How To make Cg's Sponge Cake Golden
-CHERYL GAVARD HWDP78B 4 lg Eggs, separated
1 c Sugar
1 Juice and pulp of lg. orange
1 ts Lemon extract
1 c Cake flour
1/4 ts Salt
1 ts Baking powder
Beat the egg whites until froth, add 1/2 cup of the sugar and continue to beat. Set aside. Beat the yolks well, and add the rest of the sugar, beating until light and fluffy. **The Yolks Must Be Well Beaten To Prevent A Soggy Bottom!! Add the yolks to the whites and then add the orange juice and pulp, and lemon extract. Beat for 7 mins. Sift the cake flour three times with the salt and baking powder. Fold this into the egg mix very gently. Bake in an ungreased spring form pan, in a slow oven of 325 for 1 hour. Invert to cool, before removing sides. To serve sprinkle with some powder sugar, or you can frost with a powder sugar frosting. Enjoy! Cookin'up A Storm Always:) Cheryl CG -----

Bahan-Bahan:-
(Bahan A)
Butter (Salted) 250g
Cream Cheese 150g
Gula Halus 30g
Susu Pekat 80g
Ovalet 30g
Buttermilk Flavour (Essence) 1 sudu teh
Telur Kuning 6 Biji (Size A)
Full Cream Milk 50ml
Whipped Cream 50ml
Tepung Susu (Nespray) 50g
Tepung Pao 200g
Baking Powder 1 Sudu Teh
Parmesan Cheese 15g (Optional)
Almond Ground 15g (Optional)
(Bahan B)
Telur Putih 6 Biji (Size A)
Cream of Tartar ½ sudu teh
Gula Halus 30g
Bahan-Bahan Lain
Almond, Walnut, Pecan, Pistachio & Cheddar Cheese parut untuk hiasan atas kek.
Cara-cara:-
Panaskan Oven: Untuk tray Bawah sediakan tray berisi air dan bakar menggunakan Api Atas & Bawah 170°c. (MenggunakanTeknik Water bath)
Sediakan Pullman Loaf Pan dan Loyang size 7 Bersalut minyak/Baking paper.
(Bahan A)
1. Masukkan Butter, Cream Cheese, Gula Halus, Susu Pekat, Ovalet ke dalam mixing Bowl dan mixed sehingga kembang dengan speed tinggi selama 10 minit.
2. Kemudian masukkan telur kuning sebutir demi sebutir dan Cont’ mixed.
3. Masukkan tepung susu sesudu demi sesudu dan Cont’ mixed.
4. Gaulkan Tepung Pao dan Baking Powder Bersama. Kemudian masukkan ke dalam mixing bowl berperingkat-peringkat. Sambil diselang-selikan dengan full cream milk dan whipped cream.
5. Masukkan parmesan cheese & Almond Ground. Gaulkan adunan dengan menggunakan Teknik aduk balik (Folding Technique).
(Bahan B)
6. Untuk Meringue. Pukul telur putih, cream of tartar & gula sehingga menjadi meringue dengan speed tinggi.
7. Masukkan Bahan B berperingkat-peringkat ke dalam Bahan A dan gaul rata dengan menggunakan Teknik aduk balik.
8. Bakar dengan menggunakan Teknik water bath selama 60-90 minit, 170°c sehingga cake masak.
9. Dengan menggunakan cake tester, Check cake tersebut. Sekiranya tiada adunan melekat pada cake tester maksudnya cake sudah masak.
10. Sedia dihidangkan.
