How to make a delicious lemon sponge pudding. You'll need 6 ingredients - 1.5oz or 45g plain flour, 5oz or 170g caster sugar, 1oz or 35g softened butter, 2 eggs separated, 1 lemon and 7fl oz or 200ml full cream milk.

1 cup of flour (125g)
2 teaspoons of baking powder (9.5g)
A large pinch of salt
1/2 cup of sugar (100 g)
1 teaspoon of lemon zest (2g)
1/2 cup of milk (118 ml)
1/2 teaspoon of vanilla extract (2.5ml)
2 tablespoons of butter, melted (30g)
TOPPING
1/3 cup of sugar (67g)
1 teaspoon of lemon zest (2g)
1 cup of boiling hot water (236 ml)
1/2 cup of lemon juice (118 ml)

Lemon Pudding Cake with Fresh Mixed Berries

Ingredients
1 tablespoon unsalted butter
2/3 cup superfine sugar, plus more for dusting
2 eggs, separated
2/3 cup reduced fat buttermilk
2 tablespoons lemon juice
1 tablespoon lemon zest
1/4 cup all-purpose flour
1/4 teaspoon salt
Garnish:
1 cup fresh raspberries
1 cup fresh blueberries
1 cup fresh blackberries
2 tablespoons confectioners' sugar
Directions
Preheat oven to 325 degrees F. Butter and lightly sugar 4 ramekins (about 1-cup size).
In a mixer, add egg yolks, buttermilk, lemon juice and lemon zest and beat until well combined. Reduce the speed to low and sift in flour, sugar and salt. Continue to mix until combined. Beat egg whites until you get stiff peaks then combine the 2 mixtures by gently folding them together, a little at a time. Divide evenly amongst ramekins then bake in a water bath - set ramekins in a roasting tray and fill with water halfway up the sides of the ramekins.
Bake for 45 minutes until the top springs back when gently pressed and the cakes have a nice golden brown color. Allow to cool slightly, then carefully invert onto a plate. Serve with fresh berries and dust with powdered sugar.

pre heat oven 180 degrees c
6 cup oven proof dish
1 cup self raising flour sifted
1/4 cup caster sugar
mix both add
1 egg
40g melted butter
1/2 cup milk
rind of 2 lemons
beat elec beater
put into oven dish and flatten
small bowl
1 table sp cornflour
1 table sp custard powder
1/2 cup caster sugar
mix together sprinkle over sponge
in a jug
juice of 2 lemons
1 and 1/2 cups boiling water
mix together then with a spoon gently pour over sponge
put dish on a oven tray
bake 35 to 40 mins til sponge cooked test with scewer
dust icing sugar over top serve within 5 mins
serves 4
