Cinnamon Rolls (Buns) Recipe
Prepare: a square pan 23cm (9 inch) lined with baking paper
PREHEAT the oven for at least 20 minutes at 170C before baking, set the oven rack in the lower third of the oven
The dough:
300g bread flour (or all purpose flour) - 2 1/3 cup
160g milk - 2/3 cup
1 egg (medium size, 55g)
30g sugar (2 tbsp)
1 tsp (4g) instant dry yeast
1/2 tsp salt
40g unsalted butter (room temp)
The filling:
80g brown sugar - 1/3 cup
1 tbsp ground cinnamon
a pinch of salt
Cream cheese frosting:
150g cream cheese (3/4 cup)
30g powdered sugar (3 tbsp)
2 - 3tbsp milk
1/2 tsp vanilla extract

Cinnamon Pie Recipe ???????????? | Thanksgiving Pie Series ????
My cinnamon pie recipe is great! Based on the pie from the TV show Psych, this cinnamon pie is easy to make and delicious to eat. Similar to pumpkin pie in both taste and texture, this is the perfect Thanksgiving dessert if you are looking for something different yet still familiar.
Although there are many cinnamon pie recipes on the Internet, I wanted to make my own. All of the other recipes used heavy whipping cream or half and half, adding a lot of calories. I usually prefer to use evaporated milk in custard style pies when possible, so I set out to create my own version. The first attempt was good, but not what I had in mind, and the second was a total failure...but the third pie was perfect.
This pie recipe is very simple since all you have to do is mix together a few ingredients for the filling and then pour them into an unbaked pie shell. The most important thing you need to remember is that the cream cheese and evaporated milk must be at the same temperature. If one is colder or warmer than the other, you run the risk of curdling the cream cheese when you mix the two together.
You also need to decide how much cinnamon to add to the pie. Similar recipes on the Internet call for up to 3, sometimes 4, tablespoons of cinnamon, but I think that is a bit too much. It depends on how much you like cinnamon, but I recommend adding 1 to 2 tablespoons of ground cinnamon. If you have never made this cinnamon pie recipe, I suggest starting with 1, maybe 1.5 tablespoons, then taste the filling. If you think it needs a bit more, add more cinnamon in 1/2 teaspoon increments, tasting the filling as you go along. Remember: you can always add more later, but it's very hard to take away.

Ingredients:
1 9-inch pie shell, unbaked
1 8 oz block cream cheese, softened
1/2 cup evaporated milk (120g), room temperature
3/4 cup sugar (160g)
2 large eggs
1 to 2 tablespoons cinnamon (I used 2 tablespoons)
1 teaspoon vanilla
1/8 teaspoon salt
Directions:
1. Combined cream cheese, sugar, cinnamon, vanilla, and salt in a large mixing bowl, then mix
2. Add evaporated milk slowly, about 2 tablespoons at a time. Mix after each addition.
3. Add eggs
4. Taste filling, then add more cinnamon if necessary (if you do not want to taste filling with raw eggs, taste it before adding the eggs).
5. Bake, uncovered, at 350 F for 45 minutes
Notes:
1. Make sure that cream cheese and evaporated milk are the same temperature to avoid curdling.
2. You may want to start out with less cinnamon, taste the filling, then add more.
