How To make Fruity Buttermilk Pancakes
3/4 c whole wheat flour
3/4 c flour
1 ts baking powder
1 ts baking soda
1-1/2 tb sugar
2 egg whites
1-1/2 c buttermilk
1/4 c LF cottage cheese
1/2 ts vanilla
1/2 c chopped strawberries; or any
- other fruit 3/4 c maple syrup
Banana Cream Topping:
1/2 c LF sour cream or yogurt
1/2 c mashed bananas
2 tb brown sugar
1/8 ts cinnamon
1. In large bowl, combine flours, baking powder, baking soda, and sugar.
Set aside. 2. In medium bowl, whisk together egg whites, buttermilk, cottage cheese
and vanilla. Add to flour mixture, stirring just until moist. Gently stir in fruit. 3. Spray large skillet with non-stick spray and heat over medium. Spoon
dollops of batter into skillet and spread well with spoon (otherwise it will not cook thoroughly). Cook until bubbles break, then flip and cook until lightly browned. 4. Serve with maple syrup and banana cream topping (see below)

My notes: I made this with strawberries and didn't make the topping. We like these better than the other banana pancakes - probably the buttermilk.

Mixing Pancakes the Perfect Amount
Pancakes (yield: 1 dozen pancakes)
2 c (280g) AP flour
1/4 c (50g) maple sugar
1 tbsp (12g) baking powder
1/2 tsp (3g) baking soda
1/2 tsp (3g) fine salt
1.5 c (341g) milk
2 eggs
1 tsp vanilla extract
2 oz (57g) melted butter or vegetable oil
1. Mix all the dry ingredients together in a bowl.
2. In a separate container, whisk together the milk, eggs, and vanilla. Add in the melted butter or oil.
3. Combine the dry and wet ingredients and mix just until you can't see dry flour (there will be some lumps).
4. Scoop onto a lightly greased griddle, cook until the bottom is golden, flip, and cook until golden again.

BUTTERMILK PANCAKES INGREDIENTS:
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 Tablespoon sugar
- 1/4 teaspoon salt
- 1 1/2 cups buttermilk or buttermilk substitute (See Kelly's Note)
- 1 large egg
- 2 Tablespoons unsalted butter, melted
☝️ Kelly’s Note: No buttermilk? No problem! Add 1.5 tablespoon of lemon juice or vinegar to a liquid measuring cup, then pour in milk (any variety) up to the “1.5 cup” mark. Stir the mixture then let it sit for 5 minutes until it curdles and thickens slightly, then proceed with the recipe as directed.

How to Make The Best Pancakes | Easy Fluffy Pancakes Recipe ????
The best fluffy pancakes with ingredients you probably already have on hand ???? Subscribe for more videos now!
You’ll need
2 eggs
2 tbsp granulated sugar
200 ml milk
1 + ¼ cups all-purpose flour
2 tsp baking powder
2 tsp vanilla powder
To cook;
Oil
1 cup = 240 ml
Here’s how
1- Whisk together 2 eggs and 2 tablespoons of granulated sugar.
2- Add 200 ml of milk, 1 + ¼ cup of all-purpose flour, 2 tsp of baking powder and 2 tsp vanilla powder. Beat until you have a smooth batter.
3- Heat a lightly oiled non-stick frying pan over a medium heat.
4- Gently pour about 1 tbsp of batter onto the hot pan.
5- Wait until the bubbles form on the surface and once they start popping, flip the pancake over and cook until both sides are golden.
6- Repeat until all the batter is used up.
7- Once both sides are golden, transfer to a serving plate!
