fried cinnamon flavoured donuts stuffed with chocolate mixture.
CINNAMON DONUTS
Ingredients
½ teaspoon cinnamon powder
2½ cups refined flour + for dusting
1 cup milk
3 tablespoons castor sugar
1½ tablespoons fresh yeast
50 grams butter
Pinch of salt
2 eggs
Oil for deep-frying
Chocolate filling
150 grams dark chocolate
90 ml fresh cream
1 tablespoon butter
Method
1. Place parchment paper on a baking tray.
2. Heat milk in a non-stick pan. Add 2 tablespoons castor sugar, mix and cook for a minute.
3. Take yeast in a bowl. Add half the sweetened milk, whisk well and set aside.
4. To the remaining sweetened milk, add 50 grams butter and mix well till it melts.
5. Sieve refined flour in a bowl. Add salt, egg yolks, ¼ teaspoon cinnamon powder and yeast mixture and whisk well.
6. Add milk-butter mixture and mix well to make a soft elastic mixture.
7. Dust worktop with some flour, place the prepared mixture on it and knead gently.
8. Dust another bowl with some flour and put the dough in it. Cover with a cling film and set aside in a warm place for 30 minutes.
9. To prepare chocolate filling, chop chocolate into small pieces and place in a bowl. Add cream and butter and heat in a microwave for a minute. Remove from heat, stir well and refrigerate for 30 minutes.
10. Dust some refined flour on worktop, transfer the dough on it and knead. Roll the dough into half inch thick disc.
11. Use a medium size cookie cutter to cut out roundels from the dough. These are donuts. Put the donuts on the parchment paper and set aside for 15 minutes.
12. Heat sufficient oil in a pan. Deep-fry donuts till golden from both sides. Drain on absorbent paper.
13. Combine remaining castor sugar and remaining cinnamon powder in a bowl and mix well.
14. Coat the donuts with the prepared sugar-cinnamon mixture.
15. Pour the chocolate filling in a piping bag fitted with a nozzle. Pipe in the filling into each donut.
16. Serve.
Preparation Time: 60-70 minutes
Cooking Time: 15-20 minutes

After making the pretzel bites I wanted to see how something bigger would turn out! So behold ????
These are kind of half doughnut-half pretzel, slightly chewier than a doughnut, but without the crust of a pretzel ???? and absolutely delicious!!

All you need is:
Dough:
180g Greek yoghurt
150g self raising flour
Egg wash (whisk together with a fork):
1 egg
1 tbsp water
20g melted butter
Cinnamon sugar:
70g granulated sugar
1 tsp cinnamon
Bake 160C 10-15 mins until light brown on top. The longer you cook them for, the chewier/more pretzel like they will be ????
