Chiffon Cake (yield: two 8-in round layers)
1.75 c (210g) cake flour, sifted
1.5 tsp baking powder
1/2 tsp fine salt
3/4 c (150g) sugar
1/2 c (100g) vegetable oil
6 egg yolks
1/2 c (113g) water
1.5 tsp vanilla
6 egg whites
pinch of cream of tartar
1/2 c (100g) sugar
1. Whisk together the oil, yolks, water, and vanilla in a mixing bowl.
2. Add cake flour, baking powder, salt, and first sugar and whisk to combine.
3. In the bowl of a mixer, whisk the egg whites with a pinch of cream of tartar until frothy. Add the second sugar one tablespoon at a time and continue to mix on medium-high speed until medium peaks form.
4. Gently fold the meringue into the first mixture.
5. Evenly distribute the cake batter between two 8-in cake pans that have been prepared with only a circle of parchment paper on the bottom (no grease!)
6. Bake at 350F for 30-35 minutes or until golden brown and a toothpick comes out clean.
7. Remove from the oven and let the cakes cool upside down on a sheet of parchment.
8. Once completely cool, remove the cakes from the pan.

This vanilla sponge cake is the best sponge cake I’ve ever made! The cake is pillowy, soft, spongy and yet, a bit moist. The sponge cake is perfect for so many cake recipes. This sponge cake is also known as Genoise and it’s much easier to make than you probably think it is.

Ingredients:
5 Eggs, separated
3/4 cup (150g) Sugar
Pinch Salt
1 tablespoon Vanilla extract
1 cup + 2 Tbsp. (150g) All-purpose flour
3 tablespoons Milk
3 tablespoons Oil
Directions:
1. Preheat oven to 340F (170C). Grease the bottom and sides of a 8-inch (20cm) round cake pan. Set aside.
2. In a large bowl beat the egg whites with a pinch of salt until foamy, then gradually add sugar, until stiff peak form.
3. Add egg yolks and whisk until combined.
4. Sift in flour and gently fold until combined.
5. In a small bowl whisk milk, oil and vanilla extract. Add 1-2 tablespoons from the cake batter and mix until combined. Pour into the cake mixture, gently whisk until combined.
6. Pour the batter into prepared pan, tap the pan on the table to release air bubbles and bake for 30-35 minutes.
7. Allow to cool.

How to make My Vanilla Sponge Cake Recipe - Tutorial
Hi and welcome back to my kitchen. So you have been asking for the recipe for my vanilla sponge cakes that I use in quite a lot of my video tutorials and here it is!!
In this video I will give you all the ingredients to bake my fluffy 6 inch round cake made up of 4x 1 inch layers covered in vanilla buttercream.
I hope you love the recipe and find it as delicious as I do!
The ingredients you will need to make this 6 inch cake are:
12oz / 340g – Self Raising Flour
12oz/ 340g – Butter
12oz/ 340g – Caster Sugar
4 eggs
2tbsp – Vanilla Essence / Flavouring
I then bake my cake in 2x 6 inch round cake tins for around 45 minutes on the middle shelf of a normal oven at 180 degrees Celsius.
For the buttercream you will need:
18oz/ 500g – Icing Sugar
9oz/ 250g – Butter
1tbsp – Vanilla Essence / Flavouring
2.5tbsp – Milk
