How To make Fruity Buttermilk Pancakes
3/4 c whole wheat flour
3/4 c flour
1 ts baking powder
1 ts baking soda
1-1/2 tb sugar
2 egg whites
1-1/2 c buttermilk
1/4 c LF cottage cheese
1/2 ts vanilla
1/2 c chopped strawberries; or any
- other fruit 3/4 c maple syrup
Banana Cream Topping:
1/2 c LF sour cream or yogurt
1/2 c mashed bananas
2 tb brown sugar
1/8 ts cinnamon
1. In large bowl, combine flours, baking powder, baking soda, and sugar.
Set aside. 2. In medium bowl, whisk together egg whites, buttermilk, cottage cheese
and vanilla. Add to flour mixture, stirring just until moist. Gently stir in fruit. 3. Spray large skillet with non-stick spray and heat over medium. Spoon
dollops of batter into skillet and spread well with spoon (otherwise it will not cook thoroughly). Cook until bubbles break, then flip and cook until lightly browned. 4. Serve with maple syrup and banana cream topping (see below)

Ingredients:
• All Purpose Flour – 3 Cups (360 gms)
• Sugar – ¼ Cup (50 gms)
• Baking Powder – 1 and ½ tbsp
• Salt – ½ tsp
• Buttermilk – 2 and ¼ Cups
• Whole Milk – 1 Cup
• Large Eggs – 3
• Unsalted Butter – 4 tbsp (1/4 Cup or ½ Stick)
Steps:
1. Mix all dry ingredients (flour, sugar, salt, and baking powder) into a large bowl and keep it aside.
2. Crack eggs into a separate bowl and beat them slightly.
3. Add buttermilk, milk, and melted butter to beaten eggs and mix until a smooth mixture is formed.
4. Mix both wet and dry ingredients together gently just until combined. Do not overmix the batter. This is very important to ensure pancakes are super light and fluffy.
5. Either on a frying pan or cast-iron skillet on stove top with medium-high heat OR on an electric griddle set at 350 F, apply some butter, and pour about ½ cup of batter. These are going to be nice and big pancakes. If you prefer your pancakes to be slightly smaller, you can use ¼ cup of batter to make pancakes instead of ½ cup.
6. Cook the pancakes for a couple minutes until there are bubbles forming on top and some popping. Flip the pancakes and cook on the other side for about a minute as well.
7. Repeat the process with the rest of the batter to make delicious, perfectly light, and fluffy pancakes.
8. Stack them up or spread them out on a plate. Add a pad of butter and pour sweet maple syrup on top.
9. Serve them for breakfast or for brunch along with some fresh fruit. ENJOY!

BUTTERMILK PANCAKE RECIPE
Ingredients
1½ Cups | 375ml Buttermilk
2 Eggs
2 tsp Vanilla Extract
2 Cups | 250g Flour
3 Tbsp | 40g Sugar
1 tsp Baking Soda
2 tsp Baking Powder
½ tsp Salt
¼ Cup | 55g Butter
Instructions
In a small bowl mix together the buttermilk, eggs and vanilla.
In a larger mixing bowl combine the flour, sugar, baking powder, baking soda, and salt.
Pour the wet ingredients into the bowl with the dry ingredients along with the ¼ cup of melted butter. Fold together until combined.
Heat a frypan over medium low heat and add a tsp of butter.
Pour about ½ Cup of the pancake batter into the frypan and cook for a few minutes until bubbles start to pop on the top. Flip and cook for a further few minutes until cooked through.
Repeat with remaining the remaining batter.
Serve the pancakes pilled up with maple syrup and your favourite toppings.
Notes
You can substitute the buttermilk with equal amounts of milk mixed with a few teaspoons of lemon juice or vinegar. Set to the side for 10 minutes before using.

You’ll need
2 eggs
2 tbsp granulated sugar
200 ml milk
1 + ¼ cups all-purpose flour
2 tsp baking powder
2 tsp vanilla powder
To cook;
Oil
1 cup = 240 ml
Here’s how
1- Whisk together 2 eggs and 2 tablespoons of granulated sugar.
2- Add 200 ml of milk, 1 + ¼ cup of all-purpose flour, 2 tsp of baking powder and 2 tsp vanilla powder. Beat until you have a smooth batter.
3- Heat a lightly oiled non-stick frying pan over a medium heat.
4- Gently pour about 1 tbsp of batter onto the hot pan.
5- Wait until the bubbles form on the surface and once they start popping, flip the pancake over and cook until both sides are golden.
6- Repeat until all the batter is used up.
7- Once both sides are golden, transfer to a serving plate!
