Tip : keep buttermilk, milk & eggs outside for an hour before making, to get to room temperature, for an increased fluff.

Pancakes can be healthy! And this made from scratch buttermilk pancake recipe will show you how to do it. If you use the right, high-quality ingredients, pancakes will be well balanced with the nutrients necessary for your body to digest the flour and sugar. In other words, the pancakes will be nutritious and healthy.

FLUFFY BUTTERMILK PANCAKES
Ingredients
— 1 Cup flour
— 1 tsp Baking soda
— 1/4 tsp Salt
— 1/4 Cup sugar
— 1 Egg
— 1 Cup plus 2–3 Tbs slightly sour milk OR buttermilk
— 1 tsp Vanilla
— 3 Tbs melted butter
— Lard for cooking (coconut oil and bacon fat also work)
Directions
1. Thoroughly combine the flour, baking soda, and salt, sugar in a medium mixing bowl and set aside.
2. In a large mixing bowl, beat the egg with a wire whisk until well scrambled.
3. One at a time, mix in the milk, vanilla, and melted butter—thoroughly combine each ingredient before adding the next.
4. Add the flour mixture to the wet ingredients and mix just until combined and smooth.
5. Heat a griddle on medium heat and lightly grease it. Test the griddle by flicking a few water drops on it; the drops should scatter around the pan for a second or two before evaporating.
6. Pour about a 1/3 cup of batter for each pancake; for larger pancakes, pour about a ½ cup.
7. Let cook undisturbed on one side until small bubbles are remaining in the surface of the pancakes and a spatula can be easily slid under them.
8. Flip the pancakes and let cook a short time until the other other side is darkened properly and fully cooked.
9. Plate the pancakes; add some butter and maple syrup on top (I also like adding strawberries); and serve.
10. Serving tip: you can keep the pancakes warm and moist by layering between damp tea towels or paper towels in a low temperature oven.

Upgrade your weekend breakfast with these easy and fluffy buttermilk pancakes! Made with all pantry ingredients you should have on hand all the time, this perfect pancake recipe comes together in minutes and I'll bet these are the best pancakes you've ever had. INGREDIENTS
• 1 ½ cups all-purpose flour
• 3 ½ tsp baking powder
• ½ tsp salt
• 1 tbsp sugar
• 1 ¼ cups milk OR ¼ cups buttermilk
• 4 tbsp powdered buttermilk (no need for this if using regular buttermilk)
• 1 egg, room temperature
• 3 tbsp butter, melted
DIRECTIONS
1. Whisk together milk and buttermilk powder. Skip this step if using regular buttermilk.
2. Through a wire strainer, sift flour, baking powder, salt, and sugar into a large mixing bowl.
3. Make a well in the middle of the powder and pour in the buttermilk mixture, egg, and butter. Mix with a whisk or fork until smooth. Add splash of milk if too thick after mixing. Try not to over mix. Let sit for 10 min at room temperature for maximum fluffiness.
4. Heat a non-stick griddle or large pan over medium heat.
5. Spoon about ¼ cup of batter for each pancake. Spread into uniform circles. Wait until bubbles form to flip. Continue cooking for an additional minute to cook through, and brown on the other side.
6. Remove from the pan or griddle and top with fresh fruit like blueberries, strawberries and blackberries. Add a pat of butter and serve with maple syrup.
