Ingredients
4 eggs
165g of sugar
15g of honey
5g of vanilla powder
40g of butter
55g of milk
2 tsp. of red food coloring
120g of flour
120g of sliced cherries
10g of lemon juice
300g of heavy cream
A cup of sugar syrup
50g of white chocolate
2g of gelatin
Directions
1- In a large bowl combine eggs, sugar, vanilla powder, and honey. Whisk slowly until the ingredients are well combined.
2- In a smaller bowl combine butter and milk. Add red food coloring and proceed to whisk. Sift some flour into the mixture.
3- Combine both mixtures in one bowl. After you make sure the mixture is well combined, transfer it into a pan and bake it at 170 °C for 40 minutes. (Mold size : 16cm)
4- Combine the sliced cherries with sugar in a pot and start cooking it on a stove. Add lemon juice. Filter its juice into a bowl.
5- In a large bowl combine heavy cream and sugar. Whisk it with a mixer. Add the drained cherries into the mixture and whisk.
6- Take the cake base out of your oven. Spread a small portion of the cream right in the middle of your platter and place the sliced cake bases all on top of each other, brushing the cake with sugar syrup and applying the cream and in between the layers.
7- Fill a large bowl with hot water. Combine white chocolate and butter in a smaller bowl and place the bowl inside the one filled with hot water. Stir until it melts. Add gelatin, food coloring, and the boiled cherry juice. Pour the final mixture on top of your cake. Decorate your cake with a few cherries and now serve your delicious cake.

- 270 grams wheat flour

- 90 ml milk
- 4 eggs
- 100 ml vegetable / sunflower oil
- pinch of salt

As soon as sweet Bing cherries are in season, I cannot resist putting some aside to make this Cherry Cake with its pretty polka dot design. It is very similar in looks to a Cherry Clafoutis, only instead of a thin pancake-like batter, the cherries are suspended in an almond flavored cake batter. It is wonderful when served warm from the oven, with or without a dollop of whipped cream, custard, or creme fraiche.

Cherry Cake
I've dressed up my Vanilla Cake recipe with morello cherries and I must say the combination is simply DIVINE. Don’t take my word for it, give it a try ;)
Ingredients & method:
• 200g – 14 tbsp. unsalted butter
• 300g – 1½ cups granulated white sugar
• 5ml – 1 tsp. vanilla extract
• a pinch of salt
• 10g – 2 tsp. lemon & orange zest
• 5 medium eggs, separated (large US)
• 390g – 3 cups flour
• 10g – 2 tsp. baking powder
• 160ml – 2/3 cup milk
• 340g – 12 oz morello cherries, pitted
• 15g – 2 tbsp. flour
• confectioners' sugar, for dusting
Preheat the oven to 175°C – 350°F. Grease and flour a 31 x 23 – 12 x 9 inch baking pan. In a medium bowl, whisk together the flour and baking powder; set aside.
In a large bowl, beat together the butter and sugar until light and fluffy. Mix in the vanilla extract, salt and citrus zests. Beat in the egg yolks, one at a time. Alternately add the flour mixture (in three additions) and milk (in two additions), beginning and ending with the flour.
In a clean bowl, beat the egg whites until soft peaks form; gently fold them into the cake mixture.
Pour the mixture into the prepared pan and level the top. Place the cherries in a small bowl and toss with two tablespoon of flour. Scatter them on top of the cake mixture. Bake until golden brown and toothpick inserted in the center of the cake comes out clean, around 30 – 35 minutes. Leave in the pan for 5 minutes, then turn out on a wire rack to cool completely.
To serve, dust the cake with confectioners' sugar and cut into squares.
