Chocolate Cake/Donuts with Chocolate Frosting & Chocolate Glaze
I like this chocolate cake recipe. I can use this recipe to make a two-layer cake, donuts, and cupcakes.
Ingredients:
3 cups all-purpose flour
3/4 cup cocoa powder
1 ts. baking soda
1 ts. baking powder
1/2 ts. salt
1+1/2 cups melted butter
1+3/4 cup sugar (for the cake batter)
1/2 cup sugar (for cocoa)
4 large eggs
1 ts. vanilla extract
1 cup buttermilk or milk
3/4 cup boiling black coffee (for cocoa)
Method:
1. In a bowl, sift the cocoa powder and 1/2 cup sugar together. Then add boiling coffee, stir until smooth and sugar dissolves. Set aside.
2. In a mixer bowl, with a paddle attachment, mix melted butter and 1+3/4 cups sugar until frothy for about 2-3 minutes.
3. Add eggs and vanilla, mix well, then add the cocoa mixture, well until blended.
4. In a separate bowl, sift all of the dry together. Then alternately add the flour mixture and buttermilk to the batter in 3 additions. Mix and scrape the bowl as needed.
5. Pour the cake batter into two 8 round cake pans lined with parchment paper or floured-greased equally and bakes 350 deg. F for 30-40 minutes. Check the cake at 30 minutes of baking time. If a toothpick insert comes out clean, it's done.
6. Let the cake stand for 10 minutes before inverting the cake to a wire rack to cool completely.
7. If making donuts, pour the cake batter into a 6-donuts pan greased with a baking spray about 2/3 in each mold. Bake 350 deg. 18-20 minutes. This baking time is also the same as for making cupcakes.
8. Decorate the cake with chocolate glaze or chocolate buttercream as desired.
Chocolate Glaze
This graze is really good for pouring on a cake and dip on donuts etc. It needs to use while it is still warm but not hot. For the donuts, see the recipe in the album Chocolate Cake/Cupcakes/Donuts.
Ingredients:
1/2 cup water
3/4 cup sugar
1/2 ts. gelatin or agar powder
3/4 cup milk
1/4 cup cocoa powder, sifted (good quality)
2 ts. cornstarch, optional
2 tb. water or milk for cornstarch, optional
2 tb. butter
1/2 ts. vanilla extract, optional
Method:
1. In a saucepot, combine water, milk, sugar, gelatin, and cocoa powder together. Bring the mixture to a boil, over medium heat. Stir constantly.
2. Mix 2 ts. cornstarch and 2 tb. water together and add it to the hot mixture. Stir until the mixture comes to a soft boil then remove from the heat.
3. Add vanilla and butter, stir until melted. Let stand for 10 minutes before pouring on the cake or dip on donuts.
Note: The glaze should be used while it is still warm in order to stick to the cake or donuts and give a smooth and shiny surface.

This Coffee Cake comes out moist and light.
1 1/2 stick butter room temperature, 2 cups scant granulated sugar, 3 cups sifted all-purpose flour, 4 teaspoons baking powder, 1 teaspoon salt. 1 1/4 cups milk. 3 egg whites beaten till they form peaks. Topping: 1 1/2 stick cold butter cut up into pieces, 3/4 cup all-purpose flour, 1 1/2 cups brown sugar, 2 Tablespoons cinnamon, 1 1/2 cups chopped nuts your choice optional. Directions: Cream butter and sugar together, Add all dry ingredients slowly and add milk. Don't over mix once batter is mixed fold in egg whites. Pour into well greased 13x9 of larger pan . Cut in butter, brown sugar, flour, cinnamon, into bowl till crumbly. Add nuts optional Sprinkle all topping mixture over coffee cake. Bake at 350 for 45- 50 minutes Note you can make a powder sugar and milk glaze for the top is you desire. (Optional)
Espresso Glazed Chocolate Brownies
I made a new dessert for my Valentine❤️ We both love chocolate, especially dark chocolate and I found a recipe in one of my cookbooks that I hadn’t made before. This recipe is slightly adapted from the Best of WW Cookbook. I loved the dark cocoa and the dark chocolate morsels that I used in this recipe. The dark chocolate made it extra rich and chocolatey. The instant espresso in the brownies and also the glaze adds to the taste as well. The walnuts in this recipe are optional, but they do add an element of texture. I ended up baking the brownies a little longer than stated, so you might have to bake them a little longer depending on your oven. The recipe for these brownies is at the end of my video. All you have to do is pause the video and take a screenshot to capture.
